- In a large skillet, heat butter over medium heat; stir in brown sugar. Add pineapple; cook and stir until tender, 8-10 minutes. - Prepare your fresh pineapple in spears or circles.
- Mix together your marinade ingredients.
- Place the pineapple and the marinade into a large sealing plastic freezer bag. Marinate for 1-2 hours before making. ( you don't have to refrigerate, just leave it on the counter like you leave butter on the counter.)
- PReheat your BBQ or grill to 350°F
- Place the pineapple onto the grill. Cook for 5-7 minutes per side, grilling until there are nice blackened grill marks on each side and the pineapple is soft.
- Remove and place on a plate. Serve warm.

- To make the brittle, line a heavy baking tray with parchment, and put the maple syrup, sugar, butter and 25ml water in a heavy-based saucepan. Stir until the sugar has melted, then leave to bubble on a medium heat for 15 mins or until dark golden brown. Stir in the sesame seeds and sea salt flakes, and stir briefly before pouring onto the lined tray. Working carefully so you don't touch the sugar and burn yourself, spread out into a thin layer. Leave to cool and harden.
- Mix the lime juice and most of the lime zest with the ground ginger, mixed spice and maple syrup. Top and tail the pineapple, cut away the skin and any black marks from the flesh, then cut into 1cm slices. Toss with the lime and maple mix, then leave for at least 30 mins to marinate.
- Wait until the embers are low on a barbecue (the ideal time is after you've cooked a main) or heat a griddle pan to hot. Lightly oil the grill bars or griddle pan to prevent the fruit from sticking, and grill the pineapple for 1-2 mins on each side until golden and lightly charred. Cut into bite-sized shards, then transfer to a platter while you cook the rest.
- Finely slice the larger basil or mint leaves and keep the smaller leaves whole. Bash the brittle into pieces, and serve scattered over the charred pineapple with the herbs and a drizzle of the marinade. Scatter the remaining lime zest over the yogurt or frozen yogurt and serve on the side.

CARAMEL GRILLED PINEAPPLE SUNDAES
Okay, so I know that we really cheated on the sauce by using a jarred sauce, but this is exactly what we served to some guests for a last minute dessert after a meal of "Brats--Our Way" and grilled corn on the cob, and they loved it! For four adults and two small children, this really was just barely enough, and we could have probably eaten another pineapple. I noticed that most other pineapple recipes here involve marinating the pineapple or brushing it with something just before grilling. We've never tried that, but really enjoy the simple, fresh taste of the pineapple without other added ingredients. If you've never tried grilled pineapple, you owe it to your tastebuds to try one of the recipes for it here on the zaar!

- Peel, core, and slice pineapple into 3/4 inch to 1 inch thick rings. If your pineapple is already cored and sliced in a way that makes it impossible to cut into rings, just cut into big wedges. Pieces that are cut too small make it difficult to grill without losing pieces in the grill, as the pineapple will soften somewhat.
- Grill on a lightly oiled BBQ grill grate over medium to high heat, turning once, until the pineapple has nice grill marks, is warm, and slightly softened. Time will vary depending on your grill, but your eyes and your nose will tell you when it's ready!
- Warm caramel ice cream topping in microwave according to package directions.
- Assemble sundaes by placing a portion of pineapple in the bottom of each bowl. Top with a large scoop of vanilla ice cream, end drizzle a large spoonful of warm caramel topping over the top, and serve immediately.
- Enjoy the compliments from your guests.

- GRILL: Preheat the grill to medium-high (about 400 degrees F) or heat a grill pan over high heat. Prepare the grill by cleaning with a grill brush to remove any built-up residue and then oil the grill. I do this by drenching a rolled-up paper towel in vegetable oil and, holding it with tongs, rubbing it liberally over the grill grates (or ridges in a grill pan). Oil the grill right before adding the pineapple.
- PINEAPPLE: Remove the rind and stem from the pineapple and cut into 1/2 to 3/4-inch thick slices (you can also remove the core as desired; we remove it after grilling). Rub brown sugar over the slices and let stand until the grill is fully heated. Place pineapple slices on the grill and cook, flipping once, until tender, golden and lightly charred, about 2-4 minutes per side (this may vary, depending on the thickness, ripeness of pineapple, and actual heat of grill). Use a wide metal (sharp) spatula/turner for easy removal and flipping of the pineapple slices. If you find the pineapple sticking at all, use a bit more oil on the grill grates.
- CRUMBLE: Preheat oven to 350 degrees F. Spray an 8x8-inch baking pan with cooking spray or line with parchment paper and set aside. Finely chop 1/3 cup of the walnuts and add to a large bowl. Crush the graham crackers into crumbs (using a blender or food processor or crush in a bag using a rolling pin) and add to the bowl. Add the brown sugar, white sugar, melted butter, cinnamon, salt, and vanilla to the bowl and stir until combined. Pour the mixture into the prepared pan and spread evenly into one layer. Bake for 7 to 10 minutes or until lightly browned. Allow to cool and then crumble and sprinkle on top of frozen vanilla yogurt. Coarsely chop the remaining few tablespoons of walnuts and add on top of the crumble.
- ASSEMBLE: Place grilled pineapple slices on plates and top each slice with a large scoop of frozen vanilla yogurt. Add the crumble on top and coarsely chopped walnuts. Enjoy immediately.
