½ cup shortening
1 cup white sugar
½ cup milk
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
1 very ripe banana, mashed
1 teaspoon lemon juice
½ cup chopped walnuts
2 tablespoons butter, melted
1 teaspoon vanilla extract
2 cups confectioners' sugar
½ ripe banana
½ teaspoon salt
¼ teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a large bowl, cream together the shortening and sugar until smooth. Stir in the milk and 1 teaspoon vanilla. Combine the flour, baking soda and 1/2 teaspoon salt; stir into the sugar mixture. Mix in 1 banana, 1 teaspoon lemon juice and walnuts. Spread evenly into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Let bars cool in the pan on a wire rack.
  • To make the frosting: In a medium bowl, mix together the melted butter, 1 teaspoon vanilla, confectioners' sugar, 1/2 banana, 1/2 teaspoon of salt and 1/4 teaspoon lemon juice using an electric mixer. Beat until smooth. Spread over cooled bars and then cut into squares.

½ cup butter, softened
2 cups white sugar
1 ½ cups mashed bananas
3 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda

1 (8 ounce) package cream cheese, softened
½ cup butter, softened
4 cups confectioners' sugar
2 teaspoons vanilla extract
½ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 10x15-inch rimmed baking pan.
  • Beat 1/2 cup butter and white sugar together in a bowl using an electric mixer until creamy. Beat in bananas, eggs, and 1 teaspoon vanilla extract.
  • Combine flour, baking soda, and salt in a separate bowl. Add to the banana mixture and mix well. Pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Invert carefully onto a serving plate or cooling rack. Let cool, about 30 minutes.
  • Beat cream cheese and 1/2 cup butter together in a bowl using an electric mixer until fluffy. Add confectioners' sugar and 2 teaspoons vanilla extract gradually; beat well. Spread frosting over the cooled bars and sprinkle walnuts on top.

1/2 cup light brown sugar, packed
1/2 cup granulated sugar
1 cup very ripe mashed banana
1 teaspoon pure vanilla extract
1/3 cup canola oil (or melted coconut oil)
2 large eggs, at room temperature
1 cup all-purpose flour
1 teaspoon baking powder
1 ⁄2 teaspoon baking soda
3/4 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1 ⁄4 teaspoon salt
8 ounces full-fat cream cheese, VERY soft
2 tablespoons unsalted butter, VERY soft
2 teaspoons pure vanilla extract
2 cups confectioners' sugar, sifted

Steps:

  • Preheat oven to 350 degrees (F). Line a 9x13 inch pan with parchment paper, allowing two of the sides to overlap; spray parchment paper lightly with non-stick spray and set aside.
  • In a large bowl add the light brown sugar, granulated sugar, ripe mashed bananas, vanilla, oil, and eggs; beat well with a whisk to combine. Stir in the flour, baking powder, baking soda, cinnamon, nutmeg, and salt; stir until just combined. Pour batter into prepared pan, spreading smooth and into an even layer using a rubber spatula. Reduce the speed to low and gradually add the sifted confectioners' sugar. Once all of the sugar has been added beat on high-speed for 1-2 minutes. Once the banana bars have completely cooled, gently spread the frosting over the bars, and decorate with banana slices, if desired. Then slice and serve! Store these bars in the fridge, covered, for up to 2 days. Not that I think they'll last that long ;)

1 tablespoon cornstarch (this mades them more moist but if you don't have it, you can leave it out)
2.5 cups all-purpose flour (spooned and leveled)
1.5 cups mashed bananas ((about 2-3 large bananas))
8 oz cream cheese (softened)
1/2 cup unsalted butter (softened)
1 teaspoon vanilla extract
3.5 cups powdered sugar
1 teaspoon milk

Steps:

  • Preheat oven to 350 degrees. Spray metal 9x13" pan with nonstick cooking spray and lightly dust with flour (or cover in parchment paper). See notes below for baking in jelly roll pan.
  • In a small mixing bowl, mash bananas with a fork until broken up. Set aside.

Steps:

  • In mixing bowl, cream butter and sugar.
  • Add eggs, sour cream, and vanilla.
  • Combine flour, baking soda, salt; gradually add to the creamed mixture.
  • Stir in the bananas.
  • Spread into a greased sheet cake pan (15x10x1-inch).
  • Bake at 350°F for 20-25 minutes.
  • Cool.
  • I put a cream cheese frosting on this.

This is the best Banana cake that you will ever have! I got this from Jennifer Parks. We buy bananas and just wait for them to ripen so we can make this.

1 cup butter or 1 cup margarine, softened
2 1/4 cups sugar
3 eggs
1 1/2 cups sour cream
1 1/2 teaspoons vanilla extract
3 cups flour
1 1/2 teaspoons baking soda
3/8 teaspoon salt
1 1/2 cups ripe bananas (3 medium)
1 (8 ounce) package cream cheese, softened
1/2 cup butter or 1/2 cup margarine, softened
2 teaspoons vanilla extract
3 cups powder sugar

Steps:

  • Batter: In a mixing bowl, cream butter and sugar.
  • Add eggs, sour cream and vanilla.
  • In separate bowl combine flour, baking soda, and salt; gradually add to the creamed mixture.
  • Stir in bananas (I squish mine in my hand as I put it in).
  • Spread in a greased cookie sheet, 17 x 12 x 1 inch baking pan.
  • Bake at 350 for 20- 25 minutes or until a tooth pick comes out clean from the middle.
  • Cool before frosting. Store in fridge.
  • Frosting: In mixing bowl beat cream cheese, butter and vanilla.
  • Gradually beat in enough powder sugar to achieve desired consistency. After 2 cups of powdered sugar I start tasting to see when it seems balanced with sugar and cream cheese.
