1 can (20 ounces) unsweetened sliced pineapple
1 tablespoon butter
1 teaspoon brown sugar
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
3 cups reduced-fat vanilla ice cream
6 tablespoons hot caramel ice cream topping
6 tablespoons granola without raisins

Steps:

  • Drain pineapple, reserving 1/3 cup juice and six pineapple slices (save remaining juice and pineapple for another use)., In a small microwave-safe bowl, combine the butter, brown sugar, vanilla, cinnamon and reserved juice. Microwave, uncovered, on high for 1-2 minutes or until butter is melted. Brush half of the mixture on both sides of pineapple slices., Grill, uncovered, over medium heat or broil 4 in. from the heat for 3-5 minutes or until lightly browned, turning once and basting with remaining butter mixture., Place pineapple in dessert bowls; top with ice cream. Drizzle with caramel topping; sprinkle with granola.

Nonstick cooking spray
2 teaspoons butter
1/4 cup brown sugar
1/4 cup rum
1 pint light vanilla ice cream

Steps:

  • Cut the top and bottom off of the pineapple, peel and cut it crosswise into 8 rings, about 1/2-inch each. Use a spoon or apple corer to carve out the center core of each ring.
  • Spray a large grill pan with cooking spray and heat over a medium flame. Grill the pineapple, in 2 or 3 batches, for 2 to 3 minutes on each side, until it is nicely brown and grill marks have appeared. (You can also grill this on an outdoor grill sprayed with cooking spray before being heated.)
  • While the last batch of pineapple cooks, heat the butter, sugar and rum in a small saucepan over a low heat, stirring, until the sugar is dissolved and the sauce has thickened slightly, about 2 minutes. Remove the sauce from the heat.
  • Place a pineapple ring on each plate, scoop 1/4 cup of ice cream into the center of the ring, and drizzle about 2 teaspoons of sauce on top.

Close the lid and cook for another 5 to 10 minutes - this will vary depending on how thick your slices are. Check after the first 5 minutes (after flipping the pineapple), then if not done, cook for an additional 3 to 5 minutes.
  • To test if your pineapple is done, take a fork and press it into the flesh of the pineapple on one side (an inch or two outside of the middle core, not in the core itself). If the fork goes in easily it is done cooking. If it has some resistance and is not soft, keep cooking it for another 2 to 3 minutes. Once all the slices are done, remove the pineapple with the tongs and serve immediately.
