Sweet, warm grilled peaches are wonderful on their own, even better with a scoop of homemade frozen yogurt.

4 medium peaches (ripe yet firm)
2 tablespoons unsalted butter (melted)

Steps:

  • Heat a grill or a grill pan on medium heat.
  • Cut the peaches in half and remove the pit: With a sharp paring knife, slice each peach in half. Then twist each half in opposite directions to pull the halves apart. Use your fingers to remove the pit. If it's stuck, carefully slide the knife under the pit and then pull it away.
  • Brush the peaches all over with melted butter.
  • Place the peaches, cut side down, on the grill. Grill until tender and slightly charred, about 4 minutes per side. Serve immediately.

1 teaspoon pure vanilla extract
1/4 teaspoon almond extract
1/4 cup dark brown sugar
1 to 2 pints frozen vanilla yogurt
Suggested toppings: toasted sliced almonds

Steps:

  • Cut the peaches in half and remove the pit. Slice each half in half and toss them in a bowl with the vanilla extract, almond extract, and brown sugar. Set aside for 15 minutes while you preheat a grill with a medium-high heat. Grill skin side down until skin is slightly charred, about 3 minutes. Turn and grill on the other 2 sides until you get nice grill marks, about 1 minute on each side.
  • Divide the peaches among 4 bowls and serve with the frozen yogurt and toasted almonds, if desired.

4 scoops vanilla fat-free frozen yogurt
2 gingersnap cookies, crumbled

  • Preheat an outdoor grill for high heat, and lightly oil the grate. Brush peach halves with canola oil.
  • Place peach halves on the preheated grill. Grill until tender and peach is warmed through, about 10 minutes. Place the hot peach on a plate skin-side down. 4 ripe freestone peaches
2 tablespoons melted butter
whipped cream or vanilla ice cream, for serving

Steps:

  • Combine sugar and cinnamon in shallow bowl and stir to mix, set aside.
  • Cut each peach in half around crease to the stone.
  • Twist halves in opposite directions to separate them.
  • Pry out stone with spoon and discard.
  • Lightly brush each peach half on both sides with melted butter.
  • Have peaches and cinnamon sugar by grill side, ready for grilling.
  • Set up grill for direct grilling and preheat to high.
  • Brush and oil grill grate.
  • Dip each peach in cinnamon sugar to coat both sides, brushing off excess.
  • Place halves on grill and grill until caramelized (dark golden brown), 3 to 6 minutes per side, turning with tongs.

These peaches are made with unsweetened apple- or grape juice. They are low cal, diabetic friendly and easy to make. I clipped this recipe from the AARP magazine, the fact that is is sugarless was an instant selling point for me. Add the peach skins and pits to the canning juice and simmer it for a few minutes, the juice will turn a beautiful blush color. Be sure to remove them before filling the jars.

11 lbs ripe peaches (not cling peaches)
2 -3 tablespoons citric acid
2 quarts unsweetened apple juice, or
2 quarts unsweetened white grape juice

Steps:

  • Sterilize canning jars and rings by simmering them in hot water for at least 10 minutes, til ready to use, have lids nearby.
  • In another saucepan, dip fruit in boiling water for 30 to 60 seconds, until skins loosen. Dip quickly into ice water and slip off skins. Cut in half, remove pits and slice. Mix citric acid with a 1/4 of a cup of water, coat peaches to prevent darkening.
  • Pack slices into jars, almost to the top.
  • Bring the juice to a boil, add peach skins and pits if desired, simmer for a few minutes. Remove skins and pits and discard. Ladle juice over peaches, leaving 1/2 an inch of headspace.
  • Adjust lids and process in a boiling water canner, with jars covered by 2 inches of water, for 20 to 25 minutes. Remove jars from canner, allow to cool for 12 hours.
  • Unscrew metal rings to make sure lids are sealed. Each lid should be indented in the center. Store in a cool, dry, dark place for no longer then one year.

1/2 cup brown sugar, plus more, for sprinkling
1/4 cup water
1/4 cup fresh lime juice
1/4 cup basil leaves, plus thinly sliced basil, for garnish
Vegetable oil, for grilling
4 large peaches, quartered and pitted
Freshly ground black pepper

Steps:

  • In a saucepan over medium heat, combine the 1/2 cup brown sugar with the water and stir until dissolved. Turn off the heat and add the lime juice and basil leaves. Let stand for at least 15 minutes or up to 1 hour, then discard the basil leaves.
  • Light a grill or preheat a grill pan over medium heat; lightly oil the grates.
  • Lightly sprinkle the peaches with brown sugar and grill cut side down until dark brown grill marks form, about 2 minutes per cut side. Transfer the peaches to bowls and season with a little black pepper. Spoon some of the syrup on top, sprinkle with basil leaves and serve.

3 cups peeled and chopped peaches
¾ cup water
1 (1.75 ounce) package fruit pectin (such as Sure-Jell®)
½ cup sucralose sugar substitute (such as Splenda®)

Steps:

  • Fill a canner pot half-full with water and bring to a simmer. Wash jars and rings in warm soapy water; rinse with warm water. Place lids in a saucepan off the heat; pour boiling water on top. Let stand until ready to use.
  • Measure 3 cups of peaches into a 6- or 8-inch saucepot. Stir in 3/4 cup water. Gradually add pectin, stirring until well blended. Bring mixture to a boil over high heat, stirring constantly. Boil exactly 1 minute, stirring constantly. Remove from heat. Stir in sucralose. Skim foam off the surface of the jam using a metal spoon.
  • Ladle jam immediately into the prepared jars, filling to within 1/8-inch from the tops. Wipe jar rims and threads. Cover with lids and rings; screw bands tightly. Place jars on an elevated rack in the canner. Lower the rack to cover the jars with 1 to 2 inches of water, adding more boiling water if necessary. Cover and bring water to a simmer.
  • Process the jam for 10 minutes. Remove jars and place upright on a towel to cool completely, 2 to 3 hours. Check seals by pressing the middle of lid with your finger; if lid springs back, lid is not sealed and refrigeration is necessary.
