1 pound Yukon gold potatoes, thinly sliced
1 9-ounce box frozen artichoke hearts, thawed
1/2 cup pitted kalamata olives
1 tablespoon fresh rosemary leaves
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
4 6-ounce cod fillets
Juice of 1/2 lemon, plus wedges for serving
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F. Combine the potato slices, artichokes, olives, rosemary, 2 tablespoons olive oil, 1 teaspoon salt and a few grinds of pepper in a large bowl. Spread the mixture evenly on a parchment-lined baking sheet; bake until the vegetables are tender and lightly browned, about 20 minutes.
  • Brush the fish with 1 tablespoon olive oil and season with 1 teaspoon salt and a few grinds of pepper. Remove the baking sheet from the oven and set the fish on top of the vegetables. Return to the oven and continue baking until the fish is opaque and the vegetables are golden brown, about 10 minutes.
  • Drizzle the fish with the lemon juice and the remaining 1 tablespoon olive oil. Sprinkle with the parsley and serve with lemon wedges.

3/4 cup canola oil
1/4 cup cider vinegar
1/4 cup soy sauce
1/2 teaspoon dried thyme
1/2 teaspoon ground mustard
1/2 teaspoon pepper
1/4 teaspoon dried oregano
1-1/2 pounds boneless beef sirloin steak
1/2 pound fresh mushrooms, quartered
1 can (14 ounces) water-packed artichoke hearts, rinsed and drained
12 cherry tomatoes, halved
5 green onions, chopped
2 heads Bibb lettuce, separated into leaves
2 hard-boiled large eggs, cut into wedges

Steps:

  • In a jar with a tight-fitting lid, combine the first seven ingredients; set aside. , Grill or broil steak until a thermometer reaches at least 145° (medium-rare). Slice across the grain into thin strips. , In a bowl, combine the steak, mushrooms, artichokes, tomatoes and onions. Shake dressing; pour over steak mixture and toss to coat. Cover and refrigerate for at least 4 hours, stirring occasionally. , Line a serving platter with lettuce; top with steak mixture and dressing. Garnish with eggs.

1/4 cup marinated artichoke hearts, drained well
1 tablespoon capers, drained
1 tablespoon fresh parsley, minced
1/2 teaspoon garlic, minced
1 tablespoon chicken broth or 1 tablespoon clam juice
1 egg yolk, at room temperature
1 teaspoon fresh lemon juice
1/4 cup olive oil
6 fish fillets
6 slices lemons

Steps:

  • In a blender or food processor, puree the artichoke hearts with the capers, parsley, garlic, broth, egg holk and lemon juice, scraping down the sides.
  • With the motor running, add the olive oil in a thin stream, blending teh sauce until it is smooth.
  • Add salt and pepper to taste.
  • Spoon the sauce around the cooked fish fillets and then garnish with the lemon slices and more parsley.

6 globe artichokes
1 tablespoon plus 1/2 teaspoon kosher salt
Juice of 1 lemon
3 tablespoons olive oil
Green Goddess Dressing, recipe follows
Lemon wedges, for garnish
1 cup mayonnaise
1/2 cup creme fraiche
1/4 cup chopped fresh flat-leaf parsley leaves, plus more for garnish
3 tablespoons chopped fresh chervil
2 tablespoons chopped fresh tarragon
3 fresh chives, chopped
3 cloves garlic
2 anchovy fillets, chopped
Juice of 2 lemons
Kosher salt and freshly ground black pepper
1 to 2 teaspoons honey
2 to 3 tablespoons olive oil

Steps:

  • Slice the tops off the artichokes, pull off the small leaves, trim the stems and snip off the thorny tips. In a large pot, bring 2 inches of water to a boil. Add 1 tablespoon kosher salt, the juice of 1 lemon and the artichokes. Cover and steam until the artichoke bottoms pierce easily, 20 to 40 minutes, depending on size. Drain the artichokes.
  • When cool enough to handle, cut each artichoke in half lengthwise. Scrape out and discard the fuzzy center.
  • Preheat a grill to medium direct heat.
  • Brush the artichokes with the oil, season with salt and pepper and grill, cut-side down, until lightly charred, 6 to 8 minutes. Flip and grill briefly to heat through.
  • Arrange the artichokes on a platter, drizzle with some of the Green Goddess Dressing and garnish with lemon wedges.
  • Combine the mayonnaise, creme fraiche, parsley, chervil, tarragon, chives, garlic, anchovy fillets and lemon juice in a food processor and process until smooth. Season with salt and pepper. Add a teaspoon of honey, or to taste. With the machine running, drizzle in just enough oil to thicken slightly. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

4 small salmon, trout or other medium-firm fish steaks, about 3/4 inch thick (1 1/2 pounds)
Salt and pepper to taste
2 tablespoons butter or margarine, melted

Steps:

  • Set oven to broil. Sprinkle both sides of fish with salt and pepper. Brush both sides with half of the butter. Place on rack in broiler pan.
  • Broil with top of fish steak about 4 inches from heat 5 minutes. Brush with butter. Carefully turn fish. (If fish sticks to the rack, loosen gently with a turner or fork.) Brush other side with butter.
  • Broil 4 to 6 minutes longer or until fish flakes easily with fork.

8 whole artichokes
6 cups water
4 lemons, juice of
1/4 cup olive oil
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1/4 cup of packed fresh Italian parsley
1/2 cup packed fresh basil
6 sprigs fresh thyme
1/2 cup packed fresh oregano
1/2 orange, zest of
1 whole dried chili (as hot or mild as you prefer)
1 teaspoon whole black peppercorn
2 cups canola oil
1 cup extra virgin olive oil

Steps:

  • In a 1 quart mason jar, place all herbs, zest, chili, and peppercorns. Pour 2 cups canola oil and 1 cup of extra virgin olive oil into a saucepan and heat to 200 degrees. Pour hot oils into the jar and cover with a kitchen towel. Let stand overnight.
  • Preheat oven to broil setting.
  • In a large, deep bowl, combine juice of 4 lemons with six cups of water. Set aside.
  • Cut top 1/4 off each artichoke and snap off the outer leaves until you reach pale, green, soft leaves. Using a spoon, remove the hairy choke from the center and discard.
  • Immediately plunge chokes into lemon water to avoid discoloration. Drain chokes and spin to dry.
  • Toss chokes in a second bowl with 1/4 cup olive oil, and season with salt and pepper. Lay chokes out on a sheet pan lined with foil and place on the lower rack of the oven. Broil for 5-6 minutes. Flip chokes and return to oven for 3 minutes.
  • Serve chokes as they are or marinate chokes in herb oil for up to 2 days.
