TERIYAKI TURKEY BURGERS WITH GRILLED PINEAPPLE AND ONIONS
Steps:
- In a small saucepan whisk together all of the ingredients except the cornstarch water slurry.
- Bring the mixture to a boil and boil for 2 minutes.
- Whisk in the cornstarch slurry and boil for another minute or until it has thickened.
- Remove from the heat and refrigerate in an airtight container until ready to use.
- In a large bowl mix together the ground turkey, onion, teriyaki sauce, ginger, salt and pepper with your hands being careful not to overwork the meat.
- Form into 4 patties and set aside.
- Heat the grill to medium high heat and oil the grates.
- Brush the pineapple rings and red onion slices with a little oil and sprinkle with salt and pepper.
- Place them on the prepared grill and grill the pineapple for approximately 3 minutes per side and the onions for 4-6 minutes per side.
- While the pineapple and onions are grilling add the turkey burgers to the grill and grill for approximately 3-4 minutes per side.
- Toast the buns on the grill for about 1 minute if desired.
- Add all of the ingredients to a blender and blend until smooth.
- Cover and refrigerate until ready to serve.
- Place the burgers on the toasted buns and spread a little more teriyaki sauce over the top.
- Add a pineapple ring and grilled onions to the top.
- Spread some of the avocado spread on the other half of the bun and serve.

- Season turkey cutlets with onion powder, garlic powder, ginger, cayenne and salt. Drizzle with 2 teaspoons sesame oil (1/2 tsp onto each cutlet). Set aside and allow to marinate for 20 minutes at room temperature.

- Dissolve the salt and sugar in 2 gallons cold water in a large (at least 16 quart) stockpot or a clean bucket. (You can also add fresh herbs like rosemary, thyme or bay leaf, or aromatics like onions and garlic.) Add the turkey, cover and refrigerate, or set in a very cold place (that stays somewhere between 32 to 40 degrees F) for at least 12 hours and up to 24 hours.
- Remove the turkey from the brine 1 hour before grilling. Rinse well under cold water and pat dry to remove the salt.
- Prepare a charcoal grill for indirect grilling. The temperature inside the grill should be 350 degrees F.
- Place the turkey on the grill, cover and grill until an instant-read thermometer inserted in the thigh registers 175 degrees F, 2 hours 15 minutes to 2 1/2 hours. Let the turkey rest 1 hour before carving.

- Purée all ingredients in a blender. Pour marinade into roasting bag. Smear all over turkey. Tie bag and arrange turkey, breast side down, in a large heavy roasting pan. Refrigerate overnight.
- Let turkey stand in bag at room temperature for 1 hour. Turn breast side up. Create steam holes in bag if required by manufacturer's instructions.
- Preheat oven to 400°F. Roast turkey for 30 minutes. Reduce heat to 350°F. Roast until an instant-read thermometer inserted into thickest part of thigh (puncturing bag with thermometer) registers 160°, about 1 1/2 hours longer. Cut top of bag open, being careful of steam and juices, and pull back over turkey. Roast turkey until breast is deeply browned but not burned and a thermometer inserted into thigh registers 165°F, 15-30 minutes longer.
- Transfer to a platter. Let rest for at least 20 minutes before carving.
- Meanwhile, strain juices into a large saucepan. Spoon fat from surface. Simmer over medium heat until sauce is reduced to 3 1/2 cups, about 20 minutes.
- Carve turkey. Serve with accompanying gravy.
