SUNNY'S RACKED WINGS WITH MUSTARD BBQ SAUCE

- In a medium saucepot on medium-high heat, add the mustard, beer or tea, cane syrup, hot sauce, white vinegar, Worcestershire sauce, garlic, a pinch of salt and plenty of grinds of black pepper. Simmer until slightly thickened, about 30 minutes.
- Heat a grill for indirect cooking to 375 degrees F.
- Place the wings on a wire rack, then top with a second wire rack and secure with wire on both sides. Sprinkle on both sides with salt, pepper and a dusting of paprika. Place on the grill over the indirect heat, meat-side down. Close the grill and cook for about 15 minutes. Baste with the sauce, then flip the wings and brush with more sauce. Continue to grill until the wings are golden and the sauce is set and sticky, about 15 minutes more. Serve with the bread and pickles.

- Position racks in the upper and lower thirds of the oven; preheat to 450 degrees F. Brush 2 large baking dishes with vegetable oil. Pat the wings dry; sprinkle with 2 teaspoons salt and 1/2 teaspoon pepper. Spread in the dishes and bake, rotating halfway through, until golden, 40 to 45 minutes.
- Meanwhile, mix the dijon mustard, honey, mustard powder and garlic in a bowl. Remove the wings from the oven and toss with the mustard mixture, then continue baking until glazed, 3 to 5 more minutes.

- Rinse your chicken, drain, and pat dry. Set aside. In a bowl, mix together all the following 11 ingredients. Adjust the salt, heat, acid, and spice seasoning according to your tastes.
- Add 2/3 of the marinade into a ziplock bag, add the chicken wings, massage the bag to coat the chicken, and refridgerate overnight. Reserve the remaining 1/3 for brushing on your wings later. A half hour before grilling, remove from the fridge to allow the chicken to return to room temperature.
- Pre-heat grill on med-high heat.
- Place chicken on the grill and cook for 5-6 minutes on each side, basting with the reserved sauce 1-2 minutes before being done.

GINA'S HONEY MUSTARD KISS WINGS

- Mix the barbecue sauce, orange zest, hot sauce, honey, and Dijon together in a large bowl. Add the chicken wings and toss to combine. Cover with plastic wrap and let marinate for at least 30 minutes and up to overnight in the refrigerator.
- Prepare the grill to medium direct heat.
- Drain the wings from the marinade and pat dry. Grill until crisp and golden, about 8 minutes per side.
- While the wings are grilling, melt the butter in a small saucepan on the grill. Whisk in the honey and mustard. Brush the glaze on the wings and allow to cook for another 2 minutes. Serve the wings mounded up on a platter sprinkled with green onions.
GRILLED CHICKEN WINGS
The marinade is simply wonderful and so easy. If you bite into one of these hot off the grill the rest may not make it into the house! Make extras because the kids will eat them cold the next day. I marinated the wings for 6 hours to overnight. I also use 1 tablespoon of fresh ginger finely grated instead of ground ginger.

- Mix remaining ingredients into a bowl.
- Add wings and stir.
- Cover and marinate for 45 minutes.

- Season the wings with salt and pepper. Place the wings on the grill in a single layer. Cook for 10 minutes, turning halfway through.
- Using the small bowl of sauce, brush the wings with half of the sauce. Grill for 10 more minutes, then flip and brush with the remaining sauce. Continue to grill for another 5 minutes, or until the wings are cooked through.
- Meanwhile, microwave the remaining sauce until slightly thickened, a minute or two. Alternately, pour the sauce into a small saucepan and cook, just until slightly thickened.
