Looking for a flavorful, filling salad that works as a side dish or a main course? This is the recipe for you! The fresh, sunny flavors of the Mediterranean region are highlighted with vegetables tossed in a tangy-sweet lemon, honey and olive oil dressing, then layered on top of hummus, which makes for an extra-satisfying salad.

1/2 cup extra-virgin olive oil
3 tablespoons lemon juice
1 tablespoon chopped fresh parsley
1 1/2 teaspoons honey
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon red pepper flakes
8 cups chopped romaine lettuce (12 oz)
1 container (8 oz) prepared hummus
1 1/2 cups cherry tomatoes, halved
1 medium English (hothouse) cucumber, chopped (3 1/2 cups)
1 jar (6 oz) Progresso™ marinated artichoke hearts, drained, coarsely chopped
1 medium red onion, thinly sliced (1 cup)
1/2 cup coarsely chopped pitted Kalamata olives
1 cup crumbled feta cheese (4 oz)

Steps:

  • In small bowl, stir all dressing ingredients together with whisk until well blended.
  • Arrange lettuce on large serving platter. Drizzle with 3 tablespoons of the dressing. Place small dollops of hummus evenly over lettuce. Layer tomatoes, cucumbers, artichoke hearts, onion, olives and feta cheese on top of hummus. Serve with remaining dressing.

1/4 cup sliced almonds
2 tablespoons sugar
6 cups shredded lettuce
1 can (8 ounces) sliced water chestnuts, drained
1 cup frozen peas, thawed and well drained
1/2 medium cucumber, sliced
2 medium tomatoes, cut into thin wedges
2 cups shredded part-skim mozzarella cheese
1 can (15 ounces) mandarin orange, drained
DRESSING:
1/4 cup canola oil
2 tablespoons sugar
2 tablespoons cider vinegar
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large skillet, cook and stir almonds and sugar over low heat until sugar is dissolved and almonds are coated. Spread almonds on waxed paper and set aside., In a large salad bowl, layer the lettuce, water chestnuts, peas, cucumber, tomatoes, cheese and oranges. Sprinkle with the sugared almonds. Cover and refrigerate for at least 2 hours., In a small bowl, whisk the dressing ingredients. Pour over salad.

SUNNY'S EASY 7-LAYER GYRO DIP

One of my favorite things to order for delivery from a Greek restaurant is a gyro salad. It has all the things you want inside a gyro sandwich, but in salad form. It usually comes with two warm pitas on the side, so I love to make my own gyro from all the elements. This is a dip that gives me all those vibes and more. It's great with pita chips or as an easy way to serve gyros to a group without having several topping bowls. Just have warm pita on the side and a spoon to scoop the dip. Sometimes, I serve it this way with crisp, shredded lettuce in a bowl on the side.

1 tablespoon olive oil
1/4 cup finely grated white onion (on the smallest holes of the box grater)
1 large clove garlic, grated on a rasp
1 teaspoon chopped fresh oregano
1 pound ground lamb
1 teaspoon kosher salt
Freshly ground black pepper
8 ounces roasted garlic or red pepper hummus
4 ounces feta, crumbled
4 plum tomatoes, seeded and diced small
1/2 English cucumber, seeded and diced small
8 ounces tzatziki dip (store-bought or homemade)
2 teaspoons finely chopped fresh dill
Pita chips, for serving

Steps:

  • For the lamb: In a large pan on medium heat, add the olive oil. When it begins to swirl, add the onion, garlic, oregano, lamb, salt and plenty of black pepper. Combine the ingredients, breaking up the lamb while cooking, until it is browned, about 10 minutes. Remove with a slotted spoon to a paper towel-lined plate.
  • Layer the dip. In an 8-inch square dish, layer in this order: Spread the hummus on the bottom, then sprinkle evenly with the lamb, feta, tomatoes and cucumbers. Spread the tzatziki dip over the top and sprinkle with the dill to finish. Serve with the pita chips.

2 heads iceberg lettuce, chopped
4 tomatoes, cut into wedges
8 ounces baby spinach
8 Perfect Hard Boiled Eggs, recipe follows, chopped
Salt and freshly ground black pepper
1 pound bacon, cooked and chopped
1 bunch green onions, thinly sliced
8 ounces grated sharp Cheddar
One 10-ounce bag frozen peas, partially thawed
1/2 cup mayonnaise
1/2 cup sour cream
1 1/2 teaspoons sugar
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh parsley
8 eggs

Steps:

  • For the salad: In a clear glass bowl, layer the salad ingredients in the order they appear above, concentrating the ingredients around the perimeter of the bowl and filling in any gaps in the center with lettuce as needed. Start with a good layer of iceberg on the bottom, followed by the tomato wedges, spinach and Perfect Hard Boiled Eggs. Sprinkle the egg layer generously with salt and pepper. Layer on the bacon, green onions and Cheddar, and end with the peas.
  • For the dressing: Combine the mayonnaise, sour cream and sugar in a small bowl and mix well.
  • Pour the dressing over the top of the peas and spread evenly, bringing the dressing all the way out to the edges of the bowl. Sprinkle with the dill and parsley. Cover and refrigerate until serving.
  • Place the eggs in a saucepan, cover with water and bring to a boil. Turn off the heat and allow the eggs to sit in the water for 20 minutes. Drain off the water and add ice to the pan on top of the eggs. Set aside to chill.

SHREDDED TEX-MEX SALAD WITH CREAMY LIME DRESSING



Shredded Tex-Mex Salad with Creamy Lime Dressing image

Butter, for preparing 8 by 8-inch glass pan
One 8.5-ounce box cornbread mix (recommended: Jiffy)
1 large egg
1/3 cup milk
One 15.5-ounce can black beans, drained and rinsed
1 packet sazon seasoning
Salt and freshly ground black pepper
1 cup salsa
2 tomatoes, seeded and chopped
1 head romaine lettuce, cut into strips
Creamy Lime Dressing, recipe follows
1 1/2 cups grated Monterey Jack cheese
1 1/2 cups grated Cheddar
2 tablespoons freshly chopped cilantro leaves
1 tablespoon red wine vinegar
1 teaspoon lime zest
1/4 cup lime juice
1/2 cup sour cream
1 clove garlic, smashed
1 tablespoon honey
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F. Grease an 8 by 8-inch glass pan with butter. Stir together the cornbread mix with the egg and milk. Evenly spread into prepared pan and bake on the middle rack for 20 minutes. Remove from oven and cool in pan for 10 minutes. Remove from pan to cool completely. Mix together the beans with the sazon and season with salt and pepper. Toss the salsa with the tomatoes. When ready to serve, cut the cornbread into 1/2-inch croutons. Toss the lettuce with 3/4 cups of the dressing. In a clear trifle dish, layer the Tex-Mex Salad beginning with the black beans followed by the Monterey Jack cheese, the tomato salsa mixture, the Cheddar, the dressed romaine and top with the cornbread croutons. Serve the remaining dressing on the side.
  • Blend all the ingredients except the olive oil until smooth. While machine is running, slowly drizzle in the oil until incorporated. Season, to taste, with salt and pepper.

SEVEN LAYER SALAD

I usually make this bacon, lettuce, onion, pea, cheese and cauliflower layered salad in a large flat bowl. There's never too much because everybody loves it! You can vary the salad by substituting green onions for red, jack cheese for the Cheddar, etc.

1 large head iceberg lettuce - rinsed, dried, and chopped
1 red onion, chopped
1 (10 ounce) package frozen green peas, thawed
10 ounces shredded Cheddar cheese
1 cup chopped cauliflower
1 ¼ cups mayonnaise
2 tablespoons white sugar
⅔ cup grated Parmesan cheese

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Crumble and set aside.
  • In a large flat bowl, place the chopped lettuce and top with a layer of onion, peas, shredded cheese, cauliflower and bacon.
  • Prepare the dressing by whisking together the mayonnaise, sugar and Parmesan cheese. Drizzle over salad and refrigerate until chilled.

This is a wonderful recipe which can have ingredients added or subtracted. Even if there is only two of you to eat it, don't cut the recipe in half because I'm sure you'll want more.

4 eggs
1 head lettuce, torn into small pieces
1 onion, chopped
1 (8 ounce) can water chestnuts
1 (16 ounce) package frozen green peas
2 cups mayonnaise
2 teaspoons white sugar
1 teaspoon seasoning salt
¼ teaspoon garlic powder
½ pound bacon - cooked and crumbled
1 large tomato, chopped

Steps:

  • Place eggs in a large saucepan and completely cover with water. Bring to a boil. Cover and remove from heat. Let stand for 12 minutes. Remove eggs and chill.
  • In a 9x13 inch dish, layer the lettuce, onion, water chestnuts and peas.
  • In a medium bowl combine the mayonnaise, sugar, seasoned salt and garlic powder. Mix until smooth. Spread over the top evenly over the top of the peas. Cover and refrigerate overnight.
  • Peel and chop hard-cooked eggs.
  • Remove salad from refrigerator and top with the bacon, eggs and tomato. Serve.

1 green pepper, chopped
1 cup celery (I leave this out)
1 small onion, chopped
1 cup frozen peas, uncooked
2 cups Miracle Whip (I use the Lite)
2 teaspoons sugar (You can use Equal or Sweet and Low)
1 (4 ounce) jar Bacos bacon bits (you can also use crumbled leftover bacon)
2 cups cheese, shredded

Steps:

  • Layer all of the above vegetables in order, evenly.
  • Cover with plastic wrap securely and refrigerate overnight.
