2 lbs chicken wings
1/3 cup orange juice
2 tablespoons fresh lime juice
1 1/2 teaspoons lime zest
1/4 teaspoon oregano leaves
1/8 teaspoon chopped of fresh mint
1 tablespoon diced onion
1/2 teaspoon ground cumin
3 -4 chopped garlic cloves
3 tablespoons extra virgin olive oil
1 teaspoon peeled grated gingerroot

Steps:

  • Place all ingredients except for chicken wings in a food processor (or blender), process until blended.place wings in a large resealable bag or container, pour in marinade and toss to coat.refrigerate 8-10 hours.
  • heat grill to medium heat. remove wings from marinade , place wings on grill and cover. grill wings 15-20 minutes, or until no longer pink; turning occasionally.

CHICKEN WING SKEWERS

2 to 2 1/2 pounds chicken wings (about 12 wings)
1 tablespoon vegetable oil
2 teaspoons fresh orange zest
1 teaspoon ground fennel seeds
1 teaspoon kosher salt
1/2 teaspoon freshly ground white peppercorns
Honey Glaze, recipe follows
1/2 cup orange juice
1/4 cup honey
1/2 teaspoon kosher salt

Steps:

  • Preheat your grill (propane, charcoal or wood fired) to medium-high heat.
  • Remove the wing tips from the chicken wings and save for another use, or freeze to make a stock. Cut the wings in half at the joint to separate the drums and the flats.
  • Mix the vegetable oil, orange zest, fennel seeds, salt and pepper in a small bowl. Toss the drums and flats in this mixture to coat well.
  • Separate the drums and flats to skewer. First skewer the flats using 2 metal skewers, one on each end of the flat placed lengthwise. You should be able to fit 6 flats per pair of skewers. Now, skewer the drums only with 2 skewers, one on each side of each drum. For even cooking, alternate the placement of the meatier end as you add on each piece. You should be able to fit 6 drums per pair of skewers. After the skewering assembly, you will have a total of 2 lines of flats and 2 lines of drums ready for grilling.
  • Transfer the wings onto the grill over direct heat and grill for 6 minutes per side on medium-high heat. Remember the metal skewers will be hot; use sturdy tea towels or long tongs to help with flipping.
  • Turn the heat down to medium. At this point (the wings will be about three-quarters done), brush the top side of the wings with the Honey Glaze. Grill for 8 to 10 minutes, then flip onto the other side and glaze again. Grill for another 8 to 10 minutes. Remove from the heat and let rest for 5 minutes; the glaze will still be very hot. Serve warm.
  • Put the orange juice, honey and 1/2 cup water in a small pan on medium heat. Cook, stirring occasionally, until the liquid has reduced to maple syrup consistency, about 8 minutes (the glaze will thicken very slightly as it cools down). Season with salt and set aside.

1 (2 1/2 to 3-pound) chicken
2 tablespoons garlic powder
1 tablespoon onion powder
1/4 teaspoon ground cumin
1 tablespoon dried oregano
2 tablespoons kosher salt
1 tablespoon freshly ground black pepper
1 teaspoon paprika
Marinade, recipe follows
4 tablespoons extra-virgin olive oil
Mojito Glaze, recipe follows
1 cup orange juice
2 limes, juiced
1/4 cup white wine vinegar
1/4 cup extra-virgin olive oil
1 tablespoon sliced garlic
1/4 cup dark rum
1/2 cup dark rum
1/2 cup chicken broth
1 tablespoon brown sugar
3 tablespoons cold water
1 tablespoon cornstarch
1/4 cup chopped mint leaves
Salt and freshly ground black pepper

Steps:

  • Remove backbone of chicken with poultry shears; flatten chicken out by pressing firmly on skin part of chicken so it will sit evenly in a pan.
  • Preheat oven to 300 degrees F.
  • Combine all the dry spices and rub chicken with spice mixture, especially under the skin. Put into a resealable plastic bag and refrigerate for 30 minutes.
  • In a large mixing bowl combine all the ingredients for the marinade, then add chicken to marinade and refrigerate for at least 1 hour.
  • Remove chicken from marinade and shake off excess marinade. In a large saute pan over medium to high heat, add 4 tablespoons of extra- virgin olive oil. When oil is hot, place chicken skin side down and sear.
  • When skin is golden brown flip chicken and add 1/2 cup of marinade into pan; place pan in oven and cook the chicken for 25 minutes or until chicken has internal temperature of 165 degrees F. on an instant-read thermometer.
  • Remove the chicken from oven and brush with Mojito Glaze. Place chicken under broiler for 5 minutes. Remove from broiler, cut and serve immediately with more glaze on the side.
  • Combine all ingredients in mixing bowl.
  • In medium sauce pot, place rum, chicken broth and brown sugar. Reduce by 1/3 over high heat. In a small mixing bowl, whisk together water and cornstarch. When rum mixture is reduced, add cornstarch mixture slowly to simmering liquid and whisk for 3 minutes, until 50 percent thicker. Keep in mind that you might not need all of it. When glaze is at desired thickness, add mint leaves and transfer to small bowl. Season with salt and pepper, to taste.

1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
3 pounds whole chicken wings
6 tablespoons unsalted butter
1/3 cup hot sauce
1 tablespoon apple cider vinegar
1 tablespoon honey

Steps:

  • In a small bowl, combine the salt, pepper and garlic powder. In a large bowl, toss the wings with the salt mixture to evenly coat.
  • Preheat a gas grill to medium heat (about 350 degrees F).
  • Place the wings on the grill, crowding them together so that they are all touching (this goes against the conventional wisdom of giving meat room so it doesn't steam; you want them to steam so that they stay moist). Grill, flipping the wings every 5 minutes, for a total of 20 minutes of cooking.
  • In the meantime, heat the butter, hot sauce, vinegar and honey in a saucepan over low heat and whisk to combine.
  • In a clean large bowl, toss the wings with the sauce. Turn the heat up on the grill to medium high. Use tongs to remove the wings from the sauce and put them back on the grill until the skins crisp, 1 to 2 minutes per side. Put the wings back in the bowl with the sauce, toss and serve.

2 lbs boneless skinless chicken pieces (thighs and breasts)
1/3 cup frozen concentrated orange juice, thawed
3 tablespoons fresh lime juice
2 teaspoons grated lime zest
3 tablespoons olive oil
2 tablespoons chopped fresh cilantro
1/2 teaspoon ground ginger
1/2 teaspoon cumin
1 teaspoon minced garlic

Steps:

  • Place all the marinade ingredients into a blender or food processor and blend to liquify.
  • Pour marinade into a plastic Ziplock baggie.
  • Place the chicken in the baggie with the marinade; squish around to coat the pieces.
  • Refrigerate chicken in the marinade for AT LEAST 8 hours, but no more than 24 hours. Turn the baggie every few hours.
  • When ready to grill: preheat grill to medium heat.
  • Place chicken on grill (discard the marinade) and grill over direct heat for about 8-9 minutes on each side or until juices run clear.

2 tablespoons lime zest
1/4 cup lime juice
1/4 cup orange juice
2 tablespoons of fresh mint, chopped
1 tablespoon honey
2 garlic cloves, minced
2 teaspoons olive oil
1 teaspoon ground cumin
1/2 teaspoon salt
6 chicken breasts, skinned and boneless
1 lime, cut in wedges
6 mint sprigs

Steps:

  • Combine lime zest, lime juice, orange juice, honey, garlic, cumin, chopped mint, olive oil, and salt in a small bowl.
  • Transfer one half of mixture into a covered container and refrigerate.
  • Transfer the remaining the remainder of the mixture into a gallon size Zip Lock bag and add the chicken.
  • Squeeze out the air from bag and seal.
  • Let chicken marinade for at least 2 hours, or over night.
  • Preheat grill.
  • Remove the chicken from the bag and discard excess marinade.
  • Place chicken on grill and cook for 20-30 minutes, turning occasionally.
  • While chicken is cooking, pour reserved marinade into a small saucepan and bring to boil.
  • Transfer cooked chicken to a platter and spoon hot marinade on top.
  • Garnish with lime wedges and a sprig of mint and serve.

2 tablespoons original bacardi rum
1 tablespoon honey (pref. raw thick type)
1/2 teaspoon lime zest
1 garlic clove, crushed & diced
1/8 teaspoon coriander
1/2 teaspoon of fresh mint, chopped
1/4 teaspoon canola oil
1/8 teaspoon black pepper
1/8 teaspoon Lawry's Seasoned Salt
12 chicken wings (about a dozen)

Steps:

  • Preheat oven to 450 degrees F.
  • Mix all your marinade ingredients together in a bowl.
  • Lightly grease a glass baking dish and place chicken in it.
  • Pour marinade over chicken.
  • Bake for 35 minutes, stirring occasionally.
  • Transfer chicken to plates and drizzle pan juice on top.
  • Grate lime zest over the wings and garnish with mint.
