8 ounces deli honey-roasted ham, shaved
2 -4 slices swiss cheese
2 large croissants
1 -2 tablespoon butter

Steps:

  • Heat honey ham in skillet or microwave.
  • Cut croissants in half, sandwich style.
  • Heat skillet over medium heat.
  • Prepare sandwich by buttering croissants on each side and grilling them until golden on each side, top and bottom.
  • Layer each croissant with honey ham and swiss cheese.
  • Drizzle with honey mustard sauce.

Made these the other day when we had a barbecue with all the trimmings! They were awesome!!! These sweet-savory glazed hot dogs were inspired by a dish Marcia Kissel from Food & Wine Magazine discovered at a Manhattan Chinatown restaurant. The hot dogs are cut in a crosshatch pattern, which makes them cook even faster, and served in a grilled mustard-brushed croissant. From Easy Grilling, Easy Grilling A Virtuoso Griller's No Fuss Dishes, June 2008 edition.The cabbage salad can be made & refrigerated overnight & the cut hot dogs can also marinate overnight so the flavors can meld.This recipe can easily be doubled etc.

1 tablespoon honey
1 teaspoon honey
1 tablespoon sherry wine vinegar
1 teaspoon sherry wine vinegar
6 cups finely shredded green cabbage (from 1/2 small head)
3 fresh red chilies, such as fresno seeded and thinly sliced
salt (optional)
2 tablespoons unsalted butter, softened
2 tablespoons Dijon mustard
4 croissants, split but still attached on one side
4 large hot dogs (Kosher, all beef)
2 tablespoons ketchup
1 tablespoon soy sauce
1/2 teaspoon vegetable oil
1 large garlic clove, minced

Steps:

  • In a large bowl, stir the honey with the sherry vinegar until the honey is dissolved.
  • Add the shredded cabbage and red chiles, season with salt and toss.
  • Let stand until the cabbage is slightly softened, tossing a few times, about 15 minutes.
  • Meanwhile, in a small bowl, blend the butter and the mustard.
  • Gently spread the cut sides of the croissants with the butter.
  • Light a grill.
  • Thread each hot dog lengthwise onto a thick metal or wooden skewer.
  • With a small, sharp knife, make cuts at an angle in 3 rows down each hot dog, about 1/2 inch apart, cutting partway into the hot dog.
  • The cuts should look like rounded half circles.
  • Lightly run the knife down the center of the cuts to halve the half circles.
  • On a large plate, mix the ketchup with the soy sauce, oil and garlic.
  • Turn to coat each hot dog with the mixture.
  • Grill the croissants over high heat, cut side down, until toasted, about 30 seconds.
  • Turn and grill the other side for about 10 seconds.
  • Grill the hot dogs over high heat all over, until nicely charred and the cuts open up, about 2 minutes total; the hot dogs should resemble pine cones.
  • Mound the cabbage salad on one half of each croissant, set the hot dogs on top and serve.

This is a favorite I made up while working in my family's restaurant in New Orleans. I got tired of the same ole' stuff on the menu so had fun with making this. I even served it to my favorite customers if they asked real nice!

2 slices deli style ham (the long ones work well)
1 slice swiss cheese
2 slices bread
1/3 cup onion, chopped
1 tablespoon butter or 1 tablespoon oil
1 lettuce leaf
2 slices tomatoes
3 slices pickles
1 teaspoon mayonnaise
1/2 teaspoon mustard
salt and pepper

Steps:

  • First, grill your onions to your liking in a pan with a small amount of oil. Put aside.
  • Wash lettuce and have your sandwich fillings ready for assembly.
  • On a hot plate, skillet, etc., place one slice of ham down, followed by swiss cheese, then the other slice of ham (if you use the long slices of ham, they will wrap around the cheese quite nicely). The cheese should be as protected from the pan as much as possible. You want to heat on a medium/high heat and flip this after a minute or two so the top side gets a turn down on the pan. But don't cook this too long as it will make the meat tough and the cheese will melt and leak out all over the place. Just heat until meat is slightly brown on top and bottom and the cheese has mostly melted.
  • While meat and cheese are cooking, place 2 slices of bread in toaster. When done, add mayo and/or mustard to toast and place ham/cheese on bottom slice of toast. Top with grilled onions, lettuce, tomato, pickle, and sprinkle with salt and pepper. Add top piece of toast, slice sandwich on the diagonal, throw on a plate with some potato chips and get busy (all the while wondering why you didn't go ahead and make that second one while you were at it!) -- back to the kitchen. These things ARE addictive. You've been warned!

HAM AND DIJON CROISSANT SANDWICHES

Melt-in-your-mouth baked croissant sandwiches of thinly sliced ham, Swiss cheese, and a delicious buttery Dijon and poppy-seed sauce! Perfect for luncheons or entertaining, or packed into picnic lunches; great served warm, or at room temperature. Use as much ham and cheese as you like! Sandwiches are easily made up in advance and individually wrapped in foil, then refrigerated or frozen (use a freezer bag) for later use. Defrost overnight in the fridge, then bake as directed. Or, if frozen, bake at 300 F for about 1/2 hour until warm. If using mini-rolls, you may place them in a buttered baking dish and bake for the specified amount of time (no need to individually wrap)--I've also microwaved them. Enjoy!

8 freshly baked croissants or 8 hawaiian sweet dinner rolls, split
1/2 cup butter, very soft
1 tablespoon Dijon mustard
2 tablespoons finely chopped white onions
2 teaspoons poppy seeds
8 thin slices virginia ham
8 slices swiss cheese

Steps:

  • Preheat oven to 350°F.
  • In a small bowl, combine softened butter with the Dijon, chopped onion, and poppyseeds.
  • Spread generously onto both (inner) sides of the split croissants.
  • Place one slice each of ham and Swiss cheese into each croissant, and replace tops.
  • Wrap each croissant or Hawaiian roll in a square of foil, sealing carefully. At this point sandwiches may be baked right away, or refrigerate or freeze (use a freezer bag) for later use.
  • Bake in a preheated 350 F oven for 15-20 minutes, until hot. If frozen, bake at 300 F for about 25-30 minutes, until heated through.
  • Serve hot, or at room temperature. Good sides are soup or salad, and fresh fruit for dessert.
  • NOTE: If using mini-rolls, you may bake them in a buttered baking dish (no need to individually wrap).
