CROSSHATCH HOT DOGS ON GRILLED CROISSANTS
Made these the other day when we had a barbecue with all the trimmings! They were awesome!!! These sweet-savory glazed hot dogs were inspired by a dish Marcia Kissel from Food & Wine Magazine discovered at a Manhattan Chinatown restaurant. The hot dogs are cut in a crosshatch pattern, which makes them cook even faster, and served in a grilled mustard-brushed croissant. - In a large bowl, stir the honey with the sherry vinegar until the honey is dissolved.
- Add the shredded cabbage and red chiles, season with salt and toss.
- Let stand until the cabbage is slightly softened, tossing a few times, about 15 minutes.
- Meanwhile, in a small bowl, blend the butter and the mustard.
- Gently spread the cut sides of the croissants with the butter.
- Light a grill.
- Thread each hot dog lengthwise onto a thick metal or wooden skewer.
- With a small, sharp knife, make cuts at an angle in 3 rows down each hot dog, about 1/2 inch apart, cutting partway into the hot dog.
- The cuts should look like rounded half circles.
- Lightly run the knife down the center of the cuts to halve the half circles.
- On a large plate, mix the ketchup with the soy sauce, oil and garlic.
- Turn to coat each hot dog with the mixture.
- Grill the croissants over high heat, cut side down, until toasted, about 30 seconds.
- Turn and grill the other side for about 10 seconds.
- Grill the hot dogs over high heat all over, until nicely charred and the cuts open up, about 2 minutes total; the hot dogs should resemble pine cones.
- Mound the cabbage salad on one half of each croissant, set the hot dogs on top and serve.

This is a favorite I made up while working in my family's restaurant in New Orleans. I got tired of the same ole' stuff on the menu so had fun with making this. I even served it to my favorite customers if they asked real nice!

- First, grill your onions to your liking in a pan with a small amount of oil. Put aside.
- Wash lettuce and have your sandwich fillings ready for assembly.
- On a hot plate, skillet, etc., place one slice of ham down, followed by swiss cheese, then the other slice of ham (if you use the long slices of ham, they will wrap around the cheese quite nicely). The cheese should be as protected from the pan as much as possible. You want to heat on a medium/high heat and flip this after a minute or two so the top side gets a turn down on the pan. But don't cook this too long as it will make the meat tough and the cheese will melt and leak out all over the place. Just heat until meat is slightly brown on top and bottom and the cheese has mostly melted.
- While meat and cheese are cooking, place 2 slices of bread in toaster. When done, add mayo and/or mustard to toast and place ham/cheese on bottom slice of toast. Top with grilled onions, lettuce, tomato, pickle, and sprinkle with salt and pepper. Add top piece of toast, slice sandwich on the diagonal, throw on a plate with some potato chips and get busy (all the while wondering why you didn't go ahead and make that second one while you were at it!) -- back to the kitchen. These things ARE addictive. You've been warned!
HAM AND DIJON CROISSANT SANDWICHES
Melt-in-your-mouth baked croissant sandwiches of thinly sliced ham, Swiss cheese, and a delicious buttery Dijon and poppy-seed sauce! Perfect for luncheons or entertaining, or packed into picnic lunches; great served warm, or at room temperature. Use as much ham and cheese as you like! Sandwiches are easily made up in advance and individually wrapped in foil, then refrigerated or frozen (use a freezer bag) for later use. Defrost overnight in the fridge, then bake as directed. Or, if frozen, bake at 300 F for about 1/2 hour until warm. If using mini-rolls, you may place them in a buttered baking dish and bake for the specified amount of time (no need to individually wrap)--I've also microwaved them. Enjoy!

- Take your croissant and cut it in half and smear mustard both sides. On the bottom half of the croissant place half of your ham down then the sauerkraut, one slice Swiss Cheese then the rest of your ham then the second slice of Swiss Cheese and replace the top half of the croissant.
- Place your sandwich on the center of your foil and make a foil bag {How to Make a Foil Pouch and Foil Bag}. Using a bag over a pouch will not squash the sandwich when wrapping it.
