3 Japanese eggplant (12 ounces total), sliced lengthwise into 1/2-inch-thick rectangles
12 cremini mushrooms
1 bunch (1-pound) asparagus, trimmed
12 green onions, roots cut off
1/4 cup plus 2 tablespoons olive oil
Salt and freshly ground black pepper
3 tablespoons balsamic vinegar
2 garlic cloves, minced
1 teaspoon chopped fresh Italian parsley leaves
1 teaspoon chopped fresh basil leaves
1/2 teaspoon finely chopped fresh rosemary leaves

Steps:

  • Place a grill pan over medium-high heat or prepare the barbecue (medium-high heat). Brush the vegetables with 1/4 cup of the oil to coat lightly. Sprinkle the vegetables with salt and pepper. Working in batches, grill the vegetables until tender and lightly charred all over, about 8 to 10 minutes for the bell peppers; 7 minutes for the yellow squash, zucchini, eggplant, and mushrooms; 4 minutes for the asparagus and green onions. Arrange the vegetables on a platter. The key to getting those great grill marks is to not shift the vegetables too frequently once they've been placed on the hot grill.
  • Meanwhile, whisk the remaining 2 tablespoons of oil, balsamic vinegar, garlic, parsley, basil, and rosemary in a small bowl to blend. Add salt and pepper to taste. Drizzle the herb mixture over the vegetables. Serve the vegetables, warm or at room temperature.

1 pound carrots (halved or quartered)
1 pound asparagus (trimmed)

Steps:

  • Set out a 1-2 cup measuring pitcher. Measure all ingredients into the pitcher. Whisk until smooth. (Use immediately or cover and refrigerate for later use.)
  • Trim and slice all the vegetables into long strips. This makes them less likely to fall through the grill grates.
  • Place the vegetables on a large rimmed baking sheet. Pour the marinade over the vegetables. Then gently toss the veggies to coat in the marinade.
  • Allow the vegetables to marinate for 30+ minutes. (Or up to several hours.)
  • Meanwhile, preheat the grill to medium heat, about 350 degrees F.

2 red capsicum/bell peppers
2 yellow capsicum/bell peppers
2 red onions
1 eggplant (, halved lengthwise, then 1.25cm/ 0.5" thick semi circles)
2 zucchini (, 0.7cm / 1/3" thick slices on diagonal)
2 bunches asparagus (, ends trimmed)
200g/ 7oz button mushrooms
1/4 cup (65ml) extra virgin olive oil
1 tsp each salt and pepper
3 cloves garlic (, minced)

Steps:

  • Place ingredients in a jar and shake well. Set aside 10 minutes+.
  • Keep pieces large for easy handling on the BBQ (so you don't have to turn hundreds of pieces!) and so they don't fall through the grills.
  • Capsicum/bell peppers - cut the "walls" off, then cut each each on the diagonal into fairly large pieces.
  • Onion (Note 4) - keep the root end (hairy end!) in tact. Peel, cut in half, then cut into wedges through the root end.
  • Brush BBQ grills lightly with oil, then preheat to high. Or oven 250°C/480°F.
  • Place vegetables in a very large bowl or use a big tray. Drizzle with oil, sprinkle with salt, pepper and garlic. Toss with hands (there is no better way!).
  • Place on BBQ and cook until tender crisp with charred edges - cook times below. Then remove into large bowl.
  • Asparagus, zucchini - grill 2 min each side. (Oven - 10 min, no flipping)
  • Capsicum, mushroom, onion - grill 3 min each side (oven 15 min, flip at 10 min)
  • Eggplant - grill 4 min each side. Jab in middle to ensure soft but not soggy! (oven 18 min)
  • While vegetables are still hot, drizzle over Dressing and toss.

It rounds out a super meal.

1/3 cup olive oil

  • Prepare a charcoal grill for two-zone cooking over medium-high heat by pouring the coals onto one half of the grill. For a gas grill, heat all of the burners to high, then turn one of the end burners off before cooking.
  • While the grill is heating, make the marinade: In a medium bowl, combine 3/4 cup oil, vinegar, mustard and shallot. Season with salt and pepper. Cut the vegetables into pieces that are large enough so as to not slip through the grates; for small or slender vegetables, like snap peas or green beans, leave them whole. Pat the vegetables dry, then transfer to a sheet pan, season with salt and pepper, and drizzle with enough olive oil to coat.

  • Wash and cut peppers, onions and broccoli spears. With a damp cloth, gently wipe debris from mushrooms.
  • Carefully spear vegetables onto bamboo skewers. I like to arrange the veggies in the order of pepper, onion, broccoli & mushroom. Note: If desired, you may soak the bamboo skewers in water before using, but I feel it is not necessary due to their being soaked well with the marinade.
  • Place skewers in a large, rectangular resealable container. Pour dressing liberally over veggies. Marinate for 6-12 hours or overnight, making sure to carefully flip the container upside-down and shake occasionally to redistribute the dressing.

  • Cut the zucchini, red pepper and red onion.

  • Whisk dressing ingredients and some seasoning in a large bowl. Heat a griddle pan. Blacken peppers on all sides. Put in a bowl and cover with a plate until cool to touch.
  • Griddle the other veg, without oiling, until charred on each side and softening. As they cook toss them straight into the dressing, separating onions into rings. Peel peppers, reserving the juice in the bowl, deseed and cut into strips. Toss in with the rest of the veg, then strain the juice over. Leave everything to cool, then season. The salad can be kept in the fridge for 2 days, but bring it out a few hrs before serving. Then stir through parsley and garlic.

1 eggplant
8 ounces mushrooms (left whole)
2/3 cup white wine vinegar
1/3 cup soy sauce

2 tablespoons dark sesame oil
2 cloves garlic (minced)
2 teaspoons hot sauce ((optional))

Steps:

  • Take the seeds out of the red peppers, then cut each pepper into quarters or large wedges. Slice the zucchini and eggplant crosswise into round slices.
  • Mix together the white wine vinegar, soy sauce, ginger, olive oil, sesame oil, garlic and hot sauce in a non metallic baking dish to create the marinade. Place the vegetable pieces into the mixture and stir to mix everything together well. Cover the bowl and place it into the refrigerator.
  • Refrigerate the vegetables and allow them to marinate for at least 2 hours before cooking them, turning them occasionally to make sure they are well coated by the marinade. You can refrigerate the vegetables for up to 24 hours before you grill them.
  • When you are ready to cook the vegetables, take them out of the marinade and place them on a grilling rack on your barbecue. Grill the vegetables for about 8 minutes, turning them once and brushing with the marinade occasionally.

1 tsp crushed red pepper flakes (more can be used to make it more spicy)
2 tbsp Italian seasoning**

Steps:

  • Note: leave yourself time to marinade the vegetables. Marinading can be as fast as 1 hour or as slow as overnight.
  • Cut vegetables into even pieces so that it cooks easily. Place cut vegetables into a mixing bowl.
  • In a small bowl, combine pressed garlic, lemon juice, vinegar, oil, salt, crushed red pepper flakes, and Italian seasoning. Whisk together until thoroughly combined.
  • Pour the marinade mixture all over the veggies and mix to coat the veggies evenly.
  • Cover the mixing bowl with plastic wrap and refrigerate for at least an hour. (You can also marinade the vegetables overnight.) Try to mix veggies from time to time.
  • Skewer vegetables onto metal skewers, alternating the veggies evenly so each skewer gets even amount of different veggies. (If using wooden skewers, make sure to soak them first.)
