Grilled Marinated Tri-Tip Steak Recipe with Red Pepper Cilantro Pesto {Giveaway} image

The savory and subtly sweet marinade tenderizes this steak and adds a depth of flavor. The red pepper pesto is so good it could be eaten with a spoon.

3 cloves garlic (minced)
3 tablespoons red wine vinegar
2 tablespoons minced fresh thyme leaves
2 tablespoons agave nectar (or honey)
2 tablespoons Worcestershire sauce
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/3 cup olive oil
2 lbs tri-tip steak
2 roasted red peppers
3 tablespoons slivered almonds (toasted)
1 garlic clove (chopped)
1/3 cup chopped cilantro
3 tablespoons grated Parmesan cheese
1 1/2 teaspoons freshly-squeezed lime juice
1/4 cup extra-virgin olive oil
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • In a medium bowl, whisk together garlic, red wine vinegar, thyme, agave nectar, Worcestershire sauce, salt and pepper. While whisking, slowly pour in the olive oil.
  • Place the tri-tip steak in a large resealable plastic bag. Add the marinade, seal the bag and massage the meat to coat it with the marinade.
  • Refrigerate for at least 6 hours and up to 12 hours.
  • Remove the steak from the refrigerator 30 minutes prior to grilling to allow the meat to come to room temperature.
  • Preheat the grill to medium-high heat and lightly oil the grill.
  • Place the steaks on the grill and cook until desired degree of doneness is reached, about 5 minutes per side, depending on the thickness of the steak. Remove steak from the grill and let rest for 10 minutes before slicing.
  • Place roasted red bell peppers in the bowl of a food processor. Add slivered almonds, garlic, cilantro, Parmesan cheese, and lime juice. Pulse until combined.
  • While the food processor is running, slowly pour in olive oil. Season with salt and pepper. Set the pesto aside.

1 cup soy sauce (low-sodium will work well)
1/2 cup brown sugar
1/2 cup white sugar
3/4 cup onion, sliced
1/2 cup sake
1/2 cup mirin (or 1/2 cup sake and 1 teaspoon sugar)
1 tablespoon garlic, minced
1 tablespoon ginger, sliced
1/2 teaspoon pepper
1/2 teaspoon dry mustard
1 beef tri-tip steak, trimmed of excess fat (1 1/2 pounds)

Steps:

  • In a marinating dish or large zip lock bag pour in marinating ingredients (soy sauce - mustard), stir or shake bag until sugar is dissolved. Add beef, covering all sides. Chill at least 2 hours, but may be marinated up to one day, turning occassionally.
  • Drain beef, discarding marinade.
  • Prepare grill using a solid bed of coals - about medium heat.
  • Grill beef, turning every 5 minutes until done to desired doneness (about 30 minues for med rare).
  • Transfer to platter or cutting board and let rest 5 minutes before slicing beef into thin slanting slices, cutting across grain.

One 3-pound beef tri-tip steak
1 cup thinly sliced shallots (from about 2 large shallots)
1/2 cup extra-virgin olive oil
1/4 cup honey
1/4 cup Dijon mustard
1/4 cup roughly chopped fresh cilantro, plus leaves for garnish
1/4 cup roughly chopped fresh parsley, plus leaves for garnish
12 stems fresh thyme
6 cloves garlic, smashed
4 stems fresh oregano
One 750-ml bottle red wine, such as Malbec or Pinot Noir (about 3 1/4 cups)
Kosher salt and freshly grated black pepper
2 oranges
Extra-virgin olive oil, for drizzling
1 clove garlic
Flaky sea salt, for sprinkling

Steps:

  • For the marinade: Place the steak in a 2-gallon resealable plastic bag and place the bag in a large bowl. Add the shallots, oil, honey, mustard, cilantro, parsley, thyme, garlic, oregano, wine, 1 tablespoon kosher salt and 2 teaspoons black pepper to the bag. Cut the oranges in half, squeeze the juice into the marinade and then add the halves as well. Seal the bag, squeezing out any excess air, then massage the marinade into the steak, making sure all the ingredients are evenly incorporated. Marinate the steak in the refrigerator for 2 1/2 hours.
  • Preheat a grill for cooking over medium-high heat. Remove the steak from the marinade, making sure to pull off any marinade ingredients like herbs or shallots that stick to the steak (reserve the marinade). Generously sprinkle the steak all over with salt and pepper. Grill until dark grill marks form, 3 to 4 minutes per side; then turn the heat down, cover the grill and cook until an instant-read thermometer inserted into the thickest part of the steak registers 130 degrees F for medium-rare, another 25 to 30 minutes. Remove the steak from the grill and let rest for 10 minutes.
  • Meanwhile, place the marinade in a medium pot over medium-high heat. Bring the mixture to a boil and cook until thickened and reduced down to 1 1/2 cups, approximately 25 minutes. Remove from the heat and strain the sauce through a fine-mesh strainer.
  • To serve: Rub a cutting board with olive oil and garlic, then sprinkle with flaky sea salt. Put the steak on top and slice it against the grain. Garnish with cilantro and parsley leaves, and serve with the red wine herb sauce.

4 lbs beef loin tri-tip roast, trimmed

Steps:

  • Whisk first 10 ingredients in medium bowl. Using small sharp knife, pierce meat all over.
  • Place meat in large resealable plastic bag; add marinade. Seal bag. Refrigerate at least 2 hours or overnight, turning plastic bag occasionally.
  • Prepare barbecue (medium-high heat). Remove meat from marinade. Discard marinade.
  • Grill meat to desired doneness, about 10 minutes per side for medium-rare. Transfer to cutting board.
  • Tent with foil; let stand 10 minutes. Cut diagonally across grain.

2 tablespoons olive oil
2 teaspoons balsamic vinegar
1 garlic clove, crushed (to taste)
salt
fresh ground black pepper (to taste)
1 1/3 lbs flank steaks
1 tablespoon olive oil
1 large red bell pepper, seeded and finely chopped
1 shallot, minced
1 garlic clove, crushed
1/8 teaspoon salt
fresh ground black pepper, to taste
1 cup roasted red pepper, chopped
1 tablespoon balsamic vinegar
20 basil leaves, chopped
1/4 cup pine nuts, toasted, chopped

Steps:

  • Mix the oil, vinegar, garlic, salt and pepper together, and brush the mixture on the flank steak. Cover and refrigerate for 1 hour or overnight.
  • Meanwhile, heat the olive oil in a medium skillet over medium heat. Add the raw red pepper, shallot, and garlic and season with salt and pepper. Cook until the peppers soften, about 5 minutes.
  • Add the roasted red peppers and vinegar and cook for 5 minutes more.
  • Remove from heat, cool and stir in the basil and the pine nuts.(this can be stored in the refrigerator for up to 1 week. It should be served at room temperature.).
  • Preheat the grill to high heat.
  • Grill the flank steak for 4 to 8 minutes on each side, depending on the desired doneness. Let the steak rest on a carving plate for 1 or 2 minutes before slicing.
  • Slice the steak on the bias and serve it with the red pepper pesto.
  • For an Asian twist: Substitute 1 tablespoons soy sauce for the balsamic vinegar. Also, add 1 tsp.minced ginger and Dijon mustard to the marinade.
