These easy 10 minute grilled mangoes taste incredible and make a delicious dessert, side dish, salad, or salsa. Healthy, simple to make, and can be used in so many ways.

2 mangoes
1 tsp coconut oil (or other high temp oil)
2 tsp honey (only if mangos need extra sweetness)

Steps:

  • Preheat grill to medium high heat.
  • Cut the cheeks off of the mango. Brush with oil and honey, if needed.
  • Place mangos on the center of the grill, flesh side down. Grill for 1-2 minutes, then rotate the mangos 90 degrees and grill for 1-2 more minutes.
  • Top with yogurt, ice cream, or frozen yogurt. Drizzle with honey. Consider topping with fresh lime juice, pistachios, or a sprinkle of chili powder.

Grilled Mango with Lime, Salt and Ancho Powder image

Go to Mexico and you will find vendors, either with carts in the city or baskets on the beaches, selling cups of fresh fruit and vegetables served up with a squeeze of lime, a sprinkling of salt and a dash of chile powder. The combination may seem odd at first to the North American palate but the combination of sweet, sour, salty and spicy flavors is addictive. Grilling the mango intensifies its natural honeyed sweetness, adding another dimension to an already simple but powerful play of flavors.

4 ripe mangoes
2 tablespoons canola oil
Juice of 1 lime
1 teaspoon fine sea salt
1/4 teaspoon ancho or New Mexican chile powder
Finely grated zest of 1 lime
Fresh cilantro leaves, for garnish, optional

Steps:

  • Heat the grill to medium for direct grilling. Slice the mangoes in 2 pieces from the pit. Score the flesh of the mangoes in a diamond pattern, taking care not to cut into the skin. Pop the flesh by holding the skin side and pushing up. Brush the flesh with the oil and grill, cut-side down, until slightly charred, about 1 minute.
  • Transfer the mangoes to a platter and immediately drizzle with the lime juice and sprinkle with the salt, chile powder and lime zest. Garnish with cilantro leaves if desired.

24 fresh jalapeno peppers
3/4 pound bulk pork sausage
12 bacon strips, halved

Steps:

  • Wash peppers. Cut a slit along one side of each pepper. Remove seeds; rinse and dry peppers. , In a skillet, cook sausage over medium heat until no longer pink; drain. Stuff peppers with sausage and wrap with bacon; secure with soaked toothpicks., Grill peppers, uncovered, turning frequently, over medium heat until tender and bacon is crisp, about 15 minutes.

3 mangoes, peeled
Olive oil
Pinch salt
Pinch freshly ground black pepper
Pinch cayenne pepper
1 lime, juiced
1 container crema
Chopped jalapenos, for garnish
Cilantro leaves, for garnish

Steps:

  • Preheat the grill over medium heat.
  • Cut the mango flesh from the pit in large slices and arrange on a baking sheet. Sprinkle with salt, black pepper and cayenne, to taste. Drizzle with olive oil. Turn them over and sprinkle the other side with the seasonings and a drizzle of olive oil. Put on the grill for 1 to 3 minutes, grilling on both sides. Remove from the grill to a serving dish and sprinkle with the lime juice. Drizzle crema over the mangos and garnish with jalapenos and cilantro. Serve.

JALAPENO-MANGO SALSA



Jalapeno-Mango Salsa image

2 tablespoons vegetable oil
2 whole jalapeno chiles
2 tablespoons chopped fresh cilantro
2 mangoes, peeled, pitted and diced
1 lime, juiced
1/4 large red onion, minced
Kosher salt and freshly ground pepper

Steps:

  • Heat the vegetable oil in a small saute pan over medium-high heat. Lightly fry the jalapeno chiles, turning them in the pan until their skins are blistered, about 5 minutes. Set aside to cool. Once cooled, stem, seed and finely chop the jalapeno chiles and place them into a large mixing bowl. Add the cilantro, mangoes, lime juice and onions and season with salt and pepper. Serve immediately or store the salsa in the refrigerator in an airtight container for up to 3 days.

1 cup Jalapeno-Mango Salsa, recipe follows
1 lime, wedged
Cooked white rice, optional
2 tablespoons vegetable oil
2 whole jalapeno chiles
2 tablespoons chopped fresh cilantro
2 mangoes, peeled, pitted and diced
1 lime, juiced
1/4 large red onion, minced
Kosher salt and freshly ground black pepper

Steps:

  • Heat a grill pan on the stovetop over medium-high heat. Drizzle the fish on both sides with olive oil and sprinkle with salt and pepper. Place the fish onto the hot grill pan and cook until opaque in the center, about 5 minutes per side. Transfer to a plate. Top each piece of fish with 1/2 cup Jalapeno-Mango Salsa and serve with lime wedges. Accompany with white rice if desired.

20 large shrimp, peeled and deveined
1 large very ripe mango
2 jalapeno peppers
2 limes, juice of
1 small red onion
4 sprigs Thai basil
sea salt
fresh ground black pepper
sugar (optional)

Steps:

  • To remove the flesh from the pit using a sharp knife with the fruit standing on end cut down from just off center, filleting the flesh off in one large half.
  • Repeat on the other side. Remove the skin and cut the fruit into ¼ inch cubes, place in a bowl. There will be some remaining fruit left on the pit squeeze the juice out and catch it in the bowl.
  • Finely dice the Jalapeños seeds and all, set aside. Add as much Jalepeño as needed to achieve the right amount of heat for you. Remember that as it sits and the flavors mingle the spiciness will become more pronounced.
  • Juice the limes and add to mango.
  • Season salsa with a little salt, pepper and if needed a pinch of sugar.
  • Dice the red onion and soak in ice water for 10 minutes.
  • Drain and set aside.
  • Wash and pick basil leaves, dry and set aside.
  • Grill shrimp over moderately hot fire for a couple of minutes on each side until just done.
  • As the shrimp is cooking mix the red onion and basil leaves into salsa.
  • Spoon the salsa onto plates and arrange shrimp.

5 large jalapeños, stemmed
5 large garlic cloves, peeled
1 bunch cilantro stems, cut into 1-inch pieces (about 1 packed cup)
2 tablespoons rice vinegar
1/2 cup olive oil, plus more for cooking
1 tablespoon kosher salt (Diamond Crystal)
2 teaspoons granulated sugar
8 thin-cut, bone-in pork loin chops (1/2-inch thick)
1 large jalapeño, thinly sliced into rings
1 small red onion, thinly sliced into rings
1/3 cup rice vinegar
1 teaspoon kosher salt (Diamond Crystal)
2 tablespoons granulated sugar
Cilantro leaves and tender stems, for garnish
Cilantro rice or cooked white rice, for serving (optional)

Steps:

  • Make the pork chops: In a food processor, blitz the jalapeños, garlic, cilantro stems, rice vinegar, olive oil, salt and sugar until smooth. Place the pork chops in a large bowl or resealable container and pour the marinade over them; turn the chops to evenly coat. Cover and refrigerate for at least 30 minutes and up to 24 hours.
  • While the chops marinate, prepare a charcoal grill for direct high-heat cooking, or heat a gas grill to medium-high.
  • Make the relish: In a small bowl, toss the jalapeño, red onion, rice vinegar, salt, sugar and 2 tablespoons water. Set aside to quick-pickle until ready to serve, or refrigerate for up to 24 hours.
  • Carefully grease the grill grate: Use tongs to grip a wadded paper towel dipped in oil and then rub the grates with the oiled towel. With the marinade clinging to them, place the pork chops on the hot greased grate. Grill until the chops are charred at the edges and no longer pink in the middle, 2 to 3 minutes per side. The meat is ready to flip when it releases easily from the grates. (If using a gas grill, close the lid between flips.) Alternatively, cook the chops on the stovetop in batches. Heat a large skillet or grill pan over medium-high. Add enough oil to lightly coat the bottom of the pan, and heat until shimmering. Add the chops, with the marinade clinging to them, to the pan. Sear until browned and caramelized at the edges and no longer pink in the middle, 3 to 4 minutes per side. Discard any remaining marinade.
  • Serve the chops with the relish and cilantro on top. If you'd like, serve rice alongside.
