Salmon flavored with lemon, garlic, and dill, skewered with vegetables and grilled to perfection.

1 pound of salmon fillets (cut into 1-inch chunks)
1 red bell pepper (cored, seeded and cut into 1-inch chunks)
1 red onion (peeled, halved and cut into 1-inch chunks)
salt and pepper to taste
1 tablespoon olive oil + more to brush on grill
1 tablespoon lemon juice
1 tablespoon minced fresh dill + more for garnish
2 garlic cloves (minced)
For serving: lemon wedges (optional)

Steps:

  • In a small bowl, whisk together the tablespoon of olive oil with lemon juice, garlic, dill and salt, and pepper to taste. Pour the lemon mixture over the salmon cubes and marinate for 20 minutes.
  • Preheat a grill or grill pan over medium-high heat.
  • Place the salmon on skewers, alternating between the fish, bell peppers and onion. Season to taste with salt and pepper.
  • Lightly brush the grill with oil and place skewers on the grill. Cook for 3-4 minutes per side or until salmon is done and vegetables are crisp-tender.
  • Serve immediately, with lemon wedges and sprinkled with additional chopped dill.

1 pound fresh salmon filet
2 teaspoons olive oil
¼ teaspoon sea salt
¼ teaspoon black pepper
½ cup Daisy Brand Light Sour Cream
1 teaspoon dried dill weed
1 teaspoon fresh grated lemon zest
1 teaspoon honey
1 teaspoon Dijon mustard
1 tablespoon lemon juice
1 tablespoon capers, drained
1 garlic clove, minced

Steps:

  • 1.Spray a grill grate with cooking spray or brush with oil.
  • 2.Heat a gas or charcoal grill.
  • 3.Brush the top of the salmon with the olive oil; sprinkle with the salt and pepper.
  • 4.Grill over medium heat, skin side up, for 3 minutes.
  • 5.Using a broad spatula, turn the fish over; grill for 5 to 7 minutes or until the salmon flakes easily with a fork.
  • 6.Meanwhile, in a medium bowl, mix all of the remaining ingredients. Serve the sauce over salmon.

1 lemon (juiced)
1/4 cup grapeseed oil
2 large salmon fillets (skin on and 1 1/2 inches thick)
2 teaspoons sea salt
1/2 teaspoon coarse ground black pepper
1/2 teaspoon garlic powder
2 tablespoons chopped fresh dill (plus additional for garnish)

Steps:

  • Gather the ingredients.
  • Preheat grill to medium heat.
  • Combine lemon juice and grapeseed oil together in a bowl. Brush liberally onto salmon skin and then onto salmon flesh.
  • Make a rub mixture out of salt, black pepper, and garlic powder. Sprinkle onto salmon and then top with chopped dill.
  • Place salmon flesh-side down onto grill grate. Allow to cook for 2 to 3 minutes, and very carefully using a spatula, work fillets away, on all sides, from the grill grate.
  • Once free, gently turn fillets over. Close cover and allow fish to cook for 8 to 10 minutes, or until it reaches an internal temperature of 145 F to 150 F.
  • Remove fish from the grill and garnish with lemon slices and additional chopped dill.

4 centre cut salmon fillets
3 tablespoons chopped fresh dill
2 tablespoons extra virgin olive oil
1 teaspoon grated lemon rind
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 dash hot pepper sauce
1 lemon, cut into 8 wedges

Steps:

  • Remove and discard skin from salmon; cut into 1 1/2 inch cubes to make 24 pieces.
  • In large bowl, mix together dill, oil, lemon rind and juice, salt, pepper and hot pepper sauce. Add salmon and toss to coat; let stand for 10 minutes.
  • Reserving marinade and beginning and ending with lemon wedge, thread salmon loosely onto 4 metal skewers. Place on greased grill over medium heat; brush with marinade. Close lid and grill turning twice, until fish flakes easily when tested, about 10 minutes.

1 lb salmon fillet (remove skin)
1/4 cup soy sauce (I use low sodium)
1/4 cup honey
1 tablespoon rice vinegar
1 teaspoon gingerroot (minced)
1 garlic clove, minced
1/4 teaspoon fresh ground pepper
3 lemons (cut into 4 wedges)
12 skewers (soak in water if using wood skewers)

Steps:

  • Slice salmon lengthwise into 12 long strips and thread each onto a soaked wooden skewer. Place in shallow dish.
  • In a bowl, whisk together soy sauce, honey, rice vinegar, ginger, garlic and pepper. Pour over skewers and turn to coat. Let stand at room temperature 30 minutes.
  • Transfer marinade to small saucepan and simmer for several minutes.
  • Preheat outdoor or indoor grill to medium high heat. Lightly oil grill. Thread one lemon wedge onto the end of each skewer. Cook skewers on preheated grill for 4 minutes per side, brushing often with marinade.

1 1/2 lbs salmon fillets
1/4 cup packed brown sugar
1 chicken bouillon cube, mixed with
3 tablespoons water
3 tablespoons oil
3 tablespoons soy sauce
4 tablespoons finely chopped green onions
1 lemon, thinly sliced
2 slices onions, seperated into rings

Steps:

  • Sprinkle dill, pepper, salt and garlic powder over salmon.
  • Place in shallow glass pan.
  • Mix sugar, chicken boullion, oil, soy sauce, and green onions.
  • Pour over salmon.
  • Cover and chill for 1 hour, turn once.
  • Drain and discard marinade.
  • Put on grill on med heat, place lemon and onion on top.
  • Cover and cook for 15 minutes, or until fish is done.

two 10-inch bamboo or metal skewers
a 10-ounce piece center-cut salmon fillet, skinned
1 medium zucchini
1/4 cup dry white wine
2 tablespoons olive oil
1 tablespoon chopped fresh dill leaves
1 teaspoon minced garlic
6 vine-ripened cherry tomatoes

Steps:

  • Prepare grill. If using bamboo skewers soak in warm water 15 minutes.
  • Pat salmon dry and cut into 8 cubes. Cut zucchini into 3/4-inch-thick rounds. In a bowl stir together wine, oil, dill, and garlic. Add salmon, zucchini, and tomatoes, tossing to coat, and let stand, covered, at room temperature 15 minutes.
  • Alternately thread salmon, zucchini, and tomatoes onto skewers and season with salt and pepper. Grill kebabs on an oiled rack set 5 to 6 inches over glowing coals, turning kebabs, until salmon is just cooked through, 6 to 8 minutes. (Alternatively, kebabs may be broiled under a preheated broiler 3 to 4 inches from heat.)

4 center-cut salmon steaks, 3/4-1-inch thick
2 whole lemons
fresh dill sprig
1 1/2 tablespoons butter
1 1/2 teaspoons cornstarch
1/2 cup cold water
1/3 cup fresh lemon juice
1 tablespoon snipped fresh dill
1/4 teaspoon salt
1/8 teaspoon dried chervil, can sub parsley (optional)
1 dash cayenne pepper (optional)
3 slices lemons, unpeeled and cut into quarters

Steps:

  • In small saucepan, melt butter over medium high heat, remove from heat when melted.
  • Combine cornstarch with water and stir into butter.
  • Add rest of sauce ingredients except lemon slice quarters.
  • Bring sauce to a boil over medium heat stirring constantly.
  • Cook, stirring, until sauce thickens and turns clear.
  • Remove from heat and add lemon slice quarters.
  • Cover and set aside.
  • (Makes about 2/3 cup, so you can double this if desired.).
  • For salmon:.
  • Cut off ends of each whole lemon, then cut each lemon into 2 one inch thick slices.
  • Lay salmon steaks flat and put one slice into the opening at each end of each salmon steak.
  • Using toothpicks, secure salmon around and to the lemon slices.
  • Position grill rack about 6-8" above hot coals.
  • Arrange salmon steaks on grill and cook 5-7 minutes.
  • Turn steaks over carefully and cook an additional 5-7 minutes or to desired doneness.
  • Fish should flake easily with a fork.
  • Remove from grill and place on heated serving platter.
  • Garnish steaks with fresh dill sprigs.
  • Spoon a bit of the hot lemon-dill sauce over each steak.
  • Serve the rest of the sauce separately for dipping.
  • Remind guests to remove the toothpicks! ;).
