This fresh pineapple salsa recipe will be a big hit at your next party! It's a little sweet, a little spicy, and 100% delicious. It's easy to make, too. Recipe yields 3 1/2 cups; double it if you're serving a crowd (1 extra-large pineapple should be just right).

3 cups diced fresh pineapple (about 1 medium)
1 red bell pepper, chopped
1/2 cup chopped red onion (about 1/2 small onion)
1/4 cup chopped fresh cilantro
1 medium jalapeño*, seeds and ribs removed, finely chopped
3 tablespoons lime juice (from about 1 1/2 limes), or more if needed
1/4 teaspoon fine sea salt

Steps:

  • In a medium serving bowl, combine the pineapple, bell pepper, onion, cilantro, and jalapeño. Add the lime juice and salt, and stir to combine.
  • Season to taste with additional lime juice (for zing) and/or salt (for more overall flavor) if it doesn't taste amazing just yet.
  • For best flavor, let the pico de gallo rest for 10 minutes or longer before serving. It's best served fresh but keeps well, chilled, for up to 4 days.

2 pounds medium tomatillos (about 16), husks removed and halved
2 large sweet onions, coarsely chopped (about 4 cups)
2 serrano peppers, seeded and chopped
6 garlic cloves, peeled and halved
1/4 cup olive oil
1/3 to 1/2 cup water
1/2 cup chopped fresh cilantro
2 tablespoons lime juice
1 teaspoon salt

Steps:

  • Preheat oven to 425°. In a large bowl, toss tomatillos, onions, peppers and garlic with oil. Divide mixture between two 15x10x1-in. baking pans. Roast 35-40 minutes or until lightly browned, stirring occasionally. Cool slightly., Process tomatillo mixture in a food processor until smooth, adding enough water to reach desired consistency. Add remaining ingredients; pulse just until combined. Freeze option: Freeze cooled salsa in freezer containers. To use, thaw completely in refrigerator.

1/2 medium white onion
1 jalapeño pepper (seeded)
1 - 2 cloves garlic
3 cups cherry tomatoes
1/2 cup loosely packed fresh Cilantro leaves (optional)
1/2 large lime
1/2 teaspoon sea salt
1/4 teaspoon coarse ground black pepper

Steps:

  • Roughly chop the onion and add to the bowl of a food processor or mini chopper along with the jalapeño pepper, and garlic cloves. Pulse until the contents are finely diced.
  • Add the cherry tomatoes and pulse until the salsa is the consistency you desire - I like mine a bit chunky.
  • If using, add the cilantro and pulse one or two more times.
  • Strain the salsa through a mesh strainer to remove the excess juices.
  • Add the salsa to a bowl and add the lime, salt, and black pepper. Taste and adjust the amount of lime and salt to your liking.
  • Serve immediately (or chill first if you prefer) with tortilla chips.

Steps:

  • To dice pineapple, using a sharp chef's knife, cut off both ends, stand it upright and remove skin going 1/2 inch deep. Slice in half lengthwise and using a paring knife, remove middle core. Slice into 1 inch thick plates lengthwise and then dice.

  • In a large skillet, heat the water over medium heat, and add the TVP, stirring well. Allow the TVP to reconstitute for 2-3 minutes.
  • Add oil and soy sauce, then peppers and taco seasoning, stirring well.
  • Allow to cook for another 3-5 minutes, stirring frequently. Mix in salsa and remove from heat.

This is a salsa developed because I hate to can and my husband insists on planting at least 100 tomato plants each year. It lasts about a year in the freezer. Last year we ran out at Christmas. Update, I taught my husband how to make and can salsa so we are canning now, probably better. We also have added the limes and some habaneros to taste for the hotter salsa.

20 lbs tomatoes
2 cups fresh cilantro
2 large onions
10 garlic cloves
10 medium jalapenos (medium salsa)
6 habanero peppers, to taste

1/4 cup sea salt
1/4 cup vinegar
6 large limes, juice of

Steps:

  • Peel and chop tomatoes in a food processor (part until they are liquid and part bigger pieces).
  • Chop cilantro ,onion ,garlic and add to tomatoes.
  • Chop jalepenos with seeds and put in to 10 quart stock pot.
  • Add cumin, salt and vinegar and stir all together.
  • Bring to a boil and lower temperature to keep at a low boil for 2-3 hours.
  • Boil down to about half to get rid of all the extra tomato water.
  • I use 3 cup reusable plastic containers.
  • Fill and leave 1/2 inch head space let cool to avoid condensation and ice on top of salsa.
  • Place lids on and freeze.
