1/2 cup unpopped popcorn
1/4 cup white sugar
1/4 cup vegetable oil
1/4 teaspoon seasoning salt (or use white salt) (optional)

Steps:

  • Place the oil in the bottom of a large pot.
  • Add in the unpopped popcorn kernels with the sugar and salt.
  • Over a medium heat begin to pop the popcorn, constantly shaking the pot to ensure that the popcorn kernels and oil do not burn.
  • Once the popping has slowed down remove the pot from the heat.

this is the best way we like to have corn on the cob. the corn finishes cooking in the butter and seasoning, instead of adding them afterwards. it's also really easy to prepare as a side dish at a bbq, since you can do all the prep. ahead of time, and then just place them on the grill. we use greek seasoning, but i have used a variety of spices, be adventurous!

4 ears corn on the cob (the frozen kind, if you want to use fresh, pre-boil until done)
butter, set out until softened
garlic powder
salt
pepper
all purpose Greek seasoning

Steps:

  • light grill, you want a medium fire.
  • thaw corn.
  • cut approx 6 inches sheets of aluminum foil.
  • coat ears of corn with softened butter.
  • shake seasoning on each ear of corn.
  • wrap each ear of corn in a foil sheet.
  • place on grill, and grill for approximately 30-45 minutes over indirect heat.

  • Mix 2 tablespoons each softened butter and olive oil with the grated zest of 1 lemon, 1 teaspoon pepper and 1/2 teaspoon kosher salt. Quarter 3 ears corn; arrange on a large sheet of foil and dollop with the butter. Form into a packet; flip and wrap again in foil. Grill over medium-high heat, turning occasionally, until tender, 20 to 25 minutes.

1 ear corn, shucked
Vegetable oil, for brushing the corn
Kosher salt
3/4 teaspoon chipotle chile powder
1/4 teaspoon ground coriander
1 bunch scallions, trimmed
2 plum tomatoes
3 ripe avocados
1/4 cup coarsely chopped fresh cilantro leaves
2 jalapenos, finely chopped (remove seeds for less heat)
Juice of 1 lime
Corn tortilla chips, for serving

Steps:

  • Prepare a grill for medium heat. Lightly brush the corn with oil and sprinkle with 1/2 teaspoon salt, 1/4 teaspoon of the chipotle powder and 1/8 teaspoon of the coriander. Grill the corn, scallions and tomatoes until the vegetables are all slightly charred, 5 to 7 minutes. Transfer to a cutting board and let cool.
  • Halve and pit the avocados. Scoop out the insides, put in a large bowl and mash with a fork until slightly chunky. Coarsely chop the scallions and tomatoes and cut the kernels off the corn cob. Add the vegetables to the bowl along with the cilantro, jalapeno, lime juice and the remaining 1/2 teaspoon chipotle and 1/8 teaspoon coriander. Stir to combine and season with salt. Serve with tortilla chips.

Jade and I love to snack on popcorn! This sweet-and-salty twist comes together just as quickly as regular popcorn and packages really nicely for cute holiday gifts, if Jade and I can stop eating it.

1 1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
3 tablespoons coconut oil or vegetable oil
1/2 cup popcorn kernels
1/4 cup sugar

Steps:

  • Line a rimmed baking sheet with parchment paper. In a small bowl, mix together the salt and cinnamon. Set aside.
  • Heat a large Dutch oven, covered, over medium-high heat for 2 to 3 minutes. Add the coconut oil and heat 30 seconds. To check if the Dutch oven is hot enough, add one or two popcorn kernels to the pan and cover with the lid. Cook until you hear the kernels pop, 1 to 2 minutes.
  • Add the remaining kernels and the sugar, stir to combine and cover. Shake the pan vigorously to coat the kernels in the sugar and oil. Cook, shaking the pan often, until the popping has slowed to about 2 pops per second, about 2 minutes.
  • Remove the Dutch oven from the heat and carefully uncover. Pour the mixture onto the prepared pan and sprinkle with the cinnamon salt. Be careful: the popcorn is extremely hot at this point. Allow the kettle corn to cool for 5 minutes before enjoying.

2 Tbs. vegetable oil
2 Tbs. butter
1/2 cup raw popcorn kernels
1/4 cup sugar
1/2 tsp. cayenne pepper
1 tsp. salt

Steps:

  • Preheat grill if using. Place a large cast iron skillet on grill with vegetable oil in it. Heat until almost smoking. Pour in remaining ingredients and cover skillet. Shake skillet gently while wearing an oven mitt, constantly while corn pops. Remove from heat and pour into a large bowl. Don't let it go too long in between pops or the sugar and butter will burn. It's better to have some "old maids" than burnt popcorn.
