Endive Salad with Candied Walnuts, Orange Caramel Dressing and Blue Cheese image

You can use a lot of oranges for this recipe: Minneolas, tangerines, navels. You can also use tangerines if you prefer - whatever looks best at the supermarket. This is fun because you candy the nuts and clean the caramel off the pan by using it to make a tasty dressing. The sweetness is so good with the walnuts and bitter greens. Use endive, chicory, escarole, radicchio or whatever other bitter greens are good. Want to be dairy-free? Simply omit the blue cheese.

3/4 cup walnut halves
Kosher salt or flaky sea salt
Freshly ground black pepper
Nonstick cooking spray
1/3 cup sugar
2 tablespoons red wine vinegar
2 large oranges, 1 juiced (about 1/4 cup) and 1 peeled and supremed
2 tablespoons Dijon mustard
1 to 2 tablespoons extra-virgin olive oil
2 large yellow endives, leaves separated
1 small head radicchio, leaves separated
3/4 cup blue cheese crumbles
10 to 12 sprigs flat-leaf parsley, stemmed

Steps:

  • Preheat the oven to 350 degrees F.
  • Arrange the walnuts on a single layer on a rimmed baking sheet and place in the center of the oven. Toast until the nuts are golden brown, really toasted, 5 to 8 minutes. Sprinkle with salt and pepper and set aside.
  • Spray a parchment paper-lined baking sheet with nonstick spray. In a large saute pan, heat the sugar over medium heat until it melts and turns a light amber color, 5 to 8 minutes. Sprinkle the walnuts in a single layer over the caramel. Spray a rubber spatula with nonstick spray and stir the nuts, quickly but carefully, to coat with the caramel. Transfer the nuts from the pan onto the prepared baking sheet, sprinkling the nuts so they separate as they land on the parchment. Season with salt.
  • To the pan with the residual caramel, add the vinegar and orange juice. Warm the pan, whisking until the caramel, vinegar and orange juice are well combined. Remove from the heat. Whisk in the mustard and oil. Adjust the seasoning.
  • Arrange the endive and radicchio leaves in a single layer on a family-style large platter. Intersperse the orange segments and walnuts with the endive and radicchio. Season with salt to taste. Drizzle with all of the dressing. Top with the blue cheese and parsley. Serve immediately.

SALMON WITH POTATOES AND HERB SALAD



Salmon with Potatoes and Herb Salad image

This salmon dish is great for Easter or Passover. "Oven-roasting salmon mutes the fishier notes - plus it makes the dish easier to manage," says Alex.

1 pound medium red bliss potatoes
1/4 cup extra-virgin olive oil
Kosher salt
1 tablespoon red wine vinegar
2 tablespoons extra-virgin olive oil
4 6- to 7-ounce salmon fillets, skin on
1 tablespoon unsalted butter, cut into small pieces
Kosher salt
1/2 teaspoon cayenne pepper
Juice of 1 large lemon
10 sprigs flat-leaf parsley, stemmed
6 sprigs tarragon, stemmed
1/2 cup arugula
2 to 3 small red radishes, thinly sliced

Steps:

  • Make the potatoes: Preheat the oven to 350 degrees F. Toss the potatoes with 1 tablespoon olive oil and a generous pinch of salt. Arrange on a baking sheet; bake 35 to 40 minutes, or until tender when pierced with the tip of a knife. Remove and let cool.
  • Increase the oven temperature to 375 degrees F. In a cast-iron skillet, heat the remaining 3 tablespoons olive oil over medium heat until hot. On a flat surface, smash and break the potatoes with the back of a wooden spoon. Season with salt. Add to the skillet and cook until browned (do not stir them!), 4 to 5 minutes. Flip the potatoes and cook 3 to 5 additional minutes. Season with salt and sprinkle with the red wine vinegar.
  • Meanwhile, make the salmon: Line a rimmed baking sheet with foil; drizzle with 1 tablespoon olive oil. Arrange the salmon skin-side down on the baking sheet. Dot with the butter and drizzle with the remaining 1 tablespoon olive oil. Season thoroughly with salt. Use a fine-mesh strainer to sprinkle the cayenne over the fish. Bake, undisturbed, 6 to 8 minutes. (For well-done, bake an additional 5 minutes.) Remove from the oven.
  • Make the salad: Toss the parsley, tarragon, arugula and radishes. Serve the salmon and potatoes with the herb salad. Squeeze the lemon juice over the fish.

This salad is great with any herbs and lettuces you can find at your local market or supermarket. For me, my version of this salad uses Romaine and basil as its "backbone". The flavors are simple; just make sure your lettuce is dry so water doesn't dilute the taste.

3 cloves garlic, peeled
1 teaspoon kosher salt
2 eggs
1 tablespoon fresh lemon juice
1 tablespoon caper juice
1 tablespoon Worcestershire Sauce
1/2 teaspoon hot sauce (recommended: Tabasco)
4 ounces canned tuna
3/4 cup olive oil, divided
4 tablespoons unsalted butter
1 cup cubed sourdough bread
Kosher salt
2 teaspoons paprika
2 teaspoons dry (or fresh) oregano
3 ounces Parmesan, grated
1 head Romaine, cleaned of any outer leaves, quartered lengthwise, washed and dried
1 small head red or green leaf lettuce, leaves separated, washed and dried
1/4 cup fresh basil leaves, stemmed, washed and dried

Steps:

  • For the dressing: Use a mortar and pestle to grind the garlic cloves and the salt to a paste. (This dressing can also be made in the blender or food processor.) Bring a small pot of water to a boil and add the eggs. Cook for 2 1/2 minutes and remove from the water. Meanwhile, transfer the garlic to a bowl and whisk in the lemon juice, caper juice, Worcestershire, hot sauce and tuna. Peel and add the eggs and 1/2 cup olive oil and whisk until smooth. Taste for seasoning. Set aside.
  • For the croutons: Heat a large skillet over medium heat. When it begins to smoke lightly, add the butter. Add the bread and season with salt and paprika. Toss and cook over medium to low heat until they become brown and feel crispy to the touch, 5 to 8 minutes. Season with salt and the oregano. Drain on paper towels. Sprinkle with some of the grated Parmesan.
  • To serve: In a large bowl, toss the lettuces in the dressing. Toss in the croutons, basil leaves and the remaining Parmesan. Serve immediately.

4 slices Swiss cheese
8 slices thinly sliced cooked ham
1 (8 ounce) can crushed pineapple, drained

Steps:

  • Heat a large skillet over medium-high heat. Spread butter onto one side of each slice of bread. Place up to 4 of the slices of bread, butter side down in the skillet. Top each piece with one slice of cheese, two slices of ham, and about 2 tablespoons of the crushed pineapple. Place remaining slices of bread on top with the butter side up. When the bottom of the sandwich is golden brown, flip sandwiches, and cook until browned on the other side, about 1 minute. Repeat steps with remaining ingredients if all four sandwiches do not fit in your skillet.
