GRILLED HALIBUT IN SOY-GINGER MARINADE



Grilled Halibut in Soy-Ginger Marinade image

Halibut is a good, firm fish for grilling, but if you aren't ready to fire up the grill, it can also be cooked in the broiler (which is essentially an upside-down grill).

Number Of Ingredients 7

1/4 cup reduced-sodium soy sauce (or use any variety) (use wheat/gluten-free, if needed)
1/4 tsp. ground ginger (or 1 tsp. minced fresh)
1 Tbsp. brown sugar
1 clove garlic (minced, about 1/2 tsp.)
1/2 tsp. dry mustard
1/2 lemon (juice only, about 2 Tbsp.)
1 1/2 - 2 lbs. halibut fillets (preferably Alaskan halibut), or other thick white fish or boneless chicken

Steps:

  • To make the marinade, in a small bowl or measuring cup whisk together all the ingredients except the fish. Put the halibut in a small, flat dish with sides, just large enough to hold the fish.
  • Pour the marinade over the fillets, and flip the fish several times to coat it. Cover the dish and refrigerate it for at least 30 minutes, and up to 12 hours.
  • Preheat the grill (or broiler) to medium-high heat.
  • Remove the fish from the marinade, reserving the marinade, and put the halibut on a fish or vegetable grilling tray, if you have one, or on a piece of heavy-duty aluminum foil on the grill.
  • Close the grill and cook the fish for 5 - 7 minutes per side, until it flakes easily and is opaque. Baste the fish with the reserved marinade after you flip it, and discard any extra marinade. (Alternatively, cook the fish in a preheated broiler for 10 - 12 minutes, flipping and basting once.)

3 tablespoons dry white wine
3 tablespoons fresh lemon juice
3 tablespoons olive oil
1 tablespoon chopped rosemary
Four halibut steaks, (6 ounces each)
Salt and freshly ground pepper

Steps:

  • Whisk together the wine, lemon juice, olive oil and rosemary in a small shallow baking dish. Add the halibut and turn to coat. Marinate in the refrigerator for 1 hour, turning once. Preheat grill. Remove fish from marinade and season with salt and pepper to taste. Grill the steaks for 3 to 4 minutes on each side or to desired doneness.

1 lb halibut steaks (may use cod, sea bass or other firm white fish
2 Tbsp butter
2 Tbsp honey or brown sugar
1 Tbsp fresh lemon juice
1 Tbsp soy sauce
1 tsp dijon style mustard
1/4 tsp minced fresh ginger
2 clove garlic
1/2 tsp fresh chopped chervil or other herb of your choice
salt and pepper to taste

Steps:

  • 1. In small saucepan, combine all ingredients, except the halibut. Over medium heat, mix until sugar is dissolved.
  • 2. Put Halibut in a non metalic pan or ziplock bag, pour marinade over fish. Marinate in fridge for about 30 mins. I make a double batch of marinade and seperate, one batch for marinating and one batch for basting.
  • 3. Oil grill grate and preheat grill. Place halibut steaks on grill and cook on each side for about 5 minutes, basting with marinade while fish is cooking.
  • 4. Grill until done, halibut should be opaque through to the middle and flake easily with a fork. Discard extra marinade that has had contact with the raw fish.
  • 5. Notes: Instead of mincing the garlic and ginger, I like to grate it. Seems the grating brings more flavor. I never add the salt I have never added the herbs I have made this with the honey or the brown sugar, very little taste difference. Actually, I used Splenda brown sugar. I have used the grill, oven broiler and grill pan on top of the stove to cook the fish for this recipe. They all work fine.

2 tablespoons brown sugar
2 garlic cloves, minced
1 tablespoon lemon juice
2 teaspoons soy sauce
1/2 teaspoon ground black pepper
1 (1 lb) halibut steaks

Steps:

  • Preheat grill for medium-high heat.
  • Place butter, brown sugar, garlic, lemon juice, soy sauce, and pepper in a small saucepan.
  • Warm over medium heat, stirring occasionally, until sugar is completely dissolved.
  • Lightly oil grill grate.
  • Brush fish with brown sugar sauce, and place on grill.
  • Cook for 5 minutes per side, or until fish can be easily flaked with a fork, basting with sauce.
  • Discard remaining basting sauce.
  • For extra sauce on the side, I usually double recipe for the sauce, and reserve some in a separate dish prior to basting the fish.

1/4 cup olive oil
3 garlic cloves, minced
2 tablespoons lemon juice

Steps:

  • Combine olive oil, garlic, lemon juice, parsley, oregano, salt and pepper in a zip lock bag. Mix the marinade and add halibut and refrigerate for 1 hour. Preheat grill.
  • Remove halibut from bag and place on hot very WELL OILED grill.
  • Grill for 4 to 5 minutes per side.
  • Place fish and don`t move for 4 minutes or it will fall apart.
  • Fish is done when it flakes easily with a fork and is opaque all the way through.

2 tablespoons reduced-sodium soy sauce
1 tablespoon minced fresh parsley

Steps:

1 green bell pepper, seeded and cut lengthwise into long, thin strips

1 medium onion, thinly sliced
1 tablespoon grated fresh ginger
2 teaspoons soy sauce

Steps:

  • 1. Preheat the oven to 425°F.
  • 2. Put the fish in a baking dish and top with the bell peppers, onion, ginger, and soy sauce. Drizzle the orange juice over the fish and sprinkle the zest evenly over it; cover the dish tightly with parchment paper. Bake for 15 minutes, or until the fish is cooked through.
  • 3. Using two large spatulas, transfer the fish to a serving platter, pour the juices from the baking dish over the top, and garnish with the scallions.

1/2 cup dry white wine
1/2 cup fish stock or 1/2 cup clam juice
2 tablespoons rice vinegar

1/2 cup cilantro leaf
1 teaspoon finely grated lime zest
1 tablespoon lime juice
1/4 cup unsalted butter
1 pinch crushed red pepper flakes

Steps:

  • To prepare the marinade: Combine soy sauce, sesame oil, ginger, garlic and pepper flakes.
  • Place fish in a glass dish and add marinade.
  • Marinate in refrigerator 2 hours, turning fish over after 1 hour.
  • To prepare the sauce: In a medium saucepan combine the wine, stock or juice and vinegar.
  • Boil until syrupy. You will have no more than a few tablespoons left.
  • Set aside.
  • In a food processor combine the garlic, ginger, cilantro, lime zest and juice, butter, red pepper flakes, salt and pepper; process until smooth.
  • Set aside.
  • Remove the fish from the marinade, scraping off the ginger and garlic and discarding any leftover marinade.
  • Place in a baking pan or on a broiling pan and bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until done.
  • To finish sauce: Reheat wine reduction over medium heat.
  • Slowly add pieces of cilantro butter, whisking until sauce is lightly thickened. Do not boil.
  • Pour the sauce over the fish and serve.

In a small bowl, mix the soy sauce with the rice vinegar, mirin, grapeseed and sesame oils, scallions and ginger. In a large, shallow dish, brush the halibut fillets with half of the soy-ginger dressing. Cover and refrigerate for 30 minutes.
  • Preheat the oven to 450°. Transfer the halibut to a large, rimmed baking sheet and season with pepper. Bake the fish in the upper third of the oven for 10 to 12 minutes, or until glazed and just cooked through.
  • Spoon the rice into shallow bowls. Set the halibut fillets on top and spoon the spinach alongside. Pour the remaining dressing over the fish, sprinkle with the toasted sesame seeds and serve.
