1 cup rice, regular or instant
Cooking spray
3/4 cup grapefruit juice
1/4 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon brown sugar
1 teaspoon chili powder
1 teaspoon ground cumin
1 tablespoon olive oil
1 teaspoon liquid smoke
3 pounds large or jumbo shrimp, peeled and deveined
1/4 cup scallions, chopped

Steps:

  • Cook rice according to package directions.
  • Over medium high heat, with cooking spray, heat a stove-top grill pan or griddle.
  • In a shallow dish, whisk together grapefruit juice, ketchup, mustard, sugar, chili powder, cumin, olive oil and liquid smoke. Add shrimp and toss to coat. Place shrimp on the grill and cook 2 minutes per side, or until bright pink and cooked through. Serve half of the shrimp over the rice and top with scallions. Reserve the remaining shrimp for po' boy sandwiches, if desired.

1 tbsp olive oil
2 tbsp lemon juice
6 cloves garlic, minced
1 tbsp fresh chopped parsley (or 1 tsp dried)
2 tsp dijon mustard
1 tsp lemon zest
1 tsp salt
1/2 tsp pepper
1/2 tsp chili flakes
1/2 tsp dried basil
Roasted or grilled potatoes
Oven fries or potato wedges
Steamed, sauteed or roasted vegetables (I love asparagus or broccoli)
Salad
Garlic bread
Soup
Rice
Pasta

Steps:

  • Mix all ingredients for marinade together then marinate shrimp in a medium-sized bowl for 15 minutes.
  • GRILLING METHOD: Preheat BBQ to 425 F. Add shrimp to skewers, then place on a baking sheet. Drizzle some extra marinade overtop then discard remaining marinade. Grill shrimp for 2 minutes per side until pink and fully cooked. Serve and enjoy!
  • STOVETOP METHOD: Add 1 tbsp butter or olive oil to a large skillet over med-high heat (I recommend butter for better flavour). Add shrimp along with marinade to skillet, sauteeing for 3-4 minutes or until shrimp are pink and no longer translucent. Serve and enjoy!
  • BROILER METHOD: Set oven to broil on high. Add shrimp to skewers, then place on a parchment-lined baking sheet. Drizzle some extra marinade overtop then discard remaining marinade. Broil shrimp for 1-2 minutes per side (watching closely) until pink and fully cooked. Serve and enjoy!

¼ cup lemon juice (freshly squeezed*)
3 tablespoons honey
3 cloves of garlic (minced)
1 teaspoon paprika
Pinch of crushed red pepper flakes (optional)
2 tablespoons chopped Italian parsley
1 teaspoon kosher salt
½ teaspoon black pepper
1 lb. shrimp (16-20 or 21-25 count, peeled and deveined)

Steps:

  • Place olive oil, lemon zest, lemon juice, honey, garlic, paprika, red pepper flakes, parsley salt, and pepper in a bowl. Give it a whisk until fully combined.
  • Reserve one tablespoon of the marinade.
  • Add the shrimp into the bowl and toss to coat. Cover it with plastic wrap and refrigerate for 30 minutes*.
  • To cook, you can grill or saute shrimp for 2-3 minutes on each side or until pink.

1 lemon, juiced
2 tablespoons hot pepper sauce
3 cloves garlic, minced
1 tablespoon tomato paste
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground black pepper
2 pounds large shrimp, peeled and deveined with tails attached
6 each skewers

Steps:

  • In a mixing bowl, mix together olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper. Reserve a small amount for basting later. Pour remaining marinade into a large resealable plastic bag with shrimp. Seal, and marinate in the refrigerator for 2 hours.
  • Preheat grill for medium-low heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp for 5 minutes per side, or until opaque, basting frequently with reserved marinade.

1 1/2 Tbsp. Worcestershire sauce
1 Tbsp. yellow mustard
1/2 tsp. kosher salt

1 clove garlic, finely minced
1 lb. 41/50 shrimp, raw, peeled and deveined

Steps:

  • In a bowl, whisk together the olive oil, vinegar, Worcestershire sauce, mustard, salt, pepper and garlic. Pour into a zip top bag. Add shrimp, seal and shake around to ensure the shrimp is coated. Marinate in the refrigerator for an hour.
  • Preheat a grill or grill pan over medium heat. Grill shrimp for 2 minutes per side. Note: If you are using an outdoor grill, it would be helpful if you put the shrimp on skewers to keep them from falling down the grates.

2 1/2 pounds shrimp, peeled and deveined with tail on
1/2 cup extra virgin olive oil
1/2 teaspoon minced garlic
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh oregano
3 large pink grapefruit
1/4 cup super fine sugar
1/2 cup pink grapefruit juice
1/2 cup heavy cream
1/2 pound unsalted sweet butter
8 bunchs masche or watercress
Salt and pepper to taste

Steps:

  • Marinate the shrimp with the olive oil, garlic, thyme, oregano, for at least an hour up to 24. Peel the grapefruit and cut into segments, lay out on a small sheet pan and top lightly with super fine sugar. Place grapefruit under broiler and cook until golden. In a saucepan, over medium high heat, reduce the grapefruit juice by 3/4's, add the heavy cream and reduce until thick. Remove from the heat and slowly add the butter, constantly whisking and finish with salt and pepper to taste. Grill the shrimp on an open flame, or in a grill pan until done. Plate shrimp (3 per person); alternate with grapefruit segments on the plate. Place masche or watercress in the center of the plate. Drizzle the grapefruit sauce over and serve.

12 jumbo shrimp, cleaned and split lengthwise
3 whole grapefruits
1/2 cup olive oil
3/4 cup cilantro, chopped
3 jalapeno peppers, chopped with seeds
6 scallions, chopped
1 cup extra-dry vermouth
salt and pepper

Steps:

  • Submerge the zests of the grapefruit in olive oil and heat up to 160 degrees for five minutes.
  • Put oil and remaining ingredients in a shallow glass dish and submerge shrimp in it. Cover with plastic and refrigerate. Marinate shrimp for at least 3 hours so flavors can penetrate. Remove shrimp from marinade and place on a paper towel before grilling.
  • Grill for 1 1/2 minutes on each side over hot coals.
  • Season with salt and pepper if desired.
