1-1/2 cups graham cracker crumbs
3/4 cup sugar, divided
6 Tbsp. butter, melted
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1/4 cup milk
2 cups thawed COOL WHIP Whipped Topping, divided
2 cups boiling water
2 pkg. (3 oz. each) JELL-O Strawberry Flavor Gelatin
1-1/2 cups cold water
2-1/2 cups mixed berries (blueberries, raspberries and sliced strawberries), divided

Steps:

  • Mix crumbs, 1/4 cup sugar and butter in 13x9-inch pan; press onto bottom of pan.
  • Beat cream cheese, remaining sugar and milk in medium bowl with mixer until blended. Add 1 cup COOL WHIP; mix well. Carefully spread over crust. Refrigerate until ready to use.
  • Meanwhile, add boiling water to gelatin mixes in large bowl; stir 2 min. until completely dissolved. Stir in cold water. Refrigerate 30 min. or until slightly thickened.
  • Add 1-1/2 cups berries to gelatin; stir. Pour over cream cheese layer. Refrigerate 3 hours or until firm. Top with remaining COOL WHIP and berries just before serving.

I found this recipe in an old Taste of Home magazine. I don't recall who submitted the recipe, but I tried it today, and it was delicious. I did make a 2 changes.....I added a little more sugar when I cooked the rhubarb along with a few drops of red food coloring to make it "prettier". I also used Cool Whip instead of whipping my own cream. I especially love the first layer (crust) which I could have eaten all alone !!

2 cups flour, all-purpose
1 cup pecans, chopped
1 cup butter, melted
1/4 cup sugar
1 cup brown sugar, packed
3 tablespoons cornstarch
5 cups fresh rhubarb (can also use frozen)
1 cup fresh strawberries, sliced
1 (8 ounce) package cream cheese, softened
1 cup confectioners' sugar
1 1/4 cups heavy whipping cream, whipped and divided
brown sugar (optional for garnish)

Steps:

  • In a small bowl, combine the flour, pecans, butter, and sugar.
  • Press into a greased 13"x9"x2" baking dish.
  • Bake at 350 degrees for 18-20 minutes or until golden brown. Cool on a wire rack.
  • Topping: In a large saucepan, combine brown sugar and cornstarch.Stir in rhubarb until combined. Bring to a boil, stirring often. Reduce heat and cook until thickened and the rhubarb is tender. (This is where I also add a few drops of red food coloring to "pep it up" a bit) When done, remove from heat and cool. When cool, stir in the sliced strawberries.
  • Filling: In a small mixing bowl , beat cream cheese and confectioners sugar until smooth.Fold in 1 cup of whipped cream.
  • Spread the filling over the cooled crust, top with the cooled rhubarb mixture. Spread the remaining whipped cream on top of the rhubarb layer.
  • Garnish with some additional brown sugar ( I also added some extra sliced strawberries as garnish).
  • Refrigerate for 3-4 hours before serving.

6 tablespoons sugar
10 tablespoons butter, melted
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
2 cartons (one 16 ounces, one 8 ounces) frozen whipped topping, thawed, divided
1 package (3 ounces) strawberry gelatin
1/2 cup boiling water
1 cup strawberry yogurt
TOPPING:
2 tablespoons graham cracker crumbs
1-1/2 teaspoons sugar
1-1/2 teaspoons butter, melted

Steps:

  • In a large bowl, combine the cracker crumbs, sugar and butter. Press into an ungreased 13-in. x 9-in. dish. Refrigerate for 15 minutes. , Meanwhile, in a small bowl, beat cream cheese and confectioners' sugar until smooth. Stir in 1 cup whipped topping. Spread over the prepared crust., In a large bowl, dissolve gelatin in boiling water. Stir in yogurt and 6 cups of whipped topping until blended. Pour over cream cheese layer. Refrigerate for 1 hour. , Spread remaining whipped topping over strawberry layer. Cover and refrigerate overnight. Just before serving, combine topping ingredients; sprinkle over whipped topping.

1 purchased angel food cake
1 (8 ounce) package cream cheese
3/4 cup powdered sugar
1 (8 ounce) container whipped topping
1 (3 ounce) package strawberry Jell-O gelatin dessert
1/2 cup sugar
1 cup water or 1 cup strawberry juice, divided
4 tablespoons cornstarch
4 cups sliced strawberries

Steps:

  • Tear angel food cake into chunks and layer in bottom of 9x13-inch glass baking dish.
  • In a medium bowl, mix together cream cheese and powdered sugar.
  • Fold in whipped topping.
  • Spread over chunks of angel food cake to form 2nd layer.
  • In a small saucepan, combine Jello, sugar and 1/2 cup water or strawberry juice.
  • Dissolve cornstarch in remaining water; stir into gelatin mixture.
  • Cook over medium heat until thickened.
  • Stir in strawberries to coat all slices; cool.
  • Spread on top of cream layer.

3/4 cup sugar
1/2 cup sour cream
3 cups fresh strawberries, mashed
1 cup whipped topping
BLUEBERRY SAUCE:
1 package (12 ounces) frozen unsweetened blueberries
1/3 cup sugar
1/4 cup water

Steps:

  • Line a 9x5-in. loaf pan with a double thickness of foil; set aside. In a large bowl, beat the cream cheese, sugar and sour cream until smooth. Fold in strawberries and whipped topping. Pour into prepared pan. Cover and freeze for several hours or overnight., In a small saucepan, bring the blueberries, sugar and water to a boil; cook and stir for 3 minutes. Cool slightly. Transfer to a blender; cover and process until pureed. Refrigerate until chilled., Remove dessert from the freezer 15-20 minutes before serving. Use foil to lift out of pan; remove foil. Cut into slices with a serrated knife. Serve with blueberry sauce.
