Grilled Flank Steak with Avocado Chimichurri Sauce image

Deliciously juicy grilled flank steak served with an amazing blend of avocado and chimichurri sauce!

1.5 to 2 pounds flank steak
1/2 tablespoon ground cumin
1 teaspoon salt
1/4 teaspoon fresh ground pepper
1 tablespoon olive oil
1/4 cup extra virgin olive oil
1/4 cup fresh lime juice
3 cloves garlic
1 cup flat leaf parsley
1/2 teaspoon dried oregano
1/8 teaspoon cayenne pepper
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 avocado (peeled, pitted, and diced)

Steps:

  • Pat steak dry.
  • Combine cumin, salt, and fresh ground pepper in a small mixing bowl and stir until thoroughly incorporated.
  • Rub steak on both sides with the prepared cumin mixture.
  • Drizzle olive oil over steak and turn to coat.
  • At this point, you can cover the steak and let sit in refrigerator for 2 hours OR grill it.
  • Preheat grill to medium-high heat.
  • Transfer steak to the grill and grill it to desired doneness, about 5 minutes per side for medium-rare, which is 145F internal temperature. *See NOTES for Temperatures for Steak
  • Transfer steak to work surface and let stand at least 5 minutes before slicing.
  • Add oil, lime juice, garlic, parsley, oregano, cayenne pepper, red pepper flakes, salt, and fresh ground pepper to a food processor; pulse until herbs are finely chopped.
  • Add diced avocado to the food processor; pulse until well combined and chunky.
  • Cut the steak across grain into thin strips.
  • Arrange steak on a platter and serve with prepared avocado chimichurri sauce.

This juicy Grilled Flank Steak is easy to make and has a homemade Avocado Chimichurri that is so full of flavor! It's the perfect steak recipe for a dinner that is ready in less than 20 minutes!

2 lb flank steak
salt & pepper to season
3/4 cup fresh cilantro
1 tablespoon fresh oregano
1 garlic clove
3 tablespoons red wine vinegar
4 tablespoons olive oil
1 tablespoon fresh lime juice
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon pepper
3 avocados, diced

Steps:

  • Heat grill to medium high or 400 degrees.
  • To a food processor add, cilantro, oregano, garlic, red wine vinegar, olive oil, lime juice, red pepper flakes, salt, and pepper. Blend until smooth.
  • In add small bowl add diced avocado and blended chimichurri sauce. Lightly toss to coat, be careful not to mush the avocado. (you want them to remain diced)
  • Season a room temperature flank steak with salt and pepper on both sides.
  • Place steak on grill and cook for 4-6 minutes per side.
  • Remove from grill, let sit for 2-3 minutes. Slice steak.
  • Serve with avocado chimichurri sauce

1 (2 1/4 lb) flank steaks, trimmed
2 tablespoons fresh lime juice
1/2 teaspoon fresh ground black pepper
1/4 teaspoon kosher salt
cooking spray
1 (3/4 lb) cucumber, peeled, halved lengthwise, seeded, and cut into 1/4-inch-thick slices
2 cups grape tomatoes
2 cups torn bibb lettuce
1 1/2 cups diced peeled avocados
1/3 cup vertically sliced red onion
2 tablespoons chopped fresh cilantro
3 tablespoons fresh lime juice
1 1/2 teaspoons minced seeded serrano chilies
1 1/2 teaspoons extra virgin olive oil
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper

Steps:

  • To prepare steak, place steak in a large shallow dish. Drizzle with 2 tablespoons juice, and sprinkle with 1/2 teaspoon pepper; rub into steak. Cover; let steak stand at room temperature for 20 minutes, turning occasionally.
  • Prepare grill.
  • Remove steak from dish; discard marinade. Sprinkle steak with 1/4 teaspoon salt. Place steak on a grill rack coated with cooking spray; grill 8 minutes on each side or until desired degree of doneness. Let stand 10 minutes before thinly slicing.
  • To prepare salad, combine cucumber, tomatoes, lettuce, avocado, and onion in a large bowl. Combine cilantro and the remaining ingredients. Drizzle cilantro mixture over cucumber mixture; toss gently. Serve with steak.

  • Use a sharp knife to remove any visible silvery pieces of skin on the steak. Mix the salt, pepper, garlic powder and chipotle powder. Sprinkle it evenly on both sides of the steak. Rub both sides with oil.
  • Lightly score the surface of the both sides of the steak by making very shallow diagonal cuts with the very tip of your knife going both directions so you get diamond shapes on the surface. The cuts should be barely visible.
  • Heat grill or grill pan to high heat. Sear steak on both sides for 2-3 minutes per side, depending on thickness. Remove from grill and cover. Rest for 10-15 minutes before slicing.
  • To make the avocado chimichurri, add the parsley, cilantro, and garlic to the bowl of a food processor. Pulse until finely chopped. Add the lime, vinegar, oil, salt, pepper and red pepper flakes and pulse to combine. Add the avocado and pulse until combined but still a bit chunky. Add more lime juice, vinegar and/or oil if you need more liquid.
