SCRAMBLED EGG-GRILLED CHEESE SANDWICHES
Steps:
- In medium bowl, beat eggs, milk, salt and pepper thoroughly with fork or wire whisk until well mixed. Heat 10-inch nonstick skillet over medium heat. Pour egg mixture into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 2 to 3 minutes or until eggs are thickened throughout but still moist.
- To make sandwiches, divide eggs evenly between 2 bread slices. Layer each sandwich with 2 cheese slices, 2 tomato slices and top with remaining bread slices. Spread 3/4 teaspoon butter over each top slice of bread.
- Wipe out skillet; heat over medium-high heat. Add sandwiches to skillet, buttered side down. Spread remaining butter over top slices of bread. Cook 4 to 5 minutes or until bottoms are golden brown. Turn; cook 4 to 5 minutes longer or until bottoms are golden brown and cheese is melted.
- To serve, cut sandwiches in half; serve warm.

GRILLED HAM, EGG AND CHEESE SANDWICH
While watching Emerill Live tonight, Bobby Flay was the special guest. While they were cooking, they started joking around saying they were hungry and since Bobby was making a hamburger with ham and cheese, he asked Emerill if he wanted a "ham, egg and cheese sandwich" to go with the beer that Emerill provided him. I hadn't had dinner yet and my protein intake for the day was pretty low so this sounded really good. They didn't show him making it but its not that hard to figure out.

Steps:
- Melt 1 tablespoon of butter in frying pan over medium heat. Add egg and fry until cooked to your preference. (Yolk can either be broke or not as to your preference.)
- In a nonstick pan, fry ham until warm and lightly brown. Remove from pan and keep warm.
- On one slice of sourdough bread, layer slice of cheddar cheese, ham, slice of swiss cheese and fried egg. Top with other slice of bread.
- Brush melted butter on sandwich and place buttered side down in skillet used to fry ham. Brush melted butter on top. After a few minutes, flip sandwich over and fry until golden brown and cheese is melted.

- Whisk egg, milk, salt, onion powder, and garlic-pepper seasoning together in a bowl until well combined and pale yellow in color. Dump in Cheddar-Jack cheese and stir until thick.
- Spray a skillet with cooking spray and set over medium-low heat. Pour egg mixture into the skillet; cook and stir until eggs are set, about 5 minutes. Remove to a plate.
- Lightly butter one side of each bread slice.
- Spray the skillet again with cooking spray. Put one slice of bread, buttered-side down, in the pan. Top with 1/2 of the mozzarella cheese, the egg mixture, the remaining mozzarella, and the remaining bread, buttered-side up. Cook until bread is toasted and browned, 1 to 2 minutes. Flip and cook until the other side is browned and the cheese is melted, another 1 to 2 minutes.
- Transfer to a plate and let cool for a minute before serving.

- Preheat oven to 350 degrees F (175 degrees C). Line a rimmed baking sheet with parchment paper.
- Make a V-shaped cut in the baguette, leaving ends intact. Lift out V-shaped wedge. Hollow out baguette gently to make a long, skinny bread bowl, being careful not to cut through the bottom or sides. Place baguette on the prepared baking sheet.

- Cook meat items if neseccary.
- Fry egg until yolk is hard. Season with salt and pepper and set aside. If you like hot sauce you can use that to season as well.
- Butter both pieces of bread on one side, and place cheese, meat and egg beteen the slices, buttered sides of bread outward (like making a grilled cheese).
- Grill sandwich on both sides in a skillet on med-low heat until golden and cheese is melty.
- Cut in half diagonally and serve.

- Cook pancetta in large nonstick skillet over medium-high heat until crisp. Transfer to paper towels. Reserve skillet with drippings.
