Sweet & Spicy BBQ Sauce
1/2 cup Land O Lakes® Butter
1 small (1/2 cup) onion, finely chopped
1/2 cup ketchup
1/4 cup Worcestershire sauce
3 tablespoons firmly packed brown sugar
1 tablespoon white vinegar
1 teaspoon finely chopped fresh garlic
1 teaspoon salt
1/4 teaspoon pepper
Chicken
1 (3- to 4-pound) fresh cut-up chicken

Steps:

  • Melt butter in 3-quart saucepan over medium heat until sizzling; add onion. Cook, stirring occasionally, 3-5 minutes or until softened.
  • Stir in all remaining sauce ingredients; continue cooking 5-6 minutes or until mixture is slightly thickened. Cool to room temperature.
  • Pour into mini-food processor bowl fitted with metal blade or blender container; process until smooth.
  • Heat 1 side of gas grill on medium or charcoal grill until coals are ash white. Place coals to 1 side in charcoal grill. Make aluminum foil drip pan; place opposite coals.
  • Place chicken onto grill over drip pan. Grill, turning occasionally, 25 minutes. Continue grilling, brushing with sauce and turning occasionally, 20-30 minutes or until internal temperature of chicken reaches at least 165°F and juices run clear when pierced with fork.

Steps:

  • In medium bowl, stir ingredients for desired barbecue sauce(s) until well blended.
  • Heat gas or charcoal grill. In small bowl, spoon 1/2 cup desired flavor barbecue sauce for brushing chicken. Reserve remaining barbecue sauce for serving with chicken breasts.
  • Brush oil on both sides of chicken breasts. Place chicken on grill over medium heat. Cover grill; cook 5 minutes. Turn chicken, cook 5 to 7 minutes longer or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Brush both sides of chicken breast with barbecue sauce during last few minutes of grilling. Serve with reserved barbecue sauce.

1 tablespoon vegetable oil, plus more for oiling the grill grates
1/2 small onion, chopped
1 large or 2 small cloves garlic, finely chopped
1 cup ketchup
1/2 cup molasses
1/3 cup apple cider vinegar
1 tablespoon Worcestershire sauce
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
2 chipotles in adobo sauce, seeded and roughly chopped
Kosher salt and freshly ground black pepper
6 whole chicken legs

Steps:

  • Heat the oil in a medium saucepan over medium-high heat. Add the onion, and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic, and cook, stirring, until golden, about 30 seconds. Add 1/2 cup water and the ketchup, molasses, vinegar, Worcestershire, allspice, clove, chipotles and 1/2 teaspoon salt and bring to a boil. Reduce the heat, and simmer, stirring occasionally, until thickened, about 10 minutes. Puree in a blender or food processor until smooth. Store the sauce in the refrigerator until ready to grill the chicken. (Sauce can be made up to 1 week in advance.)
  • Prepare a grill for high heat and then adjust the heat to medium. Separate 3/4 cup of the barbecue sauce and reserve for serving.
  • Lightly season the chicken with salt and pepper. Lightly oil the grill grate. Sear the chicken, skin-side down, until well-marked, about 5 minutes. Reduce the heat to low. Cook the chicken, covered, turning and basting with the barbecue sauce every 5 minutes, until the chicken is just cooked through, about 25 minutes more. Do not baste during the last 5 minutes to prevent cross-contamination.
  • Serve the chicken with the reserved sauce.

1/4 cup kentucky Bourbon (corn whiskey like Jim Beam)
4 ounces soy sauce
2 tablespoons vegetable oil
1 onion, chopped
3 garlic cloves, chopped
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
3 lbs skinless chicken breast halves
1/2 cup ketchup

Steps:

  • In a food processor or blender, combine all of the ingredients except for the chicken and ketchup and puree until smooth.
  • Pour the marinade over the chicken, rub it in well, and refrigerate for 3-4 hours, turning the chicken over a couple of times while it's marinating.
  • Grill the chicken over hot coals for about 10 minutes on each side; baste with marinade while grilling.
  • Or broil chicken with marinade in a casserole dish at 350F for about 40 minutes, turning chicken and basting with pan juices a couple of times while it cooks.
  • When the chicken is done remove it from the pan.
  • Add ketchup to the remaining marinade and boil down until it is a thick dark sauce to coat the chicken with (about 5 minutes).

2 chicken thighs
30 ml teriyaki sauce (2 tablespoons)
30 ml soy sauce (2 tablespoons)
45 ml ketchup (3 tablespoons)
1 tablespoon ginger (ground ginger is OK too)
3 tablespoons caster sugar (for a helathier choice use sugar substitute)

Steps:

  • Mix all the ingredients in a bowl and let the chicken marinate for at least 20min.
  • Pre-heat the grill for 2 minutes.
  • Grill the chicken thighs for 12 minutes on each side. Do not turn more than once but make sure you rotate the grill once, so that the chicken browns evenly.

Steps:

Steps:

  • Prepare a grill for 2-zone heat (for a charcoal grill, bank two-thirds of coals over one side of grill and scatter remaining coals over the other side; for a gas grill, set one burner to medium-high heat and the remaining burners to medium-low heat). Clean and lightly oil grate.
  • Mix vinegar, brown sugar, honey, Worcestershire, garlic powder, paprika, cayenne, and 1/2 cup mustard in a medium bowl; set aside.
  • Season chicken on all sides with 2 Tbsp. plus 2 tsp. salt. Grill chicken skin side down over direct heat, turning halfway through or whenever there is a flare, until lightly charred, 5-8 minutes. Move chicken to cooler part of grill, cover with lid, and continue to grill, turning several times and keeping covered, until an instant-read thermometer inserted into the thickest part of the breast registers 140°F, 15-20 minutes. Continue to grill, turning every 1-2 minutes and basting the other side, until the internal temperature of thickest part of breast registers 155°F and sauce is shiny and lacquered, about 6 minutes. Transfer chicken to a cutting board as pieces are done (again, the smaller pieces will go more quickly). Let rest 10 minutes before separating drumsticks from thighs and slicing chicken breast in half on a bias.
  • While chicken rests, gently toss onions, 2 Tbsp. oil, and 1 tsp. salt in a medium bowl, being careful not to break up onion rounds into rings. Grill over medium-low heat, turning once, until charred on both sides and tender, 10-15 minutes.
  • Whisk 2 Tbsp. bean pickling liquid and remaining 2 Tbsp. mustard in a large bowl. Drain beans and add to bowl. Add tomatoes and grilled onions. Toss to combine; season with salt.

Since grilled chicken is a summertime staple for me I will be making this sauce in a bigger batch and refrigerating in bottles. The spicy "vinegary" taste goes very well with the grilled chicken.
