Juicy chicken and colorful vegetables threaded onto skewers and grilled to perfection! The easy Greek marinade gives them irresistible Mediterranean flavor.

1 pound boneless skinless chicken breasts (about 2 large breasts)
3 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
2 teaspoons honey
4 cloves garlic (minced)
1 tablespoon dried oregano
2 teaspoons dried thyme or dried rosemary
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 small red onion (quartered into 1-inch pieces)
1 small zucchini (ends trimmed and sliced into 1/2-inch coins)
1 small summer squash (ends trimmed and sliced into 1/2-inch coins)
1 red bell pepper (seeded and cut into 1-inch pieces)
Canola oil (for grilling)
1 large lemon (cut into wedges (optional but way better if it's included))
Chopped fresh herbs of choice (parsley and dill are two of our favorites)
Crumbled feta cheese

Steps:

  • Cut the chicken breasts into 1-inch pieces and place in a large ziptop bag, shallow baking dish, or bowl.
  • In a separate bowl or liquid measuring cup, whisk together the olive oil, vinegar, honey, garlic, oregano, thyme, salt, and pepper.
  • Pour over the chicken and stir to coat (or seal the bag, removing as much air as possible, and "squish" to coat). Place in the refrigerator to marinate for 30 minutes or up to 3 hours (do not let the chicken sit for longer or the vinegar will cause it to break down). If using wooden skewers, place the skewers in water to soak for at least 20 minutes.
  • When ready to grill, preheat the grill to medium-high heat (about 375 degrees F). Brush the grill grates with canola oil or coat with nonstick grill spray.
  • Thread the kabobs: Thread a piece of chicken onto the skewer (shake off the excess marinade when removing it from the bag. Add alternating pieces of the red onion, zucchini, yellow squash, and red bell pepper until you've reached the end of the skewer, ending with chicken. Repeat with the remaining skewers, then discard the excess chicken marinade.
  • Grill the chicken until fully cooked through and the juices run clear, about 10 to 15 minutes, turning the skewers every few minutes so that each side has grill marks. Transfer to a serving plate and squeeze the lemon over the top. Sprinkle with fresh herbs and feta. Serve warm.

2 tablespoons grapeseed oil, plus more for greasing
1 lemon, zested and halved
2 teaspoons ground cumin
1 teaspoon ground turmeric
3/4 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground cinnamon
1 pound boneless skinless chicken breasts (about 2 breasts), cut into 1- to 1 1/2-inch cubes
4 Persian cucumbers
3 to 4 sprigs dill, fronds picked
One 8-ounce block halloumi, cut into eight 1/4-inch thick slices
4 pitas
Tahini, for drizzling

Steps:

  • Soak the skewers in water for at least 30 minutes. Preheat the grill to 375 degrees F or preheat a large grill pan over medium heat. Clean and oil the grates or grill pan.
  • Combine the lemon zest with the 2 tablespoons grapeseed oil, the cumin, turmeric, salt, garlic powder and pepper in a medium bowl; stir together. Add the chicken and toss to coat. Let sit for 5 minutes to 1 hour, then thread 5 to 6 chicken cubes onto each skewer.
  • While the chicken marinates, peel the cucumber into long ribbons with a vegetable peeler. Transfer to a small bowl. Add the dill fronds, the juice from 1/2 of the zested lemon and a sprinkle of salt and pepper. Toss and set aside until ready to serve.
  • Grill the skewers, turning every 3 to 4 minutes, until the chicken is cooked through and all sides are charred, 8 to 10 minutes total. Remove to a platter and squeeze juice from the remaining 1/2 lemon over the top.
  • Two minutes before the chicken is done cooking, grill the halloumi until warmed through and lightly charred, about 1 minute per side.
  • For each serving, top 1 pita with some of the cucumber salad, 1 to 2 slices of the halloumi and 2 chicken skewers. Drizzle with tahini and serve.

3 pounds boneless, skinless chicken breasts (cut into 1.5-inch pieces)
2 yellow squash (cut into 1.5-inch pieces)
2 zucchini (cut into 1.5-inch pieces)
2 red or orange bell peppers (cut into 1.5-inch pieces)
1 red onion (cut into 1.5-inch pieces)
½ cup olive oil
½ cup white wine vinegar
½ cup white wine
5 cloves garlic (minced)
2 Tablespoons Italian seasoning
2 Tablespoons granulated white sugar
1 Tablespoon salt
2 teaspoons black pepper
1 teaspoon red pepper flakes
zest and juice of 1 lemon

Steps:

  • Prepare marinade. Combine all ingredients for the marinade in a large bowl and mix until the salt and sugar have dissolved. Add the cut pieces of chicken, squash, zucchini, bell pepper, and onion to the marinade. Stir gently to coat all of the chicken and vegetables with marinade. Cover tightly and refrigerate for 4-12 hours.
  • Preheat grill. Heat the grill to 400 degrees F for direct grilling.
  • Assemble the kabobs. While the grill preheats, assemble your kabobs. This process takes about 15 minutes. Skewer on your chicken, squash, zucchini, peppers, and onions onto the kabobs in a pattern. Repeat until all of the chicken and vegetable pieces have been secured on the sticks. Season on all sides with a light sprinkle of additional salt and pepper before grilling, if desired.
  • Grill the chicken kabobs. Place the kabobs directly on the grill grates and close the lid. Grill for 4-5 minutes before opening the lid and rotating the skewers. Close the lid and grill for an additional 4-5 minutes. Open, check the temperature of the kabobs, and if the internal temperature of the chicken hasn't reached 165 degrees F, rotate them once again, close the lid, and cook until they hit the target temperature.
  • Rest and serve. Remove the finished kabobs from the grill and rest for only 1-2 minutes before serving. The pieces are so small, they don't need to rest much longer than this and you want to serve them hot.

1/2 cup A.1. STEAKHOUSE Marinade New Orleans Cajun
2 medium red onions, cut into 1-inch chunks
2 medium green or red peppers, cut into 1-inch chunks
12 wooden skewers, soaked in water
1 bag (10 oz.) European salad greens
1/4 cup KRAFT Italian Vinaigrette Dressing made with Extra Virgin Olive Oil

Steps:

  • Place chicken in resealable plastic bag. Add marinade; seal bag. Turn bag over several times to evenly coat chicken. Refrigerate 30 minutes to marinate.
  • Preheat grill to medium heat. Remove chicken from bag; discard marinade. Alternately thread chicken, onions and peppers on skewers.
  • Grill 10 to 15 minutes or until chicken is cooked through and vegetables are crisp-tender. Place salad greens on large serving platter; drizzle with dressing. Top with kabobs.

1 1/2 tablespoons lemon juice
1/2 teaspoon extra virgin olive oil

Steps:

  • Please note that this recipe requires at least 2 hours of marinating time, which is not reflected in the prep time.
  • Cut meat into 1-inch cubes. Place in a resealable plastic bag or set in a shallow bowl.
  • For marinade, in a small bowl, combine lemon peel, lemon juice, oil, honey, basil, salt and pepper, and garlic powder.

A recipe from my Mr. Yoshida's Fine Sauces Cookbook which I haven't tried yet. Cut chicken into 1-inch cubes to make kabobs. I'd serve this with rice. Cooking time includes 30 minutes refrigeration time.

1 lb boneless skinless chicken breast
1 1/4 cups Yoshida gourmet sauce
1 medium red pepper, cut into 2 inch squares (1-inch for kabobs)
8 medium mushrooms, halved
1 medium zucchini, sliced in half lengthwise and cut into 1 inch pieces (approximately 2 cups)
15 wooden skewers, soaked in water 15 minutes (optional)

Steps:

  • Put chicken breasts (or cubes if making kabobs) in a zip bag with 1/4 cup of Gourmet Sauce; shake bag to coat chicken.
  • Marinate 30 minutes in refrigerator.

  • Grill or broil chicken for 8-10 minutes on each side or until juices run clear.
  • Baste chicken using 1/2 cup sauce during grilling.

  • Heat remaining 1/2 cup sauce in a small saucepan.
  • Slice chicken into strips and toss together with grilled vegetables and heated sauce.
  • Alternate kabob method: While chicken is marinating, thread red pepper, mushroom halves, and zucchini cubes on soaked skewers.
  • Thread marinated chicken cubes on skewers.
  • Grill skewers until vegetables are tender crisp (15-20 minutes) and chicken is cooked (about 20 minutes).
  • Baste the skewers during grilling.

This is my adaption of a Tyler Florence recipe. I cannot express just how dang good this recipe is. You can serve it as kabobs over Basmati rice or do as Tyler and serve as the recipe dictates below. Take note that you will not use all of the dressing, so the calorie and fat counts are way off. For a shortcut or to cut the calorie count even further, use a pre-made regular or low fat Caesar dressing.

2 medium boneless skinless chicken breasts
4 links sweet Italian turkey sausage, cut in half in the middle
1 baguette, crusty, cut into rounds
12 fresh bay leaves
2 lemons
1/8 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
2 anchovies
1 garlic clove
1 tablespoon lemon juice
2 egg yolks
1 cup extra virgin olive oil
2 tablespoons water
2 tablespoons parmigiano-reggiano cheese, grated
1/8 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
2 heads romaine lettuce, chopped
4 tablespoons parmigiano-reggiano cheese, grated (for garnish)

Steps:

  • Preheat grill to medium-high heat. Take 4 links of sweet Italian pork sausage and cut in half in the middle. Chop 2 medium boneless chicken breasts into chunks roughly the same size as the sausage. Take one crusty baguette, and cut it into rounds. Using metal skewers make two extra-large kabobs (two skewers per kabob). Thread the components alternating bread, chicken, sausage and fresh bay leaves until the skewers are full. Baste the kabobs with extra-virgin olive and season with salt and freshly ground black pepper.
  • Place skewers on the hot grill and cook until golden brown, turning to get an even color all over. Baste with lemon juice as they cook.
  • Prepare the salad. In a blender, combine 2 anchovies, 1 garlic clove, 1 tablespoon lemon juice, 2 egg yolks, and 1 tablespoon of grated Parmigiano-Reggiano cheese. Pulse a couple of times to combine, then add 2 tablespoons water and blend again. Keep the motor running, and gradually pour 1 cup extra-virgin olive oil through the feed tube and continue to blend until emulsified. Season to taste with salt and some freshly ground black pepper.
  • Chop 2 heads of romaine lettuce, and throw into a large mixing bowl. Dress the salad with homemade dressing, add some Parmigiano-Reggiano cheese and some cracked black pepper, and mix thoroughly. When the kabobs are done, remove them from the grill and serve alongside the salad. To plate, garnish with more Parmigiano-Reggiano cheese and fresh lemon.
  • NOTE: To serve with Basmati rice, as I do, rinse 1 1/2 cups of dry rice to a colander until the water runs clear. Add rice to 2 1/4 cups chicken broth, 1 teaspoon salt and 1 teaspoon olive oil. Bring to a boil, cover and simmer over a low flame until all liquid evaporates. Let rice sit covered for 5 minutes and fluff with a fork.

1 cup reduced sodium soy sauce
1 cup chicken broth
4 tablespoons balsamic vinegar
4 tablespoons honey
4 tablespoons extra virgin olive oil
1/2 teaspoon liquid hot pepper sauce
2 tablespoons finely snipped fresh sage
1/2 teaspoon ground ginger
4 garlic cloves, minced
1/2 teaspoon fresh ground pepper
3/4 teaspoon liquid smoke
2 tablespoons toasted sesame seeds
1 cup long grain brown rice
2 3/4 cups chicken stock
1 teaspoon sesame oil
2 teaspoons sesame seeds
3 tablespoons finely snipped fresh sage
3 boneless skinless chicken breasts, cut into 1 inch chunks
1 medium yellow squash, cut in half and then in 3/4 inch chunks
1 medium zucchini, cut in half and then in 3/4 inch chunks
1/2 vidalia onion, cut vertically and then into thirds
8 -10 mushrooms, cut in half
1/2 medium red bell pepper, cut in 1-inch chunks

Steps:

  • In blender jar, combine all ingredients for the marinade except for sesame seeds.
  • Blend completely, stir in sesame seeds.
  • Reserve 1 cup of marinade and pour remainder over the chicken, cover and refrigerate 8 to 24 hours.
  • About 1 hour before cooking, place cut vegetables in a glass bowl and pour ½ cup of the reserved marinade over them.
  • Allow vegetables to stand at room temperature for approximately 45 minutes.
  • While vegetables marinade, bring the chicken stock for the rice to a boil along with 1 Tbsp of the sage.
  • When stock boils add the brown rice, stir, cover and cook for 45 to 50 minutes.
  • Warm sesame oil in small skillet, add sesame seeds and toast until lightly browned and fragrant; set aside.
  • Thread the chicken and vegetables onto 4 skewers alternating the chicken and vegetables.
  • Grill kabobs 20 to 25 minutes over medium heat or until chicken is thoroughly cooked and vegetables are crisp tender.
  • Baste frequently with remaining marinade.
  • When rice has finished cooking, stir in remaining 2 Tbsp of sage and toasted sesame seeds.
  • Serve the chicken kabobs over the rice.
  • The cook time does not include the marinade time for the meat.
