Steps:
- Begin by making the brine. Combine the water, brown sugar, garlic, ginger, salt and thyme in a large resealable bag and swirl to dissolve the sugar. Add chicken pieces and allow to brine for 1 to 2 hours in the refrigerator.
- Preheat grill to low-medium heat.
- Make teriyaki glaze: In a small saucepan, over medium heat, combine teriyaki sauce, honey, ginger, garlic, and 1 teaspoon of sesame oil, and simmer until rich and slightly reduced.
- Remove chicken from brine and pat dry. Discard the brine. Add the chicken to a large mixing bowl, drizzle with the 1/4 cup toasted sesame oil and season with freshly ground black pepper. Toss to coat and cook on a low-medium grill for 17 to 20 minutes per side until cooked through. Baste with teriyaki glaze for the last 5 to 7 minutes of cooking. Serve garnish with scallion threads (finely sliced scallions cut on the bias soaked in ice cold water), and toasted sesame seeds.
CHICKEN TERIYAKI
Teriyaki is derived from the Japanese root words teri, to shine, and yaki, to broil or grill. That's the way traditional teriyaki looks: shiny and incised with grill marks. In Japan, teriyaki is a mix of soy sauce, sake and the rice wine mirin, which imparts a subtle sweetness. The teriyaki found throughout Seattle, of which this is an adaptation, is a bit more showy. Cooks sweeten with white sugar and pineapple juice. They thicken with cornstarch. Ginger and garlic go into the mix because of the Korean ancestry of many cooks. It is not at all traditional, but it is simple to prepare and addictive to eat. Be sure to plan ahead as you do need to marinate the chicken before cooking. An overnight stay in the fridge is ideal, but many readers have been happy with a quick marinade of an hour or so.

Steps:
- In a small saucepan, combine all ingredients except cornstarch and chicken. Bring to boil over high heat. Reduce heat to low and stir until sugar is dissolved, about 3 minutes. Remove from heat and let cool. Discard cinnamon stick and mix in 1/2 cup water.
- Place chicken in a heavy-duty sealable plastic bag. Add soy sauce mixture, seal bag, and turn to coat chicken. Refrigerate for at least an hour, ideally overnight.
- Remove chicken and set aside. Pour mixture into a small saucepan. Bring to a boil over high heat, then reduce heat to low. Mix cornstarch with 2 tablespoons water and add to pan. Stir until mixture begins to thicken, and gradually stir in enough water (about 1/2 cup) until sauce is the consistency of heavy cream. Remove from heat and set aside.
- Preheat a broiler or grill. Lightly brush chicken pieces on all sides with sauce, and broil or grill about 3 minutes per side. While chicken is cooking, place sauce over high heat and bring to a boil, then reduce heat to a bare simmer, adding water a bit at a time to keep mixture at a pourable consistency. To serve, slice chicken into strips, arrange on plates, and drizzle with sauce.

I have been making this version of Teriyaki Chicken for years. It is great both indoors and out. We like this with Wild Rice and either stir fried vegetables or plain old green beans. Prep/Cook times does NOT include brine or marinade times.

GRILLED TERIYAKI CHICKEN
I love recipes that are easy and tasty and can be prepared ahead. This fits the bill very nicely because the chicken is par-boiled and just needs to be grilled to crisp it up. We take this camping because it is so convenient. Prepare the chicken at home the night before and grill it when you arrive at the campground. It has been a family favorite for years.

- In a bowl, whisk together 1 clove minced garlic, 1/8 tsp freshly grated ginger, 1 tbsp brown sugar, and 1/3 cup low sodium soy sauce.
- Add the chicken thighs to the soy sauce mixture and stir just to combine. Cover the chicken with plastic wrap and let it marinate in the refrigerator for at least 2 hours.
- Once the chicken has marinated, fire up the grill to medium-high heat and cook each chicken thigh for about 4 minutes on each side.
- While the chicken is grilling, heat 2 tbsp of grapeseed oil in a large pan over medium-high heat. Add the minced garlic and stir for about 10 seconds. Then add in the soy sauce, sake, mirin, brown sugar, and water. Let the sauce come to a simmer, then reserve 1 tablespoon of the liquid into a small bowl. Then add 2 tablespoons of cornstarch into that bowl. Mix until the cornstarch is dissolved. Then pour the mixture back into the sauce. Bring the heat down to low and let it simmer for about 4 minutes. You don't want it to cook for too long, or else it will become bitter.
