Steps:
- Bring a large pot of salted water to a boil.
- Whisk together the mayonnaise, basil, parsley, sour cream, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
- Heat a grill or grill pan over medium-high heat until hot; brush with the oil. Season the chicken breast with salt and pepper. Grill the chicken, turning once, until well-marked and just cooked through, about 7 minutes per side. Transfer to a cutting board and let rest for 5 minutes, then cut into 1/2-inch pieces.
- Meanwhile, cook the broccoli in the boiling water until crisp-tender, about 3 minutes. Transfer the broccoli to a colander with a slotted spoon and run under cold water to stop the cooking process. Add the broccoli to the bowl with the dressing.
- Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl.
- Add the chicken and red peppers to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

BAKED CHICKEN WITH GRILLED FETA AND CARAMELIZED ONIONS
This is a mixture of several recipes I've seen on this website, thanks to all the chefs who posted chicken recipes. The caramelized onions are and adaptation on someone else's onions, but I can't remember who right now (do tell if you know who you are).

Steps:
- Wash chicken breast fillets and pat dry, cut in half.
- In a small pan heat butter and oil till liquid, set aside.
- Take a large, heavy based, frying pan, heat and add 2 tbsp fat.
- Fry chicken on a high heat until it has turned from its original rosy colour to white on both sides, remove from pan immediately, conserve the fat.
- With a mortar and pestle take the rosemary, the salt, both types of peppercorns and the flour and crush everything together so you have a fine powder with a few sprigs of rosemary remaining, set aside.
- Take the hot water and add the stock cube (use stock if you have any left from another day), add Tabasco, Worcestershire sauce, soy sauce, vinager and sugar set aside.
- Heat oven to 350°F and place the remaining fat in an earthenware dish in the oven on a high shelf.
- Re-heat the fat in the frying pan and when hot fry the onions on a medium heat until they "relax".
- Turn the heat up to high and add 1/4 of the liquid, reduce until there is no liquid left, add another 1/4 of the liquid and repeat the process, finally add the remaining liquid and reduce again until all the liquid has evaporated, leave on a low heat for another 5 minutes, cover and set aside.
- Take fried chicken and sprinkle with the flour mixture on one side.
- Take the earthenware dish out of the oven and place the dusted side down in the fat, sprinkle the remaining mixture over the chicken.
- Bake for 15 minutes (turn halfway).
- Take crumbled feta cheese and crumble over the chicken.
- Grill until the feta cheese has "set", so that its dry and slightly golden (feta does NOT melt, so don't sit around waiting for it to melt 'cus you'll get a very dry chicken).
- To serve: re-heat the onions that have been steeping in their juices, and set up 3 pieces of chicken each with a"dollop" of onions in the centre.
- Garnish with a sprig of rosemary (if you must garnish things).
GRILLED PASTA SALAD
Nothing like grilled vegetables mixed with pasta, chicken, bacon and cheese for a delicious lunch or light dinner served with your favorite bread and fresh fruit. Even my dh enjoys this one, minus the feta, he prefers shredded asiago or parmesan cheese on his salad.

PASTA WITH BROCCOLI AND CARAMELIZED ONIONS
Of all the dishes in this book, this was probably the favorite when we were testing recipes. Everyone we tried it on loved it. Although it takes a little time to caramelize the onions, it's easy (they pretty much just sit in the pan and cook themselves), and you will not believe how sweet and delicious they end up.

Steps:
- Peel the onions and cut into thin slices. Place the oil and onion in a large skillet and cook over medium heat for 20 to 25 minutes, or until the onions are golden brown. Remove from the heat and set aside.
- While the onions are cooking, cut the florets from the broccoli and discard the stems. Bring a large pot of salted water to a boil and add the pasta. Cook over medium-high heat, stirring occasionally, for 8 minutes, or until al dente. After the pasta has been cooking for 4 minutes, add the broccoli florets to the pasta water for the remainder of the cooking time. Drain the pasta and broccoli in the colander.
- Add the drained pasta and broccoli, almonds, and balsamic vinegar to the pan of onions and mix well. Season with salt and pepper and serve immediately.
- Balsamic vinegar is made from grapes that have been cooked down to a syrup and then aged. The aging time-anywhere between three and 150 years-is what determines the price. The three-year-old stuff works fine for a college budget (and frankly, we may never in our lives be able to afford the oldest balsamic-it goes for hundreds of dollars an ounce). Cheap but decent balsamic vinegar is nice to have in your pantry-it makes very nice salad dressing when mixed with oil and salt and pepper. Just check the ingredients list to make sure they haven't added caramel or brown sugar to sweeten up an inferior product.
GRILLED CHICKEN AND PASTA SALAD
A main dish salad that is a summer staple in our house. Even our 4-year old loves it! It's refreshing, yet filling. I serve it with crusty rolls and chocolate pie for dessert. Also, use leftover chicken if you have some to make it that much easier. I've also found that this tastes great even without the chilling time. Hope you like this as much as we do!
