1/2 teaspoon salt
4 teaspoons vegetable oil
4 boneless skinless chicken breasts
4 (1/4-inch-thick) slices red onion
1/3 cup mango chutney
1/4 cup mayonnaise
Dash ground red pepper (cayenne)
4 kaiser rolls, split
1 1/3 cups mixed spring greens (from 5-oz bag)
4 oz Brie cheese, cut into 16 pieces

Steps:

  • Heat gas or charcoal grill. In small bowl, mix curry powder, salt and oil. Rub mixture over chicken breasts.
  • Place chicken and onion slices on grill over medium heat. Cover grill; cook 12 to 16 minutes or until juice of chicken is clear when center of thickest part is cut (170°F), and onion slices are tender, turning once.
  • Meanwhile, in small bowl, mix chutney, mayonnaise and ground red pepper; blend well. Spread chutney-mayonnaise mixture on cut sides of rolls. Place 1/3 cup mixed greens on bottom half of each roll. Top each with chicken, onion slice and 4 pieces of cheese. Cover with top halves of rolls.

2/3 cup sugar
1/2 cup white wine vinegar
3 tablespoons balsamic vinegar
2 tablespoons dried cranberries
1 garlic clove, minced
1 teaspoon minced fresh gingerroot
1/4 teaspoon ground allspice
1/4 teaspoon crushed red pepper flakes
2 cups chopped peeled peaches
1/4 cup finely chopped red onion
1 teaspoon Dijon mustard
1/2 teaspoon minced seeded jalapeno pepper
6 boneless skinless chicken breast halves (5 ounces each)
2 tablespoons olive oil
1 tablespoon Tex-Mex chili seasoning mix
Red leaf lettuce
Additional chopped jalapenos, optional

Steps:

  • For chutney, in a large saucepan, combine the first nine ingredients. Bring to a boil; cook and stir for 6-8 minutes or until thickened. Stir in the peaches, onion, mustard and jalapeno. Cool to room temperature., Brush chicken with oil; sprinkle with chili seasoning mix. Grill chicken, covered, over medium heat for 5-6 minutes on each side or until a thermometer reads 170°. Grilled Chicken
2 tablespoons olive oil
2 tablespoons balsamic vinegar
salt and pepper
4 large boneless skinless chicken breasts
Balsamic Onions
4 large yellow onions
4 tablespoons butter (1/2 stick)
1/4 cup balsamic vinegar
salt and pepper (to taste)
Assembly
8 cibatta rolls or 16 mini cibatta rolls
8 ounces Brie (thinly sliced)
1 cup mango chutney
4 cups arugula

Steps:

  • To prepare the chicken, whisk olive oil, balsamic vinegar, and salt and pepper, to taste, in a medium bowl. Slice horizontally through each chicken breast, starting at the thick end. Add chicken to the bowl and toss to combine. Set aside until ready to grill.
  • To prepare the onions, trim off both ends, cut them in half, remove skins, and slice into strips from root to stem end. Melt butter over medium heat in a large skillet. Add the onions to the pan, stirring to coat with butter. Continue cooking over medium heat, stirring every 5 to 10 minutes, scraping up burned bits from the bottom of the pan as needed. After about 20 minutes, lower the heat if the onions seem to be burning in places. At about 40 minutes, the onions should be golden and very soft. If they taste great at this point, you can add remaining ingredients and finish cooking. If you like a deeper flavor, continue cooking until you're satisfied. Once the onions reach the desired flavor and texture, add 1/4 cup balsamic vinegar, scraping up the burned bits on the bottom as you combine it with the onions. Add a bit of water, if needed, to get all the goodness off the bottom of the pan. Sprinkle in salt, to taste. Remove from heat and use immediately or store in a sealed container for up to a week in the refrigerator.
  • Heat grill to high heat. Add chicken, turning every 2 to 3 minutes until cooked through, about 6 to 10 minutes.
  • To assemble sandwiches, spread a generous layer of chutney on the bottom half of each ciabatta roll. Add chicken, slicing as needed if using smaller rolls, and top it with Brie, balsamic onions, and arugula. Season with salt and pepper and top with the remaining halves of each roll.

4 slices whole-wheat bread (good quality)
1 apple (Granny Smith recommended. Cored, peeled, and diced)
2 tablespoons pure maple syrup
1 teaspoon apple cider vinegar
1/4 teaspoon ginger (powdered)
La Bonne Vie cheese (Brie, sliced)
butter (for cooking)
turkey (optional)

Steps:

  • In a small pot combine diced apple, maple syrup, vinegar, powdered ginger, and 2 tablespoons water. Set over high heat and once the mixture comes to a boil simmer on low heat for 5 minutes. Drain apples (discard liquid) and mash with the back of a fork to form a coarse paste. This is your "shortcut" apple chutney.
  • Spread the chutney over two slices of the bread. Top with a layer of Brie and turkey (if using). Add remaining two bread slices over top.
  • Either in a medium-sized saute pan over medium heat or on a griddle set to 375 degrees F add two generous pats of butter. Once the butter melts place the sandwich in the pan/griddle and cook on each side for 2 to 3 minutes or until golden brown. Slice and serve warm.

  • Sorry to be so non-specific.
  • I just had this sandwich in a restaurant and posted a thread talking about it- several people asked me to post it as a recipe, so I'm kind of guessing here.
  • Split the baguette for a sandwich.
  • Slice the brie into medium thick slices and place a layer on each side of the open baguette.
  • Place in a 350 oven for a few minutes to warm the brie.

1/2 tablespoon chopped rosemary
1/2 a ripe pear, thinly sliced
4 large slices of brie

Steps:

  • Heat a large skillet over medium-low heat. Melt butter and add onions and rosemary. Cook, stirring only a few times until caramelized, about 20 minutes.
  • Butter one side of each piece of bread.

  • Add half the caramelized onions on top of the cheese.

One-half ripe pear, cored and thinly sliced
1 tsp. fresh lemon juice
1-1/2 cups (about 8 oz.) shredded cooked turkey or chicken
1-1/2 tsp. lightly chopped fresh thyme leaves
Eight 1/2- to 3/4-inch-thick slices artisan-style whole-grain sandwich bread
2 Tbs. Dijon mustard
8 oz. Brie, sliced
4 tsp. unsalted butter, softened

Steps:

  • In a small bowl, toss the pear slices with the lemon juice. Heat a large skillet or griddle over low heat. Meanwhile, toss the turkey and thyme in a medium bowl. Spread each bread slice with mustard. Arrange half of the Brie on four slices of the bread. Layer the pears over the Brie. Mound the turkey mixture on top of the pears, layer on the remaining Brie, and top with the remaining bread slices mustard side down. Lightly spread the tops of the sandwiches with half of the butter and set them, buttered side down, in the heated skillet (if necessary, cook the sandwiches in two batches). Set a large heavy skillet right on top of the sandwiches and put 2 lb. of weights (canned goods work well) in the empty skillet. Cook the sandwiches until golden brown on one side, about 4 minutes. Remove the weights, butter the sandwich tops, and turn the sandwiches over. Replace the skillet and weights and continue to cook until the second side is golden brown and the cheese is oozy, about 4 minutes longer. Cut the sandwiches in half and serve.

2 pints cherry or grape tomatoes, roasted
1/2 cup sugar
1 cup apple cider vinegar
1/2 cup water
2 tablespoons fresh grated ginger
1 teaspoon kosher salt
1 teaspoon ground coriander
1/2 cup raisins
1/2 lemon, juice only
Pinch of cayenne pepper (optional)
4 Sandwich rolls, like ciabatta rolls
8-10 ounces brie, rind removed
1 cup fresh basil leaves

Steps:

  • To make the chutney:
  • 1) Wash tomatoes well and spread out on a baking sheet. Roast at 450 degrees Fahrenheit for 30 minutes until the tomatoes are blistered.
  • 2) Meanwhile, in a medium pot, combine vinegar, water, sugar, ginger, salt, and coriander and bring to a simmer. Add a pinch of cayenne optionally and stir until sugar is dissolved. Continue to simmer so the mixture begins to reduce.
  • 3) When tomatoes are done roasting add them to the simmering pot and continue to cook over medium heat. Use a spoon or sturdy spatula to press on the tomatoes gently so they mash up.
  • 4) After 5 minutes of simmering add raisins and continue to cook until mixture is very thick. Remove from heat and let cool slightly.
  • 5) Cut rind off of brie wheel and cut into strips. Half bread rolls and slather the bottom half of rolls with tomato chutney. Top with brie.
  • 6) Bake the rolls at 450 degrees for 2-3 minutes until brie is just starting to melt. Be careful not to overmelt the cheese or it will break down.
  • 7) Top each sandwich with a handful of fresh basil and the top of the roll and serve immediately!

1 round (450 g) double cream Brie
3 tbsp (45 mL) olive oil
1/2 baguette (sliced into 1/4-inch (1 cm) thick slices)
Field Berry and Fig Chutney:
1 cup (250 mL) blueberries
1/2 cup (125 mL) E.D.SMITH TRIPLE FRUITS® Field Berry Fruit Spread
1/2 cup (125 mL) dry red wine
6 dried figs (chopped)
1/3 cup (75 mL) finely chopped red onion
1 tbsp (15 mL) red wine vinegar
1 tbsp (15 mL) chopped fresh thyme
1 tbsp (15 mL) grainy mustard
1/2 tsp (15 mL) cinnamon
1/2 tsp (15 mL) salt
1/4 tsp (1 mL) freshly ground pepper
1/4 tsp (1 mL) allspice
1/4 tsp (1 mL) cloves

Steps:

  • Field Berry and Fig Chutney: In large saucepan, combine blueberries, Field Berry spread, red wine, figs, red onion, vinegar, thyme, mustard, cinnamon, salt, pepper, allspice and cloves over medium-high heat; bring to boil. Reduce heat to medium-low; simmer, stirring often, for 15 to 20 minutes or until mixture is thick enough to coat back of spoon. Cool completely.
  • Preheat one side of grill to medium; clean and grease grate well. Brush both sides of Brie with 1 tbsp (15 mL) of the oil. Brush both sides of baguette slices with remaining oil. 5 tablespoons EVOO (extra-virgin olive oil), plus some for drizzling
1 teaspoon dried thyme, 1/3 palmful
2 garlic cloves, finely chopped
Salt and black pepper
8 chicken breast cutlets
1 tablespoon Dijon mustard (eyeball it)
2 tablespoons white wine vinegar (eyeball it)
1 shallot, finely chopped
1 pint grape tomatoes, halved
1 English or European seedless cucumber, cut in half lengthwise, then thinly sliced into half moons
4 hoagie rolls (sub rolls)
3/4 cup store-bought mango chutney
8 ounces Brie cheese, cut into thin slices
1 bunch watercress, trimmed and coarsely chopped

Steps:

  • Heat a grill pan or outdoor grill to high heat.
  • In a shallow dish, mix together 2 tablespoons of the EVOO, the thyme, garlic, salt, and pepper. Add the chicken cutlets and coat thoroughly. Let the chicken marinate while you get the salad together and grill up the bread.
  • In a mixing bowl, combine the mustard, white wine vinegar, shallots, and a little salt and pepper. In a slow, steady stream, whisk in the remaining 3 tablespoons of EVOO. Add the grape tomatoes; with a fork smash some of the tomatoes against the side of the bowl so that their juices become part of the dressing. Add the sliced cucumbers and toss them to combine.
  • Cut the hoagie rolls in half lengthwise like a book, without separating the two halves all the way. Drizzle the inside of the rolls with some EVOO, hinge the rolls open, and lay them down on the grill with the inside flat against the grill. Once they are well marked, 1 to 2 minutes, flip them over and grill the outside a little bit. Remove the rolls from the grill and reserve.
  • Grill the cutlets for 3 to 4 minutes on one side. Flip the cutlets and top each with some of the mango chutney, spreading it out a bit, and 2 slices of Brie. Tent the chicken with a piece of foil and continue to grill it for 3 to 4 minutes to melt the cheese. Remove the cutlets from the grill, cut each in half, and distribute the chicken among the grilled rolls, wedging it into the bread. Top the chicken with some of the chopped watercress and squeeze the hoagies shut. Serve the sandwiches alongside the tomato cucumber salad.
