3/4 cup balsamic vinegar
1/4 cup tightly packed fresh basil leaves
2 tablespoons olive oil
1 garlic clove, minced
1/2 teaspoon salt
8 plum tomatoes
4 boneless skinless chicken breast halves (4 ounces each)

Steps:

  • For marinade, place first five ingredients in a blender. Cut 4 tomatoes into quarters and add to blender; cover and process until blended. Halve remaining tomatoes for grilling., In a bowl, combine chicken and 2/3 cup marinade; refrigerate, covered, 1 hour, turning occasionally. Reserve remaining marinade for serving., Drain chicken, discarding marinade. Place chicken on an oiled grill rack over medium heat. Grill chicken, covered, until a thermometer reads 165°, 4-6 minutes per side. Grill tomatoes, covered, over medium heat until lightly browned, 2-4 minutes per side. Serve chicken and tomatoes with reserved marinade.

Grilled Herb-Buttermilk Chicken with Tomato-Basil Butter image

A simple marinade of buttermilk and herbs makes chicken tender and delicious when grilled. The tomato-basil butter is a superb finishing touch.

4 boneless (, skinless chicken breasts)
2/3 cup buttermilk
2 tablespoons Dijon mustard
2 tablespoons honey
2 cloves garlic (, minced)
2 tablespoons finely chopped fresh rosemary
1 teaspoon dried thyme
1 1/2 teaspoons sea salt
1 teaspoon freshly ground pepper
1/2 cup butter
2 tablespoons extra-virgin olive oil (, plus more for grilling)
6 ounces grape tomatoes
1/4 cup finely chopped fresh basil leaves
Pinch Sea salt & freshly ground pepper

Steps:

  • Place one chicken breast inside a food storage bag or under plastic wrap and pound the thicker part of the breast with the flat side of a meat mallet or large skillet to flatten. The chicken will cook evenly when it is an even thickness.
  • Whisk together the marinade ingredients in a medium bowl and transfer to a large resealable plastic bag.
  • Add the chicken, making sure the marinade surrounds each piece, seal the bag and refrigerate for 1 to 4 hours. Set the butter for the compound butter out on the counter to soften to room temp.
  • When ready to grill, start with the tomatoes for the compound butter. Remove chicken from marinade and transfer to a platter while preparing the butter.
  • Heat the grill to 400°F.
  • Toss the tomatoes with 1 tablespoon of the oil to coat and place on skewers, or use a vegetable grill pan. If using a grill pan, place on the grill while preheating so it is hot when the tomatoes go on it.
  • Grill the tomatoes until blistered and charred in places, about 8 minutes. Remove from grill and transfer to a cutting board. Sprinkle with salt and pepper and coarsely chop. Transfer to a mixing bowl and place in the refrigerator for 5-10 minutes to cool.
  • Combine with the remaining 2 tablespoons of olive oil, basil, and softened butter until well mixed. Spoon compound butter onto a piece of wax paper in a long, narrow shape, about 2 inches wide by 9 inches long.
  • Carefully fold the wax paper over the butter to create a somewhat rounded cylinder shape. Gently place the butter on a flat surface in the freezer while grilling the chicken. (The butter will harden enough to slice and top the chicken.)
  • Turn one side or one burner of the grill off to create an indirect heat zone (adjust the other burners to maintain the temperature around 400°F). Place the chicken on the indirect side and close the lid.
  • Allow to cook for 4-6 minutes on each side, or until the internal temperature of the chicken is at least 130°F. Move the chicken to directly over the heat to create grill marks and finish cooking, about 2 more minutes per side.
  • Remove from grill when the internal temperature of the thickest part is between 153-155°F and tent loosely with foil to rest for 5 minutes.
  • Remove the tomato-basil butter from the freezer (or from the fridge if it was made in advance). Slice into approximate 1 tablespoon-sized pieces and place one on top of each piece of chicken while the chicken is tented and resting;
  • butter should melt over the chicken. If the butter is still not melted when the chicken is done resting, place in a warm oven for a couple of minutes until ready to serve.

2 cups heirloom cherry tomatoes
1/4 red onion, thinly sliced
5 tablespoons extra-virgin olive oil
2 tablespoons fresh ginger juice

1 tablespoon fresh mint leaves, thinly sliced
1 tablespoon sherry vinegar
1 clove garlic, minced

Steps:

  • For the marinated cherry tomatoes: Toast the coriander seeds in a small skillet over medium heat until fragrant, 3 to 5 minutes. Transfer to a mortar and pestle and crack. Allow to cool.
  • Bring a medium pot of water to a boil. Make a small "x" incision at the bottom of each tomato. Blanch the cherry tomatoes for 1 minute and immediately transfer them to a large bowl filled with ice water (an ice bath). Allow the tomatoes to cool, and then peel the tomatoes and discard the skins.
  • In a medium bowl, mix together the coriander, peeled tomatoes, onions, olive oil, ginger juice, basil, mint, vinegar, and garlic. Season with salt and pepper, cover, and allow the tomato mixture to sit at room temperature for 4 hours.
  • For the chicken: Combine the olive oil, basil and garlic in a large bowl. Add the chicken breasts, making sure to coat all sides with the marinade. Cover and let marinate for at least 2 hours in the refrigerator.
  • Preheat the grill to medium heat. Remove the chicken from the marinade and pat dry with a towel. Sprinkle with salt and pepper. Add chicken breasts and grill for around 5 minutes on each side, depending on how hot your grill is, or until cooked through.
  • Serve the chicken with some of the marinated tomatoes on top.

2 tablespoons chopped fresh tarragon, basil, chives or other herb
4 bone-in chicken breasts

Steps:

  • Prepare charcoal or gas grill; heat should be medium-high and rack about 6 inches from fire; keep part of grill cool for indirect cooking. In a small bowl, use a spoon or fork to combine butter and herbs, or use a mini food processor.
  • With sharp-bladed knife, cut a 2- to 3-inch slit in deepest part of chicken. Fill with as much herb butter as possible; rub some under skin as well. Sprinkle chicken with salt and pepper and brush with oil.
  • When grill is ready, put chicken skin-side up on cool side of grill. After some fat has been rendered, turn chicken; if it flares up, move to an even cooler part of fire or turn so skin side is up again. 4 boneless, skinless chicken breast halves (about 6 ounces each)
1/2 teaspoon coarse salt
Freshly ground pepper
2 garlic cloves, minced
1 tablespoon extra-virgin olive oil
12 fresh basil leaves, plus more for garnish
2 beefsteak tomatoes, cut into 1/4-inch-thick slices

Steps:

  • Butterfly chicken breasts: Put halves on a cutting board, smooth sides down, with the pointed ends facing you. Starting on one long side, cut breasts almost in half horizontally (stop about 1/2 inch before reaching the opposite side). Open cut breasts like a book. Sprinkle each piece all over with 1/8 teaspoon salt; season with pepper. Transfer to a plate, and coat both sides with garlic and oil. Let stand 30 minutes.
  • Heat a grill or grill pan until medium-hot. Place 3 basil leaves on the bottom half of each opened chicken breast; top each with 2 slices tomato. Fold over other half of chicken breast, and secure with two toothpicks or short skewers.
