Juicy grilled pork chops with a tiny bit of sweetness and a faint hint of spiciness make for an excellent simple dinner main that pairs with practically any side. A simple brine imparts flavor,but mostly keeps the pork chops from drying out; just don't marinate the meat for any longerthan 4 hours or it'll soften the texture.

1 cup water
¼ cup honey
1 tablespoon apple cider vinegar
½ teaspoon crushed red pepper
4 ½ teaspoons kosher salt, divided
4 (6 ounce) bone-in, center-cut pork chops (about 1-inch thick)
1 tablespoon olive oil
1 teaspoon black pepper

Steps:

  • Stir together water, honey, vinegar, crushed red pepper and 4 teaspoons of the salt in a small bowl until honey and salt are dissolved. Place pork chops and water mixture in a zip-top plastic bag; seal and refrigerate 1 hour.
  • Preheat a grill or grill pan to high (450 degrees F to 500 degrees F). Remove chops from bag; discard marinade and pat chops very dry with paper towels. Drizzle chops evenly with oil on both sides; sprinkle with black pepper and remaining 1/2 teaspoon salt.
  • Place chops on oiled grates; grill, covered, until a thermometer inserted in thickest portion of meat registers 140 degrees F, about 4 minutes per side. Remove from grill; let rest 5 minutes.

Be sure to follow the important steps of letting the chops rest with the salt and seasoning before cooking, then browning the sides slowly, followed by a covered "rest". Mama Dip is a traditional Southern U.S. cook, chef, restauranteur and cookbook author.

4 pork chops, 1/2 to 1 inch thick
1 teaspoon salt
1 teaspoon dried thyme
1/2 teaspoon fresh ground pepper
1 -2 tablespoon oil

Steps:

  • Sprinkle the salt, thyme and pepper on the pork chops.
  • Let sit on counter top for 30 minutes.
  • Place oil in large cast iron skillet (or heavy stainless steel skillet) and heat until medium hot.
  • Place chops in the pan, placing them so they don't touch each other.
  • Cook each side slowly (lower heat if necessary) until nice and golden brown on each side.
  • This will take about 4 minutes per side.
  • Cover the pan with a tight fitting lid.
  • Turn off the heat, and let the chops sit for about 8- 10 minutes, depending on thickness of chops.
  • After removing chops, you can de-glaze the pan with a little water, wine or broth and a touch of butter and serve as a sauce.

1 Granny Smith or other crisp apple, cored and seeded
2 center-cut bone-in pork chops (about 3/4-inch thick)
4 tablespoons extra-virgin olive oil

Steps:

  • Prepare a grill for high heat. Whisk together the oil, rosemary and a pinch each of salt and pepper.
  • Slice the apple horizontally into 1/4-inch-thick slices; brush the slices with the oil mixture and grill, covered, until grill marks appear about 1 minute per side.
  • Brush the chops with the oil mixture and grill, covered, for 1 minute; rotate the chops a half-turn without flipping, and grill, covered, for 1 minute more. Flip the chops and grill, covered, 1 minute; rotate and grill, covered, 1 minute more. Transfer the chops to a plate, cover with foil and let rest for 5 minutes before serving with the apple slices as garnish.

1 teaspoon each garlic powder, onion powder, ground cumin and ground mustard
1 teaspoon coarsely ground pepper
1/2 teaspoon ground chipotle pepper

Steps:

  • In a large saucepan, combine salt, sugar and 2 cups water; cook and stir over medium heat until salt and sugar are dissolved. Remove from heat. Add 2 cups ice water to cool brine to room temperature., Place pork chops in a large resealable plastic bag; add cooled brine. Seal bag, pressing out as much air as possible; turn to coat chops. Place in a 13x9-in. baking dish. Refrigerate 8-12 hours., Remove chops from brine; rinse and pat dry. Discard brine. Brush both sides of chops with oil. In a small bowl, mix rub ingredients; rub over pork chops. 3 scallions, white parts sliced into thin rounds
