1 1/2 teaspoons Worcestershire sauce
4 teaspoons mustard
1/2 teaspoon ground garlic
1 1/2 teaspoons coarse salt

Steps:

  • Preheat grill to medium-high heat (about 400˚F).
  • In a large mixing bowl, gently mix burger ingredients until combined. Shape into 1/4 pound patties.
  • Grill burgers for 5 - 6 minutes per side or until internal temperature reaches a minimum of 145˚F (160˚F for well done).
  • Remove from grill and immediately serve with your favorite burger toppings.

1 pound ground bison
1 pound ground beef sirloin
1 yellow onion, minced
4 cloves garlic, minced
2 tablespoons chopped fresh parsley
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon seasoning salt
1/4 cup ketchup
2 tablespoons Worcestershire Sauce
Freshly cracked black pepper, to taste
Kosher salt, optional
Olive oil, for cooking
2 tablespoons bacon fat or olive oil
1 yellow onion, sliced thin
Kosher salt and freshly ground black pepper, to taste
1/2 cup prepared mayonnaise
2 tablespoons chopped fresh parsley
4 cloves raw garlic, chopped
Kosher salt and freshly ground black pepper, to taste
4 slices Wisconsin Cheddar cheese
4 burger buns
1 cup fresh arugula greens
4 cornichon pickles

Steps:

  • To make the burgers:
  • In a large bowl mix the bison, beef sirloin, onions, garlic, and parsley until just combined. Add in the onion powder, garlic powder, seasoning salt, ketchup, Worcestershire, and a few turns of freshly ground black pepper. Add it all to the meat mixture and mix well to combine. Heat a large saute pan over medium-high heat and cook a small portion of the meat. Taste the cooked beef to see if you need to add salt. Add salt to the meat mixture to taste. Divide the meat into 4 evenly portioned round patties and set aside.
  • To make the onions:
  • Heat the bacon fat over medium-high heat in a large saute pan and add the onions. Cook for 1 minute, then season with salt. Cook the onions, stirring a lot, until they start to turn brown. If the onions start sticking to the pan and turning too dark, pour in a spoonful of water and scrape with a wooden spoon to pull them off the pan. Continue to cook and stir the onions until they're dark brown and caramelized, about 8 to 10 minutes. Turn off the heat and set aside.
  • To make the mayonnaise:
  • In a bowl, combine the mayonnaise, parsley, garlic, salt, and pepper, to taste and mix well.
  • To serve:
  • Reheat the large skillet over medium-high heat and drizzle in some olive oil. Heat the olive oil then place the burger patties in the pan. Cook for 3 minutes on each side for medium-rare. Top the burgers with a slice of cheese. To assemble, spread some garlic mayo on the bottom of the toasted bun. Put the burger on the mayo, top with caramelized onions, and then arugula. Cover with a bun top. Stick a toothpick into a cornichon and then stick into the top of the burger and serve.

  • Preheat a grill to medium high. Form ground beef (preferably chuck) into 6-ounce patties and make an indentation in each. Season the patties on both sides with salt and pepper.   • Preheat the grill to medium heat, or 350 F. Divide the ground bison into 3 or 4 equal pieces, gently flattening to form a patty from each piece. Spritz both sides of each patty with cooking spray, then season lightly with burger rub or seasoned salt.

3 tablespoons Worcestershire sauce
4 dashes hot sauce (such as Tabasco®)
1 pinch granulated garlic
1 pinch ground black pepper

4 hamburger buns, split and toasted

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Mix bison, Panko crumbs, egg, Worcestershire sauce, hot sauce, garlic, and pepper together by hand in a bowl; form into 4 patties. Place patties on baking sheet, cover with aluminum foil, and refrigerate until chilled, about 15 minutes.

These make a nice change from beef burgers. The lean bison meat is balanced out by the pork leaving a juicy, flavourful burger. I've tried these with equal parts bison & pork and thought they were a bit too 'porky'. I think this mix is just right.

2 lbs ground buffalo meat
1 lb ground lean pork
1 large red onion
3/4 cup breadcrumbs
3 tablespoons Worcestershire sauce
2 tablespoons French mustard (seeded)
2 teaspoons garlic salt
1 teaspoon white pepper
1 teaspoon salt

Steps:

  • Wash your hands!
  • Finely chop the red onion and add to bison and pork in a large mixing bowl (the bigger the better). Mix together briefly by hand.
  • Add remaining ingredients and mix throughly by hand until mixture is homogenous. No egg necessary.
  • Form mixture into 10 equal balls. Place each ball individually onto plastic cling wrap and form into patties (nice and thick). Wrap patty in cling wrap and freeze for later use, or cook immediately on the barbeque.
  • Serve with whatever burger condiments you desire.

  • Prepare a hot grill.

12 slices bacon, cut in half
1 pound ground bison
½ cup dry bread crumbs
1 large egg
1 ½ tablespoons Worcestershire sauce
1 teaspoon Himalayan pink salt
1 teaspoon ground black pepper
4 slices sharp Cheddar cheese
4 Hawaiian-style hamburger buns
4 teaspoons mayonnaise, or to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; reserve bacon grease.
  • Mix bison, bread crumbs, egg, Worcestershire, salt, and pepper in a bowl until evenly combined. The mixture should be slightly sticky and easy to form. Split into 4 equal patties. Use some leftover bacon grease to moisten each side of the patties; this will inhibit them from sticking on the grill and adds a little flavor.
  • Cook patties on the preheated grill until browned, about 5 minutes on each side.
