GREEN BEANS WITH CARAMELIZED ONIONS AND ALMONDS

Green Beans with Caramelized Onions and Almonds image

Tyler Florence's Green Beans with Caramelized Onions and Almonds recipe for Food Network is a holiday meal essential.

Provided by Tyler Florence

Categories     side-dish

Time 55m

Yield 6 to 8 servings

Number Of Ingredients 8

Kosher salt
3 pounds green beans, trimmed of stem end
1/2 cup skin on sliced almonds
3 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
2 large onions, sliced thin
2 tablespoons chopped fresh thyme leaves
Freshly ground black pepper

Steps:

  • Fill a large high sided skillet with some water, adding enough to be just shy of the rim of the pan by about 1 inch. Place over high heat and bring up to boil; add a big pinch of salt and the green beans. Cook for about 5 minutes, the beans should still be crisp. Drain the beans and then run them under some cold water to stop them from cooking. Reserve the beans while you start the onions.
  • Return the skillet you cooked the beans in to the cook top over medium heat. Add the almonds and toast stirring every now and then until golden, about 3 to 5 minutes. Remove the almonds from the skillet and reserve. Return the skillet to the heat and add the butter and olive oil and heat until the butter has melted. Add the onions, season with salt and pepper, and cook stirring frequently until the onions caramelize, 20 to 25 minutes. Add the thyme, and cook for another 5 minutes. Add the cooked cooled green beans and almonds, and stir well to combine. Season with salt and pepper, to taste.

Oven Roasted Potatoes, Green Beans, Mushrooms and Onions with Thyme and Garlic image

A simple one sheet pan recipe for vegetables

Provided by Robyn Wright

Categories     Side Dish

Number Of Ingredients 8

1.5 lb small potatoes
2 lb fresh green beans
16 oz sliced mushrooms
1 Medium yellow onion
8 cloves garlic
6 sprigs fresh thyme
3 tablespoons olive oil
sea salt and fresh ground black pepper

Steps:

  • Preheat oven to 350° F. If you want them to cook a bit quicker you can do 400°, but I was cooking a roast at 350 so that's what I went with. Wash all of your vegetables. Cut the potatoes into quarters, slice mushrooms, half and slice the onion thinly, peel and roughly chop the garlic cloves. Add all of these vegetables to the baking sheet. Drizzle the olive oil over the top. Add the fresh thyme leaves, salt, and pepper. Toss well and spread into single layer. Roast for 30 minutes. While roasting, cut your green beans into thirds. After 30 minutes remove the pan from the oven and add the cut green beans. Toss well. Spread back out in a single layer and place back in the oven to roast for another 30 minutes.

  • To toast the slivered almonds, place them on a baking tray and bake at 350 degrees F for 5-10 minutes until golden brown. Watch carefully as they can burn quickly. Remove from oven and set aside.
  • To prepare the onions, cut them in half, chop the ends off, peel and then slice each half into approximately 1/4 inch slices.
  • Add the sliced onions to a large skillet with a pinch of salt and 2 tbsp of the vegetable broth. Heat the pan to medium-high heat. Cook, stirring often, for 8-10 minutes until the onions are a light golden brown. If the pan gets too dry, add more vegetable broth 1 tbsp at a time to deglaze the pan, scraping any browned bits off the bottom with a wooden spoon.
