Grilled Bacon Chops with Apricot Bourbon Glaze Recipe - (4.7/5) image

Provided by winefoot

Number Of Ingredients 7

4 boneless Canadian pork loin chops, 1 - 1 1/2" / 2.5 - 3.75 cm thick
Maple bacon flavoured seasoning, like ClubHouse (La Grille) brand
4 slices thick or extra thick cut bacon, partially cooked, drained and slightly cooled
1/2 cup apricot jam
1/2 cup lightly packed dark brown sugar
3 tablespoon Dijon mustard
2 tablespoon bourbon

Steps:

  • Shake seasoning onto both sides of chops. Wrap bacon slice around chop and secure with wooden toothpick. Repeat with remaining chops and bacon, set aside. In small saucepan, combine jam, brown sugar, mustard and bourbon, bring to a boil. Reduce heat; simmer 10 minutes. Remove glaze from heat; reserve half the glaze. Preheat barbecue on high. Reduce heat on one side to medium. On lightly oiled grill, sear chops over high heat side, 2-3 minutes per side. Slide chops over to lower heat side. Cook chops an additional 8-10 minutes, turning occasionally and brushing often with glaze. Remove chops from grill when internal temperature reaches 155˚F (68˚C). Tent loosely with foil and allow chops to rest 5 minutes. Remove toothpicks and serve chops with reserved glaze.

Time 15m

Yield 4 serving(s)

Number Of Ingredients 9

1 cup apricot jam
3 tablespoons cider vinegar
1 tablespoon soy sauce
1 teaspoon soy sauce
2 teaspoons fresh ginger, grated
2 garlic cloves, minced
1/4 teaspoon cayenne pepper
4 (2 lb) pork chops, 1-inch thick
salt and pepper, to taste

Steps:

  • Preheat grill to med-hot fire.
  • In a small pan, combine the jam and vinegar. Over a low heat, cook until jam melts. Stir the mixture constantly.
  • Add the soy sauce, ginger, garlic, cayenne pepper. Remove from heat. Separate the glaze into 2 small containers, and set aside. (One will be to glaze the pork chops as they are cooking, and the other will be to put on your chops at the table).
  • Trim pork chops. Lightly brush chops with oil.
  • Add pepper.
  • Place chops on a well-oiled grill.
  • Brush glaze on one side of chops, flip over chops, and cook 2-3 minutes.
  • Brush glaze on the other side, flip the chops over, and cook 2-3 more minutes on that side. (Throw the leftover glaze from this dish away).
  • Cut center to check for doneness. You want a light pink blush near the bone.
  • Add salt at the table.
  • Use remaining container of glaze on chops at the table.

GRILLED PORK TENDERLOIN WITH BOURBON GLAZE

Grilled Pork Tenderloin With Bourbon Glaze image

I served this over the summer when we had houseguests and everyone wanted the recipe. It's a Kentucky-style barbeque with a paprika-based rub first and then a delicious bourbon glaze to finish the tenderloin.I think this would be good with baby back ribs too!Prep time does not include marinading time.
