GLUTEN-FREE FLATBREAD (1 BOWL, 20 MINUTES!)

Gluten-Free Flatbread (1 Bowl, 20 Minutes!) image

Light, fluffy, and flavorful gluten-free flatbread, made in 1 bowl in just 20 minutes! The perfect companion for dips, spreads, wraps, and more!

Provided by Minimalist Baker

Categories     Side Dish     Snack

Time 20m

Number Of Ingredients 11

1 cup light coconut milk (canned), plus more as needed
1 Tbsp olive oil ((if oil-free, omit or try subbing tahini))
1 tsp apple cider vinegar
2 tsp baking powder
1/2 heaping tsp sea salt
3/4 tsp garlic powder
3/4 tsp dried oregano
1/2 cup coconut flour*
3/4 cup oat flour* ((ground from gluten-free oats))
3/4 cup potato starch ((NOT flour // potato starch is pretty key here for fluffy texture, so we recommend against subbing it out))
1/4 cup gluten-free all-purpose flour

Steps:

  • In a medium mixing bowl add light coconut milk, olive oil, and apple cider vinegar and whisk to combine.
  • Add baking powder, sea salt, garlic powder, and dried oregano and whisk to combine. The mixture will likely fluff up and foam from the reaction of the baking powder and apple cider vinegar. This is normal and good!
  • Next, add coconut flour, oat flour, and potato starch and stir with a wooden spoon to combine. Let rest 5 minutes uncovered.
  • At this point you should have a dough that is malleable and very slightly tacky but doesn't stick to your hands. The dough should start pulling away from the sides of the bowl when the right amount of moisture is achieved, and it shouldn't be crumbly at all. Add a bit more of each flour until you reach the right consistency.
  • Scoop out 1 ball of dough (~3 Tbsp in size) and place between two pieces of parchment paper. Use a rolling pin to roll into a thin oval shape slightly larger than 1/8-inch thick. For fluffier, thicker flatbread roll to slightly less than 1/4-inch thick and cook slightly longer. NOTE: If sticking or too tacky, add a light dusting of GF flour to the dough while rolling out (optional - shouldn't be necessary).
  • Heat a skillet (cast iron is best, or non-stick) over medium/medium-high heat. Once hot, spray or drizzle with a little oil. Then use hands to carefully transfer the dough to the pan. If it cracks at all, just carefully and quickly patch back together with your hands (be careful not to touch the hot skillet).
  • Cook for 2-3 minutes or until the underside is golden brown. Bubbles may form while it's cooking - that's normal and good. Flip carefully and cook for another 2-3 minutes. Lower heat as needed to ensure it doesn't burn. You'll know it's done when both sides are golden brown.
  • Repeat this process until all dough is used (~6 large or 10-12 mini flatbreads as the original recipe is written).
  • Store leftovers covered in the refrigerator or at room temperature for up to 2-3 days. To freeze, place cooked, cooled flatbread in a freezer-safe container or bag (adding parchment paper between each flatbread will prevent sticking) and freeze for up to 1 month. As with most bread, best when fresh.
  • To serve, either heat from frozen in a toaster oven, thaw overnight and then heat in a skillet, or microwave from frozen until warm.

GLUTEN-FREE PIZZA CRUST OR FLATBREAD

Gluten-Free Pizza Crust or Flatbread image

This recipe is for a crust that can be used for pizza or flatbreads. After 2 years of being GF, this is the best pizza crust/flatbread recipe I have. It is based on trial and error in an effort to improve other recipes. My kids say this is better than our homemade wheat flour crusts.

Provided by Allen Seidman

Categories     Bread     Pizza Dough and Crust Recipes

Time 1h

Yield 1

Number Of Ingredients 11

1 cup very warm water
½ teaspoon white sugar
2 teaspoons yeast
2 cups gluten-free flour blend
½ cup rice flour
1 tablespoon Italian seasoning
1 teaspoon xanthan gum
1 teaspoon unflavored gelatin powder
½ teaspoon salt
3 tablespoons apple cider vinegar
3 tablespoons olive oil

Steps:

  • Whisk water and sugar together in a bowl. Whisk in yeast. Let stand until yeast softens and begins to form a creamy foam, about 10 minutes.
  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Combine gluten-free flour, rice flour, Italian seasoning, xanthan gum, gelatin, and salt in the bowl of a stand mixer fitted with the paddle attachment. Whisk vinegar and olive oil into the yeast mixture; pour over flour mixture. Mix on high speed until a wet, sticky dough forms, about 6 minutes.
  • Transfer dough to the prepared baking sheet. Lay another sheet of parchment paper on top; smooth out dough to fill the baking sheet. Let dough rest, about 10 minutes.
  • Bake in the preheated oven until dough puffs up, 5 to 10 minutes. Peel parchment paper off the top. Continue baking until dough is golden brown and edges are cooked through, about 20 minutes.

GLUTEN-FREE PIZZA CRUST

Gluten-Free Pizza Crust image

Pizza. Need I say more. You don't need gluten for good pizza. This is gluten-free pizza.

Provided by Shauna Ahern

Yield 8 servings

Number Of Ingredients 10

350 grams All-Purpose Gluten-Free Flour Mix, recipe follows
2 1/4 teaspoons active dry yeast
1 teaspoon psyllium husk powder (see Cook's Note)
1 teaspoon kosher salt
2 tablespoons olive oil, plus more for sprinkling
1 large egg, at room temperature
3/4 cup warm water
400 grams millet flour
300 grams sweet rice flour
300 grams potato starch

Steps:

  • Combining the dry ingredients: Whisk together the flour mix, yeast, psyllium, and salt. Pour this mixture into the bowl of a stand mixer.
  • Finishing the dough: With the stand mixer running on low, add the olive oil, then the egg. Slowly, pour in the water. Here's the important part: gluten-free pizza dough will not look the same as gluten dough. It will be far wetter, even a little like pancake batter. As you pour the water, look for the dough to come together around the paddle. However, when your turn off the mixer, the dough should slump off the paddle immediately.
  • Letting the dough rise: Scrape the pizza dough into a large greased bowl. Cover it with plastic wrap and set the bowl in a warm place. Gluten-free dough does not rise as much as gluten dough. Instead, you are looking for the dough to hydrate fully and increase in size by about one-third. When the dough has risen a bit and has the texture of traditional dough, about 1 1/2 hours, you're ready to bake.
  • Preparing to bake: Heat the oven to 500 degrees F. If you have a pizza stone - and we recommend you do - put it in the oven now.
  • If you own a pizza peel, lay down a piece of parchment paper on it now. If you don't own one, put the parchment paper on a pizza pan or baking sheet. Put the dough down on the parchment paper then top it with another one the same size. Using your hands or a rolling pin, flatten the dough slowly and evenly. You want a pizza dough about 12 inches in diameter. Take the top piece of parchment paper off the pizza dough.
  • Sprinkle some olive oil over the top of the dough. Bake the dough in the oven until the edges are starting to brown and crisp and the top of the pizza is a little firm to the touch, 5 to 8 minutes.
  • Pull out the pizza dough and top with whatever toppings you desire.
  • Pour all the flours into a large container. (Restaurant supply stores sell large plastic containers that fit this purpose well. You could also use a large glass jar.) Shake and shake and shake harder until all the flours have become one color.

My go-to Gluten-Free Pizza Crust recipe is a simple staple for your Gluten-Free kitchen. Perfectly thick and chewy, and no kneading required.

Provided by Chrystal Carver

Categories     Breads/Muffins

Time 35m

Number Of Ingredients 8

3/4 cup warm water (between 110-120 degrees F)
1 tablespoon sugar
1 packet yeast (1/4 oz.)
2 cups (285g.) gluten-free flour blend (for this recipe I used Bob's Red Mill Gluten-Free 1-to-1)
1 teaspoon salt
1 large egg
1 tablespoons olive oil
1 teaspoon cider vinegar

Steps:

  • Set pizza stone or heavy baking sheet on lowest rack of oven, and preheat to 450°F.
  • Mix water, sugar, and yeast and let sit for 5 minutes, or until it looks foamy.
  • In electric mixer bowl, mix flour blend and salt. Add in egg, olive oil, vinegar, and yeast mixture.
  • Mix on low speed for 1 minute.
  • Using an oiled spatula, transfer the gluten-free pizza dough onto a piece of parchment paper. Using oiled hands, spread dough into a 10-12-inch round.
  • Bake for 8-10 minutes.
  • Add toppings and bake for an additional 8-10 minutes.
  • Enjoy hot.

  • Turn your oven to broil (500 degrees F) and place the top oven rack 6 inches from the top heating element. This is the oven rack you will be using.
  • In a medium sized mixing bowl, combine chickpea flour, water, oil, maple syrup if using, salt and additional seasonings if using. Whisk until no lumps remain then set aside to rest for 26 minutes. At that point, place an empty, un-oiled 10-inch cast iron skillet in the oven for 4 minutes. Allow the chickpea flour batter to continue to sit while the skillet heats for those 4 minutes. The batter will be resting for a total of 30 minutes.
  • Using two oven mitts, carefully remove the skillet from the oven and place on a heat-safe surface (I use my stovetop). Coat the bottom of the skillet with 1 teaspoon of olive oil. Carefully pour the rested batter into the pan ensuring it evenly coats the entire bottom (you may need to pick up the skillet using your oven mitts to swirl the batter around). Immediately place the skillet back in the broiler (6 inches from the top heating element) for 4 to 4.5 minutes. Watch carefully at the end to avoid burning. You want the crust to be golden brown around the edges and a bit golden in the center. Carefully remove the skillet from the oven and rest on a heat-safe surface. Cut and serve immediately. This flatbread is best when fresh but it can be cooled and stored in your refrigerator in an airtight container for 1-2 days.

  • Add 1 cup of uncooked (rinsed and drained or pre-washed) quinoa, 1/2 tsp Italian seasonings, 1 cup of water, 1 garlic clove, and 1/2 tsp of salt to a high powered blender. Blend the mixture until the batter is smooth.
  • Line a large baking tray with unbleached parchment paper and pour the batter onto the tray. Use a silicone spatula to smooth out the dough evenly into a large oval shape. Try not to spread the flatbread too thin, or it will get very crispy on the edges. Aim for 1/4 inch thickness.Sprinkle a pinch of Italian seasonings over the dough for extra flavor.

  • Preheat the oven to 450ºF, and place a 10-inch skillet inside the oven as it preheats. To prepare the Socca, combine the chickpea flour, water, olive oil, and salt in a large bowl. Use a whisk to stir it together, breaking up any clumps, and set it aside to let it rest while you slice the vegetables.
  • Line a large baking sheet with parchment paper. Slice the zucchini, tomatoes, and red onion into thin slices (about 1/4-inch thick) and arrange them in a single layer on the prepared pan.
  • Use oven mitts to remove the cast iron skillet from the hot oven, and add 1/2 tablespoon of olive oil into the pan. Swirl it around to grease the pan well, then pour the Socca batter in. Place the pan on the top shelf of your oven, and place the pan of roasted vegetables on the bottom shelf. Bake both at the same time, for 20 to 25 minutes, or until the socca looks golden around the edges, and the veggies look tender.
  • While you wait on the socca and veggies to cook, prepare the white bean spread. Add all of the ingredients to a blender, and blend until smooth. Add more water, just 1 tablespoon at a time, if needed to help everything blend smoothly.
