BALSAMIC GRILLED ASPARAGUS

Categories     side-dish

Time 8h20m

Yield 4 servings

Number Of Ingredients 8

1/2 cup extra-virgin olive oil
1/2 cup balsamic vinegar
3 medium shallots, thinly sliced (about 1 cup)
2 cloves garlic, lightly smashed
2 sprigs fresh oregano
2 bunches medium asparagus (about 2 pounds), woody ends trimmed and discarded
Kosher salt and freshly ground black pepper
1/4 cup fresh flat-leaf parsley leaves, roughly chopped

Steps:

  • Stir together the olive oil, balsamic vinegar, shallots, garlic and oregano in a medium bowl. Pour the marinade into a 1-gallon resealable plastic storage bag, add the asparagus and seal the bag closed. Place the bag in a bowl or on a plate (just in case it leaks) and marinate in the refrigerator for 8 to 24 hours, flipping a couple of times.
  • Preheat an outdoor grill to medium heat. While the grill heats up, remove the asparagus from the marinade, allowing any excess marinade to drip off. Season liberally on all sides with salt and pepper.
  • Place the asparagus on the hot grill and cook, flipping as needed, until crisp-tender and charred in spots, about 8 minutes. Transfer to a platter, garnish with the chopped parsley and serve immediately.

GRILLED RED ONIONS WITH BALSAMIC VINEGAR AND ROSEMARY

Grilled Red Onions With Balsamic Vinegar and Rosemary image

This recipe appeared in Gourmet a decade ago. I recently came upon it on epicurious.com and will try it on my George Foreman Grill.

Provided by justcallmetoni

Categories     Onions

Time 36m

Yield 4 serving(s)

Number Of Ingredients 5

2 teaspoons chopped fresh rosemary leaves
2 tablespoons balsamic vinegar
1 tablespoon olive oil
2 lbs red onions, cut crosswise into 1/2-inch-thick slices
1/3 cup fresh parsley leaves, chopped fine

Steps:

  • Prepare outdoor or indoor grill.
  • In a very small saucepan heat rosemary and vinegar over low heat until hot, but not boiling. Remove pan from heat and cover. Let stand for 20 minutes so that the vinegar becomes infused with the rosemary.
  • In a metal measuring cup heat oil over low heat or microwave until warm. (Heating thins oil, making it easier to brush sparingly over onions.) If you are using an indoor grill, place slices on the grill. For an outdoor grill, use a grilling basket to keep onion slices from falling through. If you don't have a basket, place a soaked bamboo skewer through the rings parallel to the cuts so that they do not tumble through the grill. Brush both sides of each slice lightly with oil. Season onions with salt and pepper and grill 4 to 6 minutes on each side, or until lightly charred and softened.
  • Transfer onions as grilled to a large bowl, separating rings, and toss with vinegar mixture, parsley, and salt and pepper to taste.
  • Serve onions warm or at room temperature.

Grilled Asparagus and Red Onions with Parmesan and Balsamic Vinegar image

Chef Jim Coleman finishes these asparagus and eggplant skewers with a drizzle of garlic and shallot flavored vinaigrette and shavings of Parmesan cheese.

Provided by Allrecipes Member

Yield 8

Number Of Ingredients 13

¾ pound asparagus, trimmed
2 small Italian eggplants (sliced into 3/4 inch thick rounds)
6 each wooden skewers (8 inch long) soaked in water
1 large red onion, cut into four 3/4 inch thick slices
1 tablespoon Filippo Berio Regular Olive Oil (for brushing and grilling)
2 cups baby spinach, washed and dried
⅓ cup Filippo Berio Extra Virgin Olive Oil
¼ cup balsamic vinegar
⅓ cup Parmesan shavings, shaved with a vegetable peeler
1 pinch kosher salt
1 pinch black pepper
½ tablespoon minced garlic
½ tablespoon minced shallot

Steps:

  • Divide asparagus into 2 bunches. Align each bunch in a flat row with ends at the same level. Thread 2 skewers crosswise through each bunch in lower third of stems, where thickest, to form a solid mat. Thread remaining 2 skewers horizontally through onion slices, 2 per skewer. Rinse eggplant in a colander with tbs kosher salt. Pat dry with towel. Brush asparagus, eggplant, and onions with 1 tbs regular olive oil and sprinkle with salt and pepper to taste.
  • To Make Vinaigrette: In a glass Bowl combine Balsamic vinegar, kosher salt, black pepper, garlic, and shallots; mix well. Slowly drizzle in the olive oil while whisking.
  • Grilling: Preheat grill. Grill eggplant, onions, and asparagus uncovered, on a lightly oiled rack (using regular olive oil) over moderate heat, brushing occasionally with 1 tbs regular olive oil turning, until tender, 8-12 minutes total.
  • Remove vegetables from skewers and drizzle with vinaigrette. Top with baby spinach and sprinkle with Parmesan shavings.

ASPARAGUS WITH BACON, RED ONION, AND BALSAMIC VINAIGRETTE

Asparagus With Bacon, Red Onion, and Balsamic Vinaigrette image

From America's Test Kitchen. This looks just wonderful. "To prepare the asparagus for this salad, we found that broiling concentrates the flavor of the asparagus and lightly caramelizes the peel. We prefer to use thin (under 5/8-inch) asparagus under the broiler-this lets us skip the peeling step and allows the spears to cook more evenly."

Time 35m

Yield 6 serving(s)

Number Of Ingredients 8

2 lbs thin asparagus, tough ends trimmed (2 bunches)
1 tablespoon olive oil
6 slices bacon, cut into 1/4-inch strips (about 6 ounces)
2 tablespoons minced red onions
1/4 cup balsamic vinegar
1 tablespoon minced fresh parsley leaves
1/4 cup extra virgin olive oil
salt & fresh ground pepper

Steps:

  • Adjust oven rack to about 4 inches from heating element and heat broiler.
  • Toss asparagus with oil and salt and pepper, then lay spears in single layer on heavy rimmed baking sheet. Broil, shaking pan halfway through to turn spears, until asparagus is tender and lightly browned, 8 to 10 minutes.
  • Cool asparagus 5 minutes and arrange on serving dish.
  • Fry bacon strips in medium skillet over medium heat until brown and crisp, about 6 minutes. Using slotted spoon, transfer bacon to paper towel-lined plate and set aside.
  • Whisk onion, vinegar, parsley, and oil in small bowl; season to taste with salt and pepper. Drizzle over asparagus, sprinkle with bacon, and serve immediately.

GRILLED ASPARAGUS WITH BALSAMIC SYRUP

Grilled Asparagus With Balsamic Syrup image

I made this tonight for dinner and it was wonderful. Original recipe is from my Webber Cookbook and I've changed it up for us.

Provided by Nimz_

Categories     Vegetable

Time 30m

Yield 2-3 serving(s)

Number Of Ingredients 6

1/2 cup balsamic vinegar
1 garlic clove, smashed
1/2 lb medium asparagus (about 20 spears)
1 1/2 tablespoons hot pepper oil (I use my Hot Pepper Oil)
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper

Steps:

  • In a small saucepan bring the vinegar to a simmer over medium heat.
  • Reduce the heat until just a few bubbles break through the surface.
  • Add the smashed garlic.
  • Cook at a slow simmer until about 1/4 cup of vinegar remains (about 20 minutes).
  • If you cook too quickly or it reduces too much, it will turn bitter rather than sweet.
  • Remove the sauce pan from the heat and let cool to room temperature (The syrup will continue to thicken as it cools).
  • Heat grill to medium heat.
  • Remove and discard all tough, woody ends from the asparagus spears.
  • Wash and pat dry.
  • Lightly coat the asparagus with the Hot Pepper Oil.
  • Season evenly with the salt and pepper.
  • Brush the cooking grate clean.
  • Lay the asparagus perpendicular to the bars on the grate.
  • Grill over direct medium heat with the lid closed as much as possible, until lightly charred and crisp-tender, 4-6 minutes, rolling the spears a couple of times and swapping their positions as needed for even cooking.
  • Arrange the asparagus on a platter or individual plates.
  • Remove the garlic from the syrup.
  • If the syrup is stiff, warm it briefly over medium heat.
  • Drizzle some of the syrup over the spears (you may not need all of it.).
  • Season with more salt, if desired.
  • Serve warm or at room temperature.
