GRILLED ASIAN FLANK STEAK

- In a small bowl, combine the first 8 ingredients. Pour 3/4 cup marinade into a shallow dish; add the steak and turn to coat. Cover; refrigerate for 4 hours or overnight. Cover and refrigerate remaining marinade. , Drain and discard marinade. Grill steak, covered, over medium heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting occasionally with reserved marinade. To serve, thinly slice across the grain.

Another recipe I am posting for safe keeping found in my Simple and Delicious magazine. With grilling season started down here in Florida, love trying new recipes for the grill. Time doesn't include the marinading time, so make sure to make it up early in the day or the night before.

- In a small bowl, combine the first eight ingredients. Pour 3/4 cup marinade into a large resealable plastic bag; add the steak. Seal bag and turn to coat; refrigerate for 4 hours or overnight. Cover and refrigerate remaining marinade.
- Drain and discard marinade. Grill steak, covered, over medium heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°; medium, 160°; well-done, 170°), basting occasionally with reserved marinade. To serve, thinly slice across the grain.

GRILLED ASIAN-INFLUENCED RIB-EYE STEAKS
Delicious grilled steaks. Rib-eyes have the perfect amount of fat for grilling. These have always made my friends very happy! Serve with steamed vegetables.

- Combine all marinade ingredients and whisk together. Lay steaks flat in a glass baking dish. Let steaks come to room temperature. Stab meat with a fork - about three times for each steak.
- Pour marinade over steaks. Marinate briefly - 15 to 30 minutes. Turn steaks over in marinade to coat both sides.
- Heat grill on high for 10 minutes. Quickly grill steaks on high heat to char - approximately 4 minutes on each side.
- Take steaks off grill and let them rest at least 5 minutes before eating.
- Sprinkle extra cilantro and black pepper on top and serve.

GRILLED KOREAN STEAK AND RICE BOWLS
The key to this very flavorful and easy meal is 6-10 hours of hands off time thanks to a quick blended marinade. Asian pear does double duty as a tenderizer in the marinade and adds a sweet crunch to the rice bowl.

- Cut the steak into 3 to 5 pieces of the same thickness. Carefully slice any pieces thicker than 1/2 inch in half horizontally to create 2 thinner pieces. Put in a large nonreactive bowl or large resealable bag.
- Combine the soy sauce, sesame oil, vinegar, garlic, sugar, a pinch of salt and a generous grinding of pepper in a blender. Cut the pear in half; roughly chop 1 half and add it to the blender. (Refrigerate the other pear half for serving.) Puree the mixture in the blender until smooth, then pour over the steak; toss. Seal the bag and refrigerate 6 to 10 hours.
- Preheat a grill to high (make sure the grates are very clean). Meanwhile, cook the rice as the label directs.
- Remove the steak from the marinade, letting the excess drip off. Strain the marinade into a small pot and bring to a boil over medium heat. Simmer until slightly thickened, 2 to 3 minutes; set the sauce aside. Season the steak pieces with salt and pepper and place on the hot grill. Cook, flipping and moving the pieces occasionally to prevent flare-ups, until lightly charred, 5 to 8 minutes for medium doneness, depending on the thickness. Transfer the steak to a cutting board and let rest about 5 minutes.
- Cut the remaining pear half into matchsticks. Divide the lettuce among shallow bowls, piling it to one side; top with the kimchi and pear. Add the rice to the other half of the bowls. Slice the steak and add to the bowls; sprinkle with the scallions. Drizzle with the sauce.

GRILLED ASIAN FLANK STEAK
Pinot Noir from Oregon's Willamette Valley goes great with this fruity grilled, tender sweet and spicy steak. Wrap it in a tortilla or over rice.

- Combine all marinade ingredients in a storage zip lock bag. Mix well.
- Add flank steak and refrigerate for 3 to 6 hours, turning occasionally to distribute marinade.
- Remove flank steak from the marinade. Reserve marinade. Place steak in center of cooking grate and grill for 12 to 16 minutes, or until desired doneness, turning once halfway through grilling time. Occasionally brush lightly with remaining marinade while grilling. Remove steak when done and hold in a warm place for 5 to 7 minutes. Slice thinly on the bias for serving.
- Meanwhile, bring remaining marinade to a boil and simmer for 5 minutes. Pour over steak.
GRILLED ASIAN FLANK STEAK WITH SWEET NAPA SLAW
This is from Bon Appetit. I love flank steak and often make it marinated with equal parts soy sauce, vinegar and oil and then grill after 24 hours. This is a nice variation and the slaw is good too!

- Mix soy sauce, oil, 3 teaspoons ginger and garlic in a resealable plastic bag. Add flank steak and seal bag; turn to coat. Marinade for 30 minutes to overnight as desired. Let stand at room temperature 30 minutes before grilling.
- Stir sugar and vinegar in a small saucepan over medium heat until sugar dissolves; remove from heat. Add jalapenos and remaining 2 teaspoons ginger. Place cabbage and 1/2 cup green onions in a medium bowl. Pour vinegar mixture over and toss to coat. Season with salt and pepper. Let stand while grilling steak, tossing occasionally.
- Grill steak over medium heat BBQ until cooked to desired doneness, about 6 minutes per side for medium-rare. Transfer to work surface. Let rest for 10 minutes. Slice steak thinly against the grain. Serve with slaw and sprinkle 1/4 cup green onions over all for garnish.

- Score steak on both sides with shallow cross-cuts; place in shallow dish.
- Mix remaining ingredients; pour over steak. Turn to evenly coat both sides of steak. Refrigerate 2 hours to marinate.
- Heat grill to medium-high heat. Remove steak from marinade, discard marinade. Grill steak 8 to 10 min. on each side or until done. Let stand 5 min. before cutting across the grain into thin slices.
