AIR FRYER CHINESE SWEET AND SOUR PORK
Skip takeout and make your own sweet and sour pork at home. I like to toss some egg rolls in the air fryer while it is hot so that the meal has that full Chinese takeout feel to it. Serve over rice if desired.

Steps:
- Place pork, cornstarch, and sesame oil in a bowl and toss to coat. Let sit for 5 minutes.
- Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
- Spray the basket of the air fryer with cooking spray. Place pork in the basket of the air fryer and spray top of pork with cooking spray.
- Cook for 10 minutes. Shake the basket and cook pork until desired crispness, about 10 minutes more.
- While the pork is cooking, combine sugar, vinegar, ketchup, and soy sauce in a saucepan over medium-high heat. Whisk constantly until sugar is dissolved and mixture comes to a boil. Reduce heat to low and keep sauce warm until ready to use.
- Transfer pork to a bowl. Pour sauce on top of the pork and toss to coat.

- In a large saucepan, combine the first 8 ingredients. Bring to a boil; reduce heat. Simmer, uncovered, until thickened, 15-20 minutes, stirring occasionally., Preheat air fryer to 350°. Sprinkle pork with salt and pepper. Place pork on greased tray in air-fryer basket. Cook until pork begins to brown around edges, 7-8 minutes. Turn; pour 1/4 cup sauce over pork. Cook until a thermometer inserted into pork reads at least 145°, 10-12 minutes longer. Let pork stand 5 minutes before slicing. Serve with remaining sauce. If desired, top with sliced green onions.

SWEET AND SOUR DEEP FRIED PORK
This is from Chinese Cooking by Deh-ta Hsiung. A book I have had for over 20 years, this is one of my favourite recipies from that book. It is a little fiddly, but is well worth the effort. I haven't tasted better in a restaurant. Serve with plain boiled rice.

Steps:
- Mix the pork with the salt and the brandy and marinate for 15 minutes.
- Add a beaten egg and the cornstarch and blend well.
- Mix together the sauce ingredients.
- Heat the oil in a wok or saucepan.
- Coat each piece of meat with the flour and deep fry for 3 minutes.
- Remove the wok from the heat, leave the meat in the oil for a further 2 minutes before removing with a perforated spoon.
- Heat the oil again, Re-fry the meat with the bamboo shoots for 2 minutes and remove and drain.
- Pour off excess oil, leaving about 1 tablespoon in the wok or saucepan.
- Add the spring onion and green peppers.
- Then add the sweet and sour sauce mixture and stir until it thickens.
- Add the pork and the bamboo shootsm blend well and serve hot.
