Crispy filo pastry makes a light base for a vegetarian tart filled with Mediterranean veg and feta

2 tbsp olive oil
1 aubergine , sliced
2 courgettes , sliced
2 red onions , cut into chunky wedges
3 large sheets filo pastry
10-12 cherry tomatoes , halved
drizzle of balsamic vinegar
85g feta cheese , crumbled
1 tsp dried oregano
large bag mixed salad leaves and low-fat dressing, to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Pop 33 x 23cm baking tray in the oven to heat up. Brush a griddle pan with about 1 tsp of the oil and griddle the aubergines until nicely charred, then remove. Repeat with the courgettes and onions, using a little more oil if you need to.
  • Remove the tray from the oven and brush with a little oil. Brush a large sheet of filo with oil, top with another sheet, add a little more oil and repeat with the final sheet. Transfer the pastry to the hot tray, pushing it into the edges a little.
  • Arrange the griddled veg on top, then season. Add the tomatoes, cut-side up, then drizzle on the vinegar and any remaining oil. Crumble on the feta and sprinkle with oregano. Cook for about 20 mins until crispy and golden. Serve with the dressed mixed salad leaves.

This is a great meat-free recipe. Barbecuing a whole block of feta is a really interesting way to use it - you get a wicked texture contrast between the beautifully golden outside and the soft, creamy centre. The smoky flavour adds a subtle but beautiful twist to this delicious summery dish.

½ a bunch of fresh oregano
½ a bunch of fresh flat-leaf parsley
2 red onions
1 large aubergine
150 g feta cheese
olive oil
3 courgettes (a mixture of yellow and green)
2 handfuls of mixed tomatoes
1 bulb of garlic
50 g shelled pistachios
2 tablespoons runny honey
extra virgin olive oil
TABBOULEH
250 g cracked wheat
1 bunch of fresh mint
1 big bunch of fresh flat-leaf parsley
½ a cucumber
1 lemon

Steps:

  • Light your barbecue and give the coals time to get nice and hot.
  • Pick the oregano and parsley leaves, peel and slice the onions into wedges, prick the aubergine all over with a fork and halve lengthways.
  • Add the feta to a small bowl with half the oregano leaves, a drizzle of olive oil and a good pinch of sea salt and black pepper. Set aside to marinate while you prepare the rest of the dish.
  • Next make the tabbouleh. Cook the cracked wheat according to the packet instructions, then rinse and drain. Set it aside to cool a little.
  • Pick and finely chop the mint and parsley, then finely chop the cucumber.
  • Once the cracked wheat has cooled, mix in the mint, parsley and cucumber, a good squeeze of lemon juice and a good pinch of salt and pepper. Have a taste and tweak the seasoning to your liking, then cover and set aside.
  • Once your barbecue is hot enough to start cooking, grill all of the vegetables and the garlic and, once beautifully charred on both sides, transfer them to a chopping board.
  • Chop up all the veg together, squeezing the garlic cloves out of their skins and squishing the tomatoes. Roughly chop the parsley and remaining oregano leaves into the vegetables, season and drizzle with olive oil.
  • Carefully griddle the whole marinated feta on the barbecue for about 3 minutes (this will depend how hot your barbecue is), or until golden and crispy, then gently turn and cook for another 1 to 2 minutes.
  • Toast the pistachios in a small pan over a medium heat until lightly golden, then spoon over the honey and allow the nuts to caramelise, tossing regularly to stop them from catching in the pan (do not be tempted to touch them because they will be very hot!).
  • After a couple of minutes, tip them onto a sheet of oiled greaseproof paper to harden and cool, then roughly chop and leave to one side.
  • Spoon the tabbouleh onto a large serving dish, then top with the chopped vegetables.
  • Place the griddled feta in the centre, drizzle with a little extra virgin olive oil and scatter over the crispy smashed pistachios. To serve, crumble the feta over the top. Delicious served with toasted flatbreads.

2 sheets pastry dough or 2 sheets pie dough
2 tablespoons olive oil
1 small green bell pepper
1 small zucchini
1 medium carrot
1 cup chopped portabella mushroom
2 teaspoons herbes de provence
4 -6 ounces feta
salt and pepper

Steps:

  • Preheat oven to 350 degrees. Use a circle cookie cutter to create small rounds out of dough. Line each muffin tin cup with dough and set aside.
  • Chop all vegetables into ¼" cubes. Heat the oil in a large skillet over medium heat and add vegetables, herbs de Provence, and salt and pepper. Saute until veggies are just beginning to become tender, about 5 minutes. Remove from heat and fold in the feta cheese quickly before scooping into the prepared muffin tins.
  • Fill the tins above the brim of each pastry shell as the vegetables will cook down. Bake for 25-30 minutes until crust is golden brown. Remove and let cool slightly before serving.

2 red onions, thickly sliced
2 courgettes, thickly sliced
1 aubergine, halved and thickly sliced
1 red and 1 yellow pepper, thickly sliced
4 tbsp olive oil
salt and freshly ground black pepper
300g/10½oz couscous
300ml/10fl oz hot vegetable stock
4 tbsp roughly chopped flatleaf parsley
4 tbsp roughly chopped coriander
1 tbsp balsamic vinegar
200g/7oz feta, crumbled
1 red chilli, deseeded and finely chopped

Steps:

  • Heat a griddle pan over a high heat or prepare your barbecue until medium hot.
  • Mix the onions, courgettes, aubergine and peppers in a bowl and drizzle with the oil. Season well with salt and pepper and mix well.
  • Meanwhile, put the couscous in a large bowl. Pour in the stock, stir and cover with cling film. Soak for 12-15 minutes.
  • Griddle or barbecue the vegetables in batches for 8-10 minutes, or until just tender.
  • Fluff up the couscous with a fork, then add the herbs, vinegar and grilled vegetables. Stir well, then spoon onto a large platter. Sprinkle with the feta and chilli and serve.

125 g self raising flour
50 g whole meal flour
75 g chilled butter, diced
3 tablespoons cold water
1 red pepper, cored, deseeded and cut into thick strips
1 onion, cut into wedges
3 tomatoes, halved
1/4 butternut squash, peeled and cut into chunks
1 carrot, cut into chunks
2 garlic cloves, chopped
4 small rosemary sprigs
125 g feta cheese, cubed

Steps:

  • Preheat the oven to 200°C.
  • Mix the flours then rub in the butter. Add the water and mix to a firm dough. Knead briefly then chill for 30 minutes.
  • Mix all the vegetables in a roasting tin and add the garlic and rosemary. Sprinkle over some dried mixed herbs if you like. Roast for 35 minutes.
  • Meanwhile, roll out the pastry and place in a 23cm (9 inch) dish. Cover the pastry with parchment paper and fill the dish with baking beans to hold it down. Bake blind for 15 minutes, then remove the paper and beans and bake for another 5 minutes.
  • Fill the pastry case with the vegetables and arrange the feta on top. Bake for another 10 minutes then serve.

These are just to die for!! They are great as an entree, a light lunch or dinner - with salad and bread. I found the recipe in the gardening magazine "Burke's back yard". I used phyllo pastry and tied them up. Use whatever veggies you like - eggplant, broccoli, pumpkin, swede, parsnip etc., world's your oyster kid!

600 g kumara or 600 g sweet potatoes
2 red capsicums
2 zucchini
2 red onions
olive oil flavored cooking spray
3 sheets shortcrust pastry
100 g creamy feta, crumbled
4 eggs
1/2 cup cream

Steps:

  • Preheat the oven to 180°C
  • Peel the kumara and cut into 3cm chunks. Cut the capsicums into large flat pieces, discarding the seeds and membranes. Halve the zucchini lengthways and cut into 3cm lengths. Peel the onions and cut into 8 wedges.
  • Arrange all the veggies on 2 lightly oiled baking trays and spray with olive oil. Bake for 45 minutes until tender and golden brown, turning and moving them around a few times.
  • Set aside to cool, then peel the capsicums and cut into smaller pieces.
  • Use a saucer as a guide to cut 6 x 15cm rounds form the pastry sheets. Line 6 lightly greased 9.5cm (base measurement) 1 cup capacity pie dishes with the pastry.
  • Place a sheet of baking paper over the pastry in each dish and fill with dry rice or beans. Blind bake for 15 minutes then remove the paper and beans and bake a further 5 minutes. Cool before filling with veggies and feta.
  • Divide the vegetables and feta between the prepared pastry cases. Stand the pie dishes on a large oven try. Whist the eggs and cream together with a fork or whisk, and pour over the filling.
  • Bake for 35 minutes until set.
  • These can be made 1 day in advance. Can be served warm or at room temperature. Try a nice fresh salad and some crusty bread to go with it!
