BREAKFAST FRENCH BREAD PIZZA

We took a classic French bread pizza and transformed it into a hearty breakfast fit for any day of the week. Crispy bacon, scrambled eggs, lots of melty cheese and a few dashes of hot sauce make this dish both satisfying and fun!

Number Of Ingredients 9

1 loaf soft French or Italian bread (about 12 ounces), halved lengthwise
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
8 slices bacon (about 6 ounces)
8 large eggs
2 scallions, thinly sliced
1/4 cup prepared spicy mayonnaise, such as Sriracha or chipotle mayo
6 ounces mild Cheddar, shredded on the large holes of a box grater (about 1 1/2 cups)
Hot sauce, for serving

Steps:

  • Preheat the broiler. Cut each piece of bread in half crosswise, then place cut-side-up on a rimmed baking sheet. Brush with the olive oil and season with a pinch each of salt and pepper. Broil until lightly toasted and browned at the edges, about 2 minutes.
  • Meanwhile, cook the bacon in a medium nonstick skillet over medium heat until browned and crispy, turning as needed, 6 to 8 minutes. Remove to a paper towel-lined plate to drain; discard any bacon fat in the skillet.
  • Whisk the eggs, half the scallions, 1/4 teaspoon salt and several grinds of pepper in a large bowl, then add to the warm skillet. Cook, stirring with a heatproof silicone spatula, until the eggs are just set and form large, soft curds, 2 to 3 minutes. Remove from the heat.
  • Spread the spicy mayonnaise evenly on top of the toasted bread, then sprinkle with about half of the Cheddar. Place 2 pieces of bacon on each pizza. Dividing evenly, top with the scrambled eggs and then the remaining cheese. Return to the broiler and cook until all the cheese has melted, about 1 minute. Top each pizza with the remaining scallion and serve with a few dashes of hot sauce.

SUNNY'S EASY BACON 'N' EGG BREAKFAST PIZZA

Number Of Ingredients 8

4 ounces pizza dough (1/4 of a 1-pound pizza dough ball)
2 strips crispy cooked bacon
1/3 cup marinara, pizza or arrabbiata sauce
2 tablespoons sambal oelek or harissa
2 tablespoons maple or sugar cane syrup
1 cup shredded cheese (mozzarella, Monterey Jack, Cheddar, Swiss, etc.)
2 large eggs, at room temperature
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F or prepare the grill for indirect cooking at 450 degrees F. If using a pizza stone, position it on the center rack in the oven.
  • Flatten and form the pizza dough into a circle and place in an ovenproof nonstick pan. Bake or cook on the grill or put the dough directly on the grill grates over indirect heat. Cook until the dough becomes rigid and slightly golden, about 10 minutes. Remove and set aside.
  • Break up the bacon into small bite-size pieces into a small bowl. Mix in the marinara sauce, sambal and maple syrup.
  • Add the sauce to the partially baked pizza round, then add the cheese, making a bit of a well in the center. Crack and add the eggs to the well. Place back on the grill over the indirect heat or in the oven and cook until the eggs are set, about 10 minutes. Remove the pan from the grill or oven and season the yolks with fresh black pepper and a pinch of salt. Remove the pizza from the pan, slice into four pieces and serve warm.

1 storebought pizza dough
2 tablespoons butter, melted
4 tablespoons Cinnamon-Sugar, divided, recipe follows
2 cups mascarpone cheese
1 tablespoon heavy cream
2 tablespoons lemon juice
1 teaspoon lemon zest (from 1 lemon)
2 cups mixed berries
1 vanilla bean
1/2 cup sugar
1 tablespoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Using a rolling pin, roll out the pizza dough to a thickness of about 1/4 inch. Transfer the pizza dough to the lined baking sheet and brush the dough with the melted butter. Sprinkle with 2 tablespoons Cinnamon-Sugar and bake until golden brown, about 10 to 15 minutes. Cool the pizza crust on a wire rack.
  • Meanwhile, in a medium bowl, mix together the cheese, cream, lemon juice, and zest.
  • Spread the cheese mixture over the cooled crust. Top with mixed berries and sprinkle with the remaining Cinnamon-Sugar. Slice like a pizza and serve.
  • Cut the vanilla bean in half, lengthwise. Using the back of a knife, scrape along the inside of the vanilla bean to collect the seeds. Scrape vanilla bean seeds into a small bowl. Add sugar and cinnamon and stir to combine. Set aside in a small serving bowl.

3 slices thick-cut bacon, sliced into 1/2-inch pieces
1 small red onion, sliced
Kosher salt and freshly ground black pepper
1/4 cup sun-dried tomatoes packed in oil, chopped
1 tablespoon fresh oregano leaves, chopped
1 clove garlic, minced
One 9- by 11-inch flatbread, such as lavash or four 6-inch round flatbreads
1/2 cup shredded provolone
1/2 cup whole milk ricotta
1 tablespoon vegetable oil
4 large eggs
Fresh basil leaves, torn

Steps:

  • Preheat the oven to 425 degrees F. Cook the bacon in a large nonstick skillet over medium heat until the fat is rendered and the bacon is crisp, about 8 minutes. Remove using a slotted spoon to a paper-towel-lined plate. Add the onions to the bacon drippings and cook until very soft, about 10 minutes. Add the sun dried tomatoes, oregano and garlic. Cook until fragrant, about 2 minutes.
  • Brush the flatbread with some of the sun-dried tomato oil, and then spread the onion mixture on the flatbread. Sprinkle with the bacon and provolone and spoon the ricotta in large dollops over the surface. Place the pizza in the oven and bake until the edges of the flatbread are crisp and the cheese is melted and lightly browned, about 10 minutes.
  • Meanwhile, wipe out the skillet used to cook the onions. Heat the skillet over medium heat and add the oil. Carefully break the eggs into the skillet, sprinkle with salt and pepper and cook until the whites are set, 4 to 5 minutes.
  • If using lavash, cut the pizza into 4 pieces. Place a fried egg on each piece. Scatter the torn basil leaves over the top and serve immediately.

2 ounces reduced-fat feta cheese, crumbled (1/3 cup)

Steps:

  • Preheat oven to 450°F.
  • In a large nonstick skillet, heat 1 teaspoon of oil over medium heat. Add spinach, in batches if necessary, and cook until wilted, 2 to 3 minutes.
