SESAME CHICKEN SALAD
This sesame chicken salad is a lunchtime dream. The juicy, sesame-crusted chicken is perfect with the crunchy chicken and punchy dressing.

Steps:
- Halve chicken breasts horizontally, so you are left with thin cutlets. Drizzle with olive oil.
- Place sesame seeds onto a plate then press the chicken into the sesame seeds, making sure the chicken is covered. Season generously with salt.
- Cook the chicken in a splash of oil in a hot pan until golden brown on both sides and cooked through (2-3 minutes per side). Remove from the pan and set aside.
- Whisk together oil, lemon juice, honey, soy sauce, salt, pepper and sesame seeds and set aside.
- Shred the cabbage, julienne (or grate) the carrots and thinly slice the spring onions and radishes.
- Combine in a large bowl with the almonds and coriander/cilantro. Pour over half of the dressing and toss well.
- Slice the chicken and serve on the cabbage salad with the remaining dressing.

SESAME-HONEY CHICKEN SALAD

- Cut the chicken into thin strips and mix with the honey, vinegar and soy sauce. Leave to marinate in a non-metallic bowl for about 30 minutes.
- Heat the sesame oil in a frying pan and cook the chicken over a high heat with any marinade for about 5 minutes until the chicken is cooked through, leaving some cooked marinade in the pan to use as the salad dressing.
- To serve warm, toss in a large bowl with the remaining ingredients and eat immediately. To serve cold, leave the cooked chicken and marinade to cool and then toss with the remaining ingredients.

HONEY-SESAME LEFTOVER ROTISSERIE CHICKEN SALAD

This one brings leftover lemon pepper rotisserie chicken, that you would buy from your local grocery store, to a whole new level. This slightly sweet and crunchy salad can be served on a bed of romaine lettuce with sliced ripe avocado or on toasted mini sandwich slices (your choice of flavor) as a unique luncheon main course or appetizer for special guests.

- Heat a dry medium saute pan over medium heat. Cook and stir slivered almonds in the hot pan until light golden brown. Immediately remove almonds from pan and let cool.
- Combine chicken, red peppers, and celery in a large bowl. Add salt and pepper and toss until just mixed.
- Mix mayonnaise, cilantro, honey, sesame oil, and ginger together until well blended. Fold dressing into the chicken mixture and toss to coat. Add mandarin oranges and the cooled almonds; stir until well blended.

- Cut the chicken breasts into finger strips.
- In a bowl, combine the mustard, honey and lemon juice. Add the chicken strips to the mixture and season with black pepper.
- Heat the sunflower oil in a wok or large frying pan until very hot. Add the chicken mixture and stir-fry for 5-6 minutes or until golden and cooked.
- Meanwhile, slice the avocado, toss with the salad leaves and pile onto 4 large plates.
- Add the sesame seeds to the chicken in the wok and stir-fry for a further minute or until seeds are just beginning to colour.

- Preheat the grill to medium heat.
- Make the Asian BBQ sauce. In a small bowl whisk together the hoisin sauce, soy sauce, sweet Thai chili sauce, sesame oil, honey, Dijon mustard, crushed red pepper, ginger, garlic and lemon juice. Set aside and to be divided.
- Add the chicken to a bowl or gallon size zip lock bag and toss with 1/2 of the Asian BBQ sauce. Allow to marinate for about 20-30 minutes. Grill for 5 to 6 minutes per side or until the chicken is cooked through. Once the chicken is cooked, let rest for a few minutes and then cut into chunks.
- While the chicken is cooking preheat the oven to 375 degrees F. Cut the tortillas in whatever shape you prefer - triangle, circles, squares. Place the cut tortillas on a greased baking sheet. In a small bowl whisk together the 1 1/2 tablespoons hoisin sauce, 1 tablespoon soy sauce and 1 tablespoon honey. Brush the sauce all over the upside of the tortillas, sprinkle the tortillas with the sesame seeds. Bake for 5-8 minutes, just until the chips are browning on the edges. Watch closely so as not to burn.
- To make the salads, combine lettuce, cabbage, carrots and green onions in a large bowl and toss well with olive oil, rice wine vinegar, sesame seeds and poppy seeds. Add in chicken and toss well, then separate on to two plates or bowls. Drizzle the salads with the remaining Asian BBQ sauce and serve with the honey sesame crackers.

- Place chicken in a large glass or ceramic bowl. Whisk soy sauce, brown sugar, garlic, and ginger for marinade together in a small bowl; pour over chicken and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator, 8 hours to overnight.
- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Combine mayonnaise, sesame oil, sugar, and ginger for dressing in a small bowl. Cover and refrigerate while you cook the chicken.
- Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
- Cook chicken on the preheated grill until no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the grill and chop when cool enough to handle.
- While the chicken is cooking, place sesame seeds in a dry pan over medium-high heat. Shake the pan like you are making popcorn and toast until seeds give off a lovely toasted smell, 3 to 5 minutes. Quickly remove from the heat and transfer to a bowl to cool; if you leave them in the pan they will continue to cook and burn.
- Place napa cabbage, green cabbage, and carrot in a large bowl with chicken and toasted sesame seeds. Toss together, then mix in the dressing. Divide salad onto plates and top with crispy fried noodles.

This is my version of Applebee's Oriental Chicken Salad....Wonderful flavors of sweet sesame and honey. This one will be a family favorite for sure!

- Cut chicken breasts into thin cubes or strips, set aside.
- In a pie plate or shallow dish, beat eggs with 4 tablespoons milk. In another pie plate or shallow dish, add crushed corn flake crumbs, flour, salt, pepper and garlic powder, mix until well blended. Set aside.
- In a medium mixing bowl, whisk together honey, vinegar, mayonnaise, mustard and sesame oil. Chill for 20-30 minutes. (Unused dressing will keep in refrigerator for up to 30 days).
- In a large size skillet, add 1/4 cup oil on medium heat, when oil is hot, dip chicken into egg mixture and then in crumb mixture, place chicken in hot oil and fry to a golden brown on all sides, about 2-3 minutes per side. Drain chicken pieces on a plate lined with paper towels, to drain. Keep warm.
- In a large size mixing or salad bowl, add romaine lettuce, shredded carrot, scallions, cabbage, almonds and chow mein noodles, toss salad to incorporate salad mixture, pour in salad dressing over top and continue to toss until well coated with dressing. Serve salad in individual salad plates and top with an even amount of crispy chicken per plate.

- In a glass bowl mix together soy sauce, wine and cornflour. Cut up chicken, if not already done, and add to the bowl. Stir together well. Let this marinade a few minutes.
- Heat up frying pan or wok. Add peanut oil, sesame oil, crushed garlic and grated ginger. Fry breifly.
- Drain chicken pieces , reserving the liquid, and add them to the pan a few at a time. Do this in batches so that they brown nicely.
- When all of the chicken has been fried off, add the chicken pices back to the pan with the reserved marinade and chicken stock. Cook until thickened. Stir in honey. Taste to see if it is sweet enough. Add more honey if it needs it.
- Remove from heat. Stir in green onions. Sprinkle over sesame seeds as a garnish. Serve hot.
