Steps:
- Mince and mash garlic to a paste with 1/4 teaspoon salt. Cook Sherry, vinegar, mustard, shallot, garlic paste, and sugar in a small saucepan over medium-low heat, whisking, until heated through. Add oil in a slow stream, whisking until emulsified.
- Toss greens with warm dressing. Serve immediately.
GOAT CHEESE & FIG SALAD WITH SHERRY-WALNUT OIL VINAIGRETTE

- Combine vinegar, mustard, shallot, garlic and salt in a small mixing bowl.
- Whisk in the oil. If you have time, let flavors mingle for 30 minutes.

- Top with walnuts, figs, cheese and fresh ground pepper.

TOSSED GREEN SALAD WITH GRAPEFRUIT-POMEGRANATE DRESSING
A wee bit of sprucing up brings this salad to center stage on your picnic or dining table. Instead of using Ocean Spray Ruby-Pomegranate Grapefruit juice as indicated in the original recipe, I substituted freshly squeezed grapefruit juice and pomegranate molasses (aka pomegranate syrup). Steps:
- In a small non-reactive bowl, whisk together the grapefruit juice, pomegranate molasses, lemon juice, black pepper, salt and sugar.
- Add mayonnaise and oil. Whisk until smooth and creamy. Dressing is best prepared at least an hour in advance. Before serving, taste and adjust seasonings if necessary.
- In a large bowl, toss together all salad ingredients except for the slivered almonds.
- Divide equally among 4 salad plates.
- Drizzle the salad dressing over salads. Garnish with the slivered almonds.
MIXED GREENS SALAD WITH PEARS, GOAT CHEESE, AND FIG VINAIGRETTE
I love figs, so when I found this recipe I knew I had to try it. The vinaigrette came out very thick, so I had to adapt it to suit my needs. Pared with the goat cheese and pears, this was wonderful. The vinaigrette's sweet-tart taste makes it well suited for a marinade for grilled or roasted pork and chicken.

- Combine balsamic vinegar and figs in a small saucepan over high heat, and bring to a boil. Reduce heat, and simmer until reduced to 1/3 cup: about 5 minutes.
- Combine the fig mixture, water, and lemon juice in a blender, and process until smooth.
- Place the fig mixture in a small bowl. Stir in shallots, thyme, and garlic. Add olive oil and salt; stir well with a whisk.
- To serve: Drizzle enough dressing on the greens to coat. Place the greens on 6 salad plates and top with pear and goat cheese.

- Place the salad greens, figs, walnuts, and dressing in a bowl and toss. Divide among plates and crumble the blue cheese on top of each salad.
- Sherry Vinaigrette
- Whisk together the shallot, vinegar, preserves, capers, and mustard in a small bowl. Whisk in the olive oil until the dressing is emulsified. Taste for balance, and add a little more olive oil, if you like. Season with salt and pepper.

To make the salad, sauté the prosciutto in a medium skillet over medium heat until its fat renders and some of the pieces get crisp at their edges.
