This is my version of Mom's version of Granny's Green Tomato Ketchup! No sterilizing jars and canning...just eating and enjoying! Use this as a sidedish, or on potatoes or even with corn chips instead of salsa!

5 green tomatoes, chopped
1 red bell pepper, seeded and chopped
1 white onion, chopped
½ cup pickling salt
1 cup white vinegar
⅔ cup packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
10 tablespoons white sugar
8 whole cloves
1 tablespoon dark corn syrup

Steps:

  • In a large bowl, layer the tomatoes, bell peppers and onion, seasoning each layer with salt as you go. Keep making layers until you run out of vegetables. Cover the bowl, and refrigerate for 4 to 5 hours.
  • Pour the vegetables into a colander and rinse off the salt under running water. Put them into a pot with a lid, and stir in the vinegar, brown sugar, cinnamon, pumpkin pie spice, white sugar, whole cloves, and corn syrup. Bring to a boil, and then simmer over medium heat, uncovered, for about 30 minutes. The tomatoes will start to turn pale.
  • When the vegetables are very soft, press them through a sieve, being sure to find all of the cloves and remove them. Cool the sauce and store in the refrigerator.

1 large red onion, peeled and roughly chopped
1/2 bulb fennel, trimmed and roughly chopped
1 stick celery, trimmed and roughly chopped
Olive oil
Thumb-sized piece fresh ginger, peeled and roughly chopped
2 cloves garlic, peeled and sliced
1/2 a fresh red chili, deseeded and finely chopped
Bunch fresh basil, leaves picked, stalks chopped
1 tablespoon coriander seeds
2 cloves
Sea salt
1 teaspoon freshly ground black pepper
1 pound amazing cherry or plum tomatoes, halved plus 1 pound canned plum tomatoes, chopped or 2 pounds yellow, orange or green tomatoes, chopped
3/4 cup plus 2 tablespoons red wine vinegar
1/3 cup soft brown sugar

Steps:

  • Place all the vegetables in a large heavy-bottomed saucepan with a big splash of olive oil and the ginger, garlic, chili, basil stalks, coriander seeds and cloves. Season with the pepper and a good pinch of salt.
  • Cook gently over a low heat for 10 to 15 minutes until softened, stirring every so often. Add all the tomatoes and 1 1/2 cups of cold water. Bring to the boil and simmer gently until the sauce reduces by half.
  • Add the basil leaves, then whiz the sauce in a food processor or with a hand blender and push it through a sieve twice, to make it smooth and shiny. Put the sauce into a clean pan and add the vinegar and the sugar. Place the sauce on the heat and simmer until it reduces and thickens to the consistency of tomato ketchup. At this point, correct the seasoning to taste.
  • Spoon the ketchup through a sterilized funnel into sterilized bottles, then seal tightly and place in a cool dark place or the refrigerator until needed - it should keep for 6 months.

This is a traditional ketchup from quebec. It's delicious served with meats, but we especially like it with Tortiere. Sometimes fruit (apple or peaches- grated) were added, and that would be added to the saucepan before boiling.

30 medium green tomatoes, chopped (about 6 pounds)
15 medium onions, chopped (about 3 pounds)
2/3 cup coarse salt
3 cups white vinegar
2 1/2 cups granulated sugar
6 tablespoons mixed pickling spices, tied in cheesecloth

Steps:

  • In a large bowl, alternate layers of tomatoes and onions, sprinkling each layer with salt.
  • Let stand for at least 8 hours, better overnight.
  • Rinse; drain well.
  • Combine vegetables with vinegar, sugar and spice bag.
  • In a large saucepan or stock pot, bring mixture to a boil, then simmer, uncovered, for about 30 to 45 minutes.
  • Stir frequently until slightly thickened.
  • Pour into hot, sterilized jars and seal.

Number Of Ingredients 8

1 Peck of Green tomatoes sliced thin (a peck is approximately 2 gallons liquid measurement, or 32 cups, or 8 quarts)
4 large onions finely chopped
4 large green bell peppers finely chopped
1/2 cup regular table salt or canning salt
1 pint apple cider vinegar (2 cups)
2 lbs sugar (4 cups)
pickle spice to taste (about 1/4 cup)
12 to 15 [2 pint] canning jars and enough lids and bands to fit the jars

Steps:

  • Wash and thinly slice the green tomatoes and then add them to a large bowl or large container along with the chopped onions and the chopped peppers. Be very sure you do not use anything that is aluminum as the acids from this will react with the metal. You must use a stainless steel bowl, glass bowl, or large plastic bowls or containers. Add Salt. Mix well. Cover with ice and let stand for several hours. This step removes the green taste from the tomatoes. Drain off all the water thoroughly and put inside a very large stainless steel pot. I usually drain off as much as I can in a collander and then put this mixture on a clean tea towel and roll it up and squeeze as much of the water out as possible. You can also use paper towels and just keep squeezing as much out through the collander as possible. If you are not in a big hurry you can leave the ingrdients in your collander, put it over another large container and simply let it sit in your refrigerator overnight and the excess liquid will just drain off. Remember do not use an aluminum pot to cook this in as the acids in the food will react with the aluminum from the pot. Now, put the drained mixture into a large stainless steel pot and then add the cider vinegar, the sugar, and the pickling spice. Cook very slow until the mixture has cooked thoroughly and it begins to thicken. Note: Hallie doesn't like the finished product very thick so she only cooks it long ehough until it has thickened slightly and is a little soupy. She cooks it long enough that the tomatoes, onions, and peppers are thoroughly cooked and very soft. If you want it thicker, then cook it longer to the desired consistency that you prefer before you put it into the hot steralized jars for canning. Using the Water Bath method for canning, put the cooked prepared mixture in hot steralized 2 pint canning jars and process for 15 - 20 minutes. Be sure and use the manufactures directions for preparing the lids for the jars as they must be simmered (not boiled) in water for a few minutes before you can place them on top of the jars. Twist the bands on tightly to seal them and then put inside a canner or a very large pot which is tall enough so that you can cover the top of the jars with at least 1 inch of water. After the water comes to a full boil set a timer and begin timing it. Once you have processed the green tomato ketchup for the specified time mentioned above, remove the jars from canner and let them sit on the counter on a large bath towel and to cool completely. Be sure and remove the bands and test the lids to make sure all the jars sealed correctly. If you can take your thumb and the lid flips off easily then the jar did not seal correctly. If the jars did not seal the ketchup is still good, however you must either immediately refrigerate it and begin using it, or you can process them again, but you must use new lids and process for the required time listed above again and go through another canning process to seal those jars again.

13 ¼ pounds green tomatoes, cored and cut into chunks
5 red bell peppers, seeded and cut into chunks
4 green bell peppers, seeded and cut into chunks
2 large onions, peeled and cut into chunks
6 apples, cored and cut into chunks
3 large cucumbers - peeled, seeded, and cut into chunks
1 cup salt (scant)
2 quarts distilled white vinegar
1 tablespoon ground allspice
1 tablespoon ground cloves
1 tablespoon ground mustard
1 tablespoon salt
1 tablespoon ground cinnamon
1 tablespoon ground turmeric
5 pounds white sugar
11 (1 pint) canning jars with lids and rings

Steps:

  • Using a food grinder, grind together the green tomatoes, red peppers, green peppers, onions, apples, and cucumbers into a large food-safe container. Mix in 1 scant cup salt, and let stand overnight.
  • The next day, drain off the excess liquid from the ground vegetable mixture.
  • Bring the vinegar to a boil in a large kettle or stockpot. Place the allspice, cloves, mustard, 1 tablespoon of salt, cinnamon, and turmeric into a closely-woven cloth bag, and place the bag into the hot vinegar to boil for about 15 minutes. Remove the spice bag, and stir in the sugar until dissolved. Add the ground vegetable mixture, bring back to a boil, and simmer over medium-low heat, stirring frequently to prevent burning, until the relish is soft and slightly darkened in color, about 20 minutes.
  • Sterilize pint canning jars and lids in boiling water for at least 5 minutes. Pack the relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large canning kettle, and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 5 minutes.
  • Remove the jars from the kettle and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

"AMISH" TOMATO KETCHUP, FOR CANNING



My dh's Amish mother raised him on this recipe. He MUCH prefers it over store-bought ketchup. It was a taste I had to acquire, but now my ds's also prefer this type of ketchup. Enjoy!

3 drops clove oil

  • Mix all ingredients& boil for 2 1/2 hours, or until thick.
  • Pour into jars.
  • (no need to heat filled jars).
  • I use'old' glass ketchup bottles.
  • It is not necessary for these to'seal.
  • 'My Amish mother-in-law has been making this her entire life, and has never used a'sealed' jar for this recipe, and it's always been great!

24 large green tomatoes
3 red bell peppers, halved and seeded
3 green bell peppers, halved and seeded
12 large onions
3 tablespoons celery seed
3 tablespoons mustard seed
1 tablespoon salt
5 cups white sugar
2 cups cider vinegar

Steps:

  • In a grinder or food processor, coarsely grind tomatoes, red bell peppers, green bell peppers, and onions. (You may need to do this in batches.) Line a large colander with cheesecloth, place in sink or in a large bowl, and pour in tomato mixture to drain for 1 hour.
  • In a large, non-aluminum stockpot, combine tomato mixture, celery seed, mustard seed, salt, sugar, and vinegar. Bring to a boil and simmer over low heat 5 minutes, stirring frequently.
  • Sterilize enough jars and lids to hold relish (12 one-pint jars, or 6 one-quart jars). Pack relish into sterilized jars, making sure there are no spaces or air pockets. Fill jars all the way to top. Screw on lids.
  • Place a rack in the bottom of a large stockpot and fill halfway with boiling water. Carefully lower jars into pot using a holder. Leave a 2 inch space between jars. Pour in more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid does not move up or down at all). Relish can be stored for up to a year.

4 tbsp olive oil
1kg onions, chopped
6 garlic cloves, finely chopped
1 tbsp mixed spice
1 heaped tsp yellow mustard seeds
1 tsp chilli flakes (optional)
2 bay leaves
2kg green tomatoes, roughly chopped
500g cooking apples, peeled and diced
850ml cider vinegar
500g light soft brown sugar
200g soft pitted dates, chopped
200g sultanas
1 tbsp flaky sea salt (or 1 heaped tsp coarse crystal)

Steps:

  • Heat the oil in a preserving pan, then add the onions and let them gently soften for 10 mins. Add the garlic, spices and bay, and cook for 5 mins more until fragrant.
  • Tip in the tomatoes, apples and half the vinegar, then simmer for about 15 mins or until the tomatoes and apples are soft. Add the rest of the vinegar, then the sugar, dried fruit and salt, and cook gently until the sugar dissolves.
  • Turn up the heat a little, then bubble the chutney for about 1 hr 30 mins, or until it is thick and jammy. When ready, you will be able to drag a line across the bottom of the pan without the chutney flooding back straight away. The timing can vary depending on the water content of the tomatoes. Remove the bay leaves before potting the hot chutney into hot, sterilised jars.

This is a very easy relish that my mom always makes. Now that I have my own garden I make it myself. This goes well with fried catfish, beans, or any other southern dish. My wife likes it straight from the jar with crackers.

1 gallon chopped green tomato
3 cups sugar
3 lbs chopped onions
1/2 lb chopped hot green pepper
1 1/2 quarts vinegar
1/3 cup salt

Steps:

  • Wash tomatoes, cut into chunks. Place tomatoes, sugar, onion, peppers,vinegar and salt into large cooking pot. Mix well and simmer over medium heat, stirring until tomatoes turn from green to brownish and steam begins to form. Do not over cook. Do not Boil.
  • Pack into hot canning jar and seal, in a hot water canner. Bath in hot water bath for about 20 minutes. Take out and allow to cool for about 8-10 hours. Check for proper sealing, if some have not sealed put in fridge and enjoy when cold.

RIPE TOMATO RELISH

Another Grandmother recipe. This relish is savory more than sweet. It doesn't have cinnamon and clove like other recipes. It's excellent as a compliment to pork and other meats. Mix with mayo for a dynamite Thousand Island salad dressing. Cooking time includes time to let the tomato mixture "sweat".

1 peck ripe tomatoes
6 green peppers
3 red bell peppers
3 hot peppers (I use serrano or jalapeno)
6 white onions
3 bunches celery
5 cups cider vinegar
2 lbs light brown sugar
1 tablespoon celery seed
2 ounces mustard seeds
1 cup salt

Steps:

  • Wash vegetables and wipe dry. Clean peppers, removing all seeds. Run tomatoes, peppers and onions through food chopper/grinder. (I use the food grinder on my Kitchenaid stand mixer.) Add 1 c of salt, mix well and put in a muslin bag. Tie bag closed and hang up over drain overnight. (I hang the bag from the steps of a small ladder in the shower or over a basement drain.).
  • In the morning, put reduced tomato mixture in a large bowl. Add vinegar (I start with 4 c first for a less vinegar taste and adjust if needed), sugar, celery seed and mustard seed. Dice celery and stir into mixture. Mix all ingredients well and put into processed pint jars.
  • Place jars in canner and process for 10-15 minutes. Remove hot jars and allow to stand overnight. Next day check seals to ensure a tight seal.
  • Relish will last up to 2 years if kept in dry, dark storage.
