I love green chili, and french fries, and cheese 3 of my foods. All in one dish can't get any better than that. I make green chili at least once ever 2 months. I do not eat legumes (beans)......except for green beans. Any way this is how I like to make my chili cheese fries. Hope you all enjoy.

6 potatoes, baking
1 cup green chili sauce
1 cup cheddar cheese, grated

Steps:

  • Peel and cut potatoes into french fry sticks.
  • Either fry potatoes in oil or bake in a 400 oven for 15 to 20 minutes.
  • Heat green chili in a saucepan.
  • When potatoes are done place on a broil proof pan, I use a metal pie pan, pour green chili on top then sprinkle with cheese.
  • Place back into a broiler for 5 minutes to melt cheese.
  • Optional toppings: sour cream, onions, jalapenos, or guacamole.

1 (28 ounce) package frozen shoestring French fries
2 tablespoons extra virgin olive oil
2 lbs ground turkey breast
salt & freshly ground black pepper
1 teaspoon poultry seasoning
1 tablespoon ground cumin
1 onion, finely chopped
2 garlic cloves, chopped
1 (15 ounce) can white kidney beans or 1 (15 ounce) can cannellini beans, drained
3/4 cup beer or 3/4 cup chicken broth
2 cups store-bought tomatillo salsa (green)
2 tablespoons chopped cilantro or 2 tablespoons flat leaf parsley
4 scallions, finely chopped
1 teaspoon chili powder
2 pinches cayenne pepper

Steps:

  • Preheat oven to 425°F Arrange the fires in a single layer on a rimmed baking sheet and bake, tossing halfway through, until browned, 25 minutes.
  • Meanwhile, heat the olive oil in a large non-stick skillet over medium-high heat. When the oil smokes, add the turkey and cook, breaking up the meat. Season with salt and pepper, the poultry seasoning and cumin; brown and crumble the meat for 3 to 4 minutes.
  • Add the onion and garlic and cook for 5 more minutes.
  • Add the beans and stir to heat through. Add beer and cook for about 1 minute. Stir in the salsa and simmer the chili over low heat.
  • When the fries finish baking, stir the cilantro into the chili.
  • Transfer the chili to a medium casserole and top with the scallions.
  • Mix a teaspoon of salt with the chili powder and cayenne. Remove the fries from the oven and top with the seasoned salt. Pile the fires on top of the casserole, evenly covering the green chili and serve.
  • When I made this we used extra salsa and some sour cream to garnish the dish.

I know there are thousands of recipes for chili out there, but this is how I like to make it when spring comes and I can use the first herbs and veggies of the season.

Number Of Ingredients 12

1 tablespoon unsalted butter
1 green onion, finely chopped
1 garlic clove, minced
1 tablespoon flat leaf parsley, finely chopped
1 lb ground sirloin
1/4 cup celery, chopped
1/4 cup white onion, diced
2 (16 ounce) cans chili beans
1 (28 ounce) can diced tomatoes
1/4 teaspoon cayenne pepper
2 tablespoons chili powder
salt and pepper

Steps:

  • Heat up a dutch oven on medium heat.
  • Melt 1 tablespoon of butter.
  • Chop the green onion, green part included, and put into pot. Stir and let cook 2 minutes.
  • Smash and peel one clove of garlic. Mince it very finely. Add to green onion.
  • Chop yellow or white onion and add it to the pot. Cook this all for 5 minutes.
  • Add ground beef. Cook, stirring occasionally, until browned.
  • Chop and add parsley and celery. Cook for 1-2 more minutes.
  • Add beans and tomatoes. Add 1/3 cup water if it's too thick.
  • Add spices. Add salt and pepper to your taste and stir thoroughly. Turn heat up to high.
  • Let it come to a boil and boil for 1 minute. Turn down heat and simmer, covered for 10 minutes.
  • Enjoy!
