Steps:
- In a large bowl, combine first four ingredients and mix well. Place in a 2-qt. baking dish; set aside. For topping, combine oatmeal, nuts, flour, sugar and butter in another bowl. Mix well; spoon evenly over fruit mixture. Bake, uncovered, at 350° for 50-60 minutes or until fruit is bubbly and tender. Garnish with cranberries. Serve warm with ice cream if desired.

- Preheat oven to 400 degrees.
- In a large mixing bowl, mix all dry filling ingredients together, then add the fruit and toss until well-coated.
- Place filling in a 9"x13" greased baking pan and set aside.
- In a medium bowl, combine all dry topping ingredients.
- Add margarine to dry ingredients, using a pastry blender or fork to cut it in until well-blended.
- Sprinkle topping mixture over filling and bake for 40 minutes.

- Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
- In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.

PEAR, APPLE AND CRANBERRY CRISP

- Preheat the oven to 350 degrees F.
- Peel and core the pears and apples and cut them into large chunks. Place the fruit in a large bowl and toss with the cranberries, zests, juices, granulated sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch baking dish.
- For the topping:
- Combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed for 1 to 2 minutes, or until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
- Place the baking dish on a parchment-lined sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

- Heat oven to 375 degrees. In an 8-by-8-inch baking dish, toss cranberries with cornstarch, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Drizzle with 1/4 cup honey. Arrange apples on top of cranberries in one layer, skin sides down. Drizzle with 3 tablespoons honey. Sprinkle with 1/4 teaspoon cinnamon and 1/4 teaspoon salt.
- Melt together butter, remaining honey, and remaining 1/4 teaspoon cinnamon. Working with one sheet of phyllo at a time and keeping the others covered with plastic wrap, brush very lightly with butter mixture. Lay a second sheet over first and brush with butter mixture. Repeat with one more sheet. Tear the phyllo crosswise into 4 pieces, and loosely crumple (as youwould a tissue) as you place on top of the apples. Repeat with remaining three sheets of phyllo and butter mixture.
- Bake for 20 minutes, then reduce to 350 degrees. Bake until juices bubble in center and apples are tender, 40 to 50 minutes more. If top darkens too quickly, tent with foil. Cool 30 minutes.

- Make the crumble:
- Mix flour, granulated sugar, oats, brown sugar, vanilla, baking powder, cinnamon, salt, and nutmeg in a large bowl. Add butter and mix with your hands until mixture feels like damp sand and clumps form. Add almonds and mix with a wooden spoon until evenly distributed and large, walnut-sized clumps form. Freeze 30 minutes.
- Make the filling:
- Toss apples, cranberries, granulated sugar, flour, orange zest and juice, cinnamon, salt, and nutmeg in a large bowl. Let stand 10 minutes.
- Bake the crisp:
- Meanwhile, preheat oven to 350°F. Place baking dish on a foil-lined rimmed baking sheet (if using a Dutch oven, you don't need the baking sheet).
- Toss apple mixture again, then transfer to baking dish, leaving some juices behind. Break crumble into smaller pieces, leaving some larger clumps. Top apples with crumble, mounding slightly if needed.
- Bake apple crisp until crumble is golden brown and filling is bubbling through in the center, about 1 hour. Transfer baking dish to a wire rack and let cool 10 minutes. Serve warm with whipped cream or ice cream topped with almonds.

- Crumble can be made 1 week ahead; cover and freeze. Crisp can be assembled 1 day ahead; cover and chill.
APPLE, CRANBERRY, AND PEAR CRISP
This is a variation of the traditional Apple Crisp that I dreamed up one day when I didn't have enough apples, and there were pears in the fruit bowl, and leftover toasted walnuts from something else. We love it. Cranberries can be substituted with raisins or dried cherries. Comice pears taste best with this recipe.

- Set oven to 350 degrees.
- Butter a 13 x 9-inch baking pan.
- For the topping: Mix the flour, oats and brown sugar together until well combined.
- Add in the cold butter and mix with fingers until it resembles coarse meal; place in the refrigerator while preparing the fruit layer.
