- Preheat oven to 350°. In a large skillet, heat butter over medium heat. Add onions; cook and stir under tender and golden brown, 8-10 minutes. Cool slightly., Meanwhile, in a large bowl, combine 1 cup cheese, sour cream, salsa and taco seasoning. Stir in cooled onions., Place 2 tablespoons mixture off center on each tortilla. Roll up and place in a well-greased 13x9-in. baking dish, seam side down. Top with sauce; sprinkle with remaining cheese., Bake, uncovered, until heated through and cheese is melted, 20-25 minutes. Sprinkle with cilantro, if desired.

SASSY CHICKEN ENCHILADA DIP
My sister-in-law made this for a holiday, and it was a quick solution for me to use at a party the following night. It is a quick and easy appetizer, and different than the rest of the dips we are used to! Definitely classified as a keeper! Serve with tortilla chips.

GREEN ONION DIP
An easy fresh green onion dip that I have been making for years, ever since a friend brought it to a party and gave me the recipe. I've made a few changes in the preparation, mainly for simplification. He grated his green onions, I cut them into 1/2 to 3/4 inch pieces and puree them with my Braun hand blender. It's less painful than grating my knuckles along with the onions!

- Clean onions and cut into 1/2 to 3/4 inch pieces. Put onions and 1/8 cup milk into blending container. Puree until smooth.
- Pour pureed onion mixture into cream cheese and beat well with hand mixer.
- Add all other ingredients and continue to beat with hand mixer until well blended.
- Cover and put in refrigerator for at least 2 hours to allow granules to finish disolving and flavors to marry.
- NOTE: You can add additional milk a few drops at a time until the consistency is to your liking.
- NOTE 2: The measurements on the garlic powder and the bouillion granules is where I start. Sometimes, after it has chilled for 2 hours, I taste it and may possibly add more seasoning.

CHEESY GREEN ENCHILADAS
Mouthwatering Cheesy Chicken Enchiladas...what they are suppose to be! Please feel free to change any ingredient. Sometimes I use 8 oz of cream cheese too in addition to the sour cream..just for a little more creamy goodness! If I have leftover filling I use it for quesadillas.

- Preheat oven to 350°F
- Lightly coat with oil or cooking spray a large 9x13 baking dish.
- In a large bowl combine, chicken, 1 1/2 cup of cheddar cheese, 1/1/2 cup of pepper jack cheese, diced green chillies, 2 cups of sour cream, garlic powder, chili powder and onion powder.
- Mix until well combined.
- To assemble, have a large bowl ready with the green enchilada sauce in it and a plate to roll the enchiladas on.
- Take a flour tortilla and dip it into the bowl containing the sauce until it's all covered.
- Then place on the plate and almost on the edge of one side of the tortilla add 1/4- 1/2 cup of the chicken filling depending on how full you want them to be.
- Take the tortilla with the filling on it and roll it into a tube and lay in greased baking dish.
- Repeat until you have either no room left in your pan or your out of filling.
- With the remaining sauce pour over enchiladas and smooth out on top until there is a thin layer of sauce.
- With the remaining 1/2 cup of sour cream spread evenly over the top of enchiladas.
- Take remaining 1/2 cup of cheddar and 1/2 cup of pepper jack cheese and sprinkle evenly over top of enchiladas.
- Cover with foil for the first 25 minutes of cooking.
- Remove foil and bake for another 15-20 minutes until bubbly and cheese is melted on top.

Steps:
- Cook beef and garlic powder in skillet, stirring until crumbled and no longer pink.
- Remove from heat; drain.
- Stir in shredded cheese and onion; set aside.
- Heat chicken soup, milk and Velveeta cheese in saucepan over medium heat; stir until melted.
- Stir in dip mix, chilies and pimiento.
- Fill a skillet to about 1 inch with water.
- Heat over medium-high heat until very hot.
- Dip tortillas, 1 at a time, into hot water using tongs.
- Soak for 2 to 3 seconds.
- Drain and spoon about 1/3 cup meat mixture onto each tortilla; roll up tightly and place in a lightly greased 13x9-inch baking dish.
- Top with cheese sauce.
- Bake, covered at 350°F for 30 minutes.
- Uncover and bake an additional 10 minutes.
