GREEN CHILI SAUCE

This recipe is very good and very easy. A co-workers wife gave this to my husband for me years ago, I don't remember the names. But it is great! Use it to smother burritos, rellenos, anything!, or eat it just like this with flour tortillas, YUM! I freeze the left over in serving sizes.

PORK GREEN CHILI (COLORADO STYLE)

Pork Green Chili (Colorado Style) image

I grew up in Colorado and so I grew up loving green chili! When I moved to North Carolina 4 years ago I was surprised and very disappointed to learn that NO ONE here had ever even heard of green chili. I have spent the last year going through different recipes, I think I have finally got it nailed through a great mix of about 6 of the recipes I tried. Jalapeños may be added to taste if you like the flavor. Chili can be served over any burritos, served as a dip with tortilla chips, or as a main course with warm tortillas. Recipe makes a lot but it freezes well so you can enjoy it for a few months without having to spend too much time cooking.

GREEN CHILI WITH PORK AND ROASTED CHILES

Green Chili With Pork and Roasted Chiles image

Make this easy, warming, delicious pork chili recipe with a New Mexico edge for tons of flavor with minimal effort.

Provided by Molly Watson

Categories     Entree     Dinner

Time 2h25m

Number Of Ingredients 8

12 large mild green chiles
1 large onion
2 tablespoons lard, or vegetable oil
1 1/2 teaspoons fine sea salt
2 pounds pork butt , or shoulder; trimmed of excess fat and cut into bite-sized pieces
2 tablespoons flour
1 cup beer, or broth or water
2 cups low-sodium broth, or water

Steps:

  • Gather the ingredients.
  • Position a rack in the center of the oven and heat to 400 F. When oven is hot, roast the green chiles until charred on all sides. Alternatively, use the oven's broiler to char the chiles, turning so all sides are blackened (or char on the open flame of a gas stove, using tongs to turn).
  • Cover chiles with foil and allow them to steam and cool down for at least 15 minutes.
  • Pull off chile stems, scrape off and remove peels, remove seeds, and chop into small pieces. Set chiles aside.
  • Peel and thinly slice onion .
  • In a heavy-bottomed pot or Dutch oven, heat the lard on medium. When the lard melts, add onions, chiles, and salt. Stir well and cook until onions are soft, about 3 minutes.
  • Transfer the vegetables to a bowl, leaving as much fat in pot as possible.
  • Brown pork pieces, working in single layer batches. Repeat process until all pieces are browned. Remove from pot and set aside.
  • Add flour to remaining fat that's left in the pot and stir rapidly.
  • Keep stirring until flour smells cooked, about 3 minutes.
  • Add beer, stir, and scrape up any brown bits from bottom of pot. The mixture should thicken up fairly quickly.
  • Add broth and return pork and vegetables to the pot. Everything should be covered by liquid - add more broth or water if necessary.
  • Bring mixture to a boil, then reduce to a simmer, and cook, covered, until the pork is extremely tender, about 1 hour.
  • If you like a thicker texture, uncover the pot and cook further. Taste for salt and add more if needed.

PORK GREEN CHILE

Pork Green Chile image

A simple and, in my opinion, authentic version, this recipe comes down at least 3 or 4 generations of my family. You will know it's done when the sauce has a medium thickness. Remember, the longer it cooks, the better it will taste. You can serve smothered over burritos or with warm tortillas, beans and/or fried potatoes. Also delicious with fried eggs (Huevos rancheros). Substitute 4 or 5 chopped roasted chiles for green chiles and jalapenos if you prefer.

BRAISED PORK WITH GREEN CHILE SAUCE OF CHILE VERDE

Braised Pork With Green Chile Sauce of Chile Verde image

My DD makes this chile verde whenever we get together for Mexican dinners. It is a family favorite. The recipe is from a Sunset Mexican Cookbook, from 1977. Mild canned California green chiles season this meaty pork stew. Serve it with rice or as a burrito filling. For Burritos, spoon pork into warm, soft flour tortillas, add sour cream, tomato wedges, and a squeeze of lime juice and fold to enclose. We also serve this Chile Verde with Tamales. This chile Verde is also good served with scrambled eggs, Enjoy!

GREEN PORK CHILI

Time 1h10m

Yield 8 servings

Number Of Ingredients 19

1/2 cup canola oil, divided
2 fresh jalapeno peppers, stems removed
1 pound ground pork
1 tablespoon butter
1 medium white onion, diced
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon sweet paprika
1/4 teaspoon ground cayenne pepper
1/4 teaspoon ground black pepper
3 cloves garlic, minced
1/2 cup all-purpose flour
1 (28-ounce) can green enchilada sauce
1 (7-ounce) can green salsa
1 quart water
1/2 bunch fresh cilantro, leaves chopped
1/2 lime, juiced
2 tablespoons cornstarch mixed with 2 tablespoons water, for slurry, if needed
Cooked rice, for serving

Steps:

  • In a 4 quart pot, heat 1/4 cup of the canola oil over medium heat. Add the jalapenos and saute for 1 minute. Stir in the ground pork and cook until evenly brown. Remove the pork and jalapenos from the pot to a bowl and set aside. In the same pot used to cook the meat, add the remaining 1/4 cup of the canola oil, butter, and onion. Cook for 2 minutes or until the onion starts to soften. Stir in the salt, cumin, paprika, cayenne, and black pepper and cook until the onion is soft. Mix in the garlic and cook for 1 minute. Reduce the heat to low. Sprinkle the flour over the onion and garlic and cook, stirring, for 3 minutes. Slowly pour the enchilada sauce into the onion mixture, whisking constantly to prevent lumps from forming. Mix in the green salsa and water. Return the cooked pork and jalapenos to the pot. Increase the heat to medium and slowly bring the chili to a boil. When the chili boils, reduce the heat and simmer for 30 minutes. Before serving remove from heat and stir in the chopped cilantro and lime juice. The consistency should be thick enough to coat the back of a spoon, if not simmer longer or thicken with a little cornstarch slurry.
  • Serve with cooked rice.

Categories     main-dish

Time 6h45m

Yield 4 servings

Number Of Ingredients 15

12 ounces pineapple juice
1/4 cup olive oil
3 ounces soy sauce
2 tablespoons dry jerk seasoning
2 tablespoons molasses
1 teaspoon granulated onion
2 fresh jalapenos, seeded and medium diced
1 roasted, peeled, seeded poblano, rough chopped
Four 6-ounce butterflied pork chops, pounded with the tenderizing side of a meat mallet
8 ounces mayonnaise, preferably Duke's
3 ounces Jamaican or other sweet pepper relish
4 slices fresh pineapple
8 slices Swiss cheese
4 good brioche buns, toasted
4 ounces arugula

Steps:

  • For the marinade: Mix pineapple juice, olive oil, soy sauce, jerk seasoning, molasses, granulated onion, jalapenos and poblano together in a gallon resealable plastic bag. Add tenderized pork and refrigerate for at least 6 hours or up to 24 hours.
  • For the sandwiches: Mix mayo and Jamaican relish in a bowl.
  • Preheat a flat top or griddle on medium-high heat and put on pork to get a good sear, about 2 minutes. Flip and sear the other side, 2 minutes. Don't forget to put some of the peppers from the marinade and the pineapple on to caramelize, 2 to 3 minutes. Melt Swiss cheese on pork!
  • Spread buns with Jamaican mayo on tops and bottoms, then add pork and Swiss cheese, caramelized pineapple and peppers and arugula. Close buns for green chile pork sandwiches!

  • Cut the pork ribs into large bite-size chunks - about 1-inch cubes. Spread them out over a couple of paper towels and pat dry.
  • Add the oil to a large stockpot or dutch oven and set it over medium high heat. When the oil is very hot and shimmering, add enough pork to cover the bottom of the pan without any of the pieces overlapping. Sprinkle generously with salt and pepper. Let cook, undisturbed, for 2 or 3 minutes, until brown on the bottom. Use metal tongs to flip the pieces over and allow them to brown on the other side. Remove the pork from the pan to a plate and repeat with the remaining pieces of pork.
  • Turn the heat under the pan down to medium and add the chopped onion. Cook, stirring frequently, until the onion is soft and translucent, about 3-4 minutes. Add the garlic, jalepeno, chili powder, cumin, oregano, and 2 tsp salt. Cook, stirring constantly, for 2 minutes longer.
  • Add the butter to the pan and stir it around until it's melted. Sprinkle in the flour and cook, stirring constantly, for 1 minute. Pour in the broth, scrapping at the bottom of the pan to loosen any little brown bits of flavor that might be stuck there.

  • Cut the pork shoulder into 1-inch cubes, trimming any excess fat, then toss with the flour, salt, and pepper. Heat 2 tablespoons of oil in a skillet and brown the pork on all sides, then transfer to a slow cooker. You may need to work in batches and add a bit more oil until all of the pork is browned.
  • In the same skillet, saute the onion, peppers, garlic, adding a little more oil if the pan is dry, for 3 to 5 minutes. Add 1/2 cup of broth and scrape up any fond (the browned bits on the bottom of the pan) and transfer everything to the slow cooker with the pork.
  • In a blender, combine 1/2 the chopped tomatillos with 1/2 of the diced green chilies and the cilantro, then process until smooth. Add 1/2 cup of the chicken broth if necessary.
  • Pour the blended tomatillos into the crockpot and add all remaining ingredients except for the cornstarch and water. Cook on HIGH for 3-4 hours or on LOW for 6-8 hours until the pork is tender.

Cover and cook on HIGH for 2-3 hours. (Increase this time to about 4 hours for a frozen pork roast.) Shred or pull apart gently, allowing the meat to absorb some of the juices in the crock-pot. Reduce the heat to LOW and cook an additional 30 minutes to an hour.
  • FREEZER MEAL: Let the meat cool completely and then transfer to a freezer safe ziploc bag. Add as much of the liquid as remains in the bottom of the crock-pot, up to a cup or so more than the meat will absorb. Remove as much air as possible before sealing the bag and freezing flat. Thaw in the refrigerator before reheating in the microwave or in a covered dish in the oven.

  • Toss together tomatillos, onion, poblanos, jalapeños, and garlic on prepared baking sheet. Spray vegetables with nonstick spray and toss until coated evenly; spread to form even layer. Roast until vegetables are softened and browned, about 20 minutes. Transfer to blender, in batches if needed, and process until fairly smooth.
  • Meanwhile, stir together cumin, oregano, salt, and black pepper in cup. Sprinkle all over pork. Generously spray large heavy nonstick skillet with nonstick spray and set over medium-high heat. Add half of pork and cook, turning occasionally, until browned on all sides, 4–5 minutes. Transfer to 5- or 6-quart slow cooker. Repeat with remaining pork.
  • Add broth to skillet and bring to boil, scraping up browned bits from bottom of pan. Pour into slow cooker along with tomatillo-chile sauce, stirring to coat pork. Cover and cook until pork is fork-tender, 2 1/2–3 hours on High or 5–6 hours on Low. Stir in cilantro. Spoon pork and tomatillo-chile sauce evenly onto 4 plates or into bowls. Sprinkle with bell pepper and pickled peppers.

  • If using freshly roasted green chile, remove the skin, deseed and dice. For frozen green chiles, thaw and dice if they don't come chopped, though most frozen green chiles tend to come diced. You can also used canned green chiles, though fresh or frozen is my preference.
  • In skillet, heat olive oil over medium-high heat. Liberally salt and pepper the pork shoulder roast. Once the oil is hot, cook the pork on all sides until it develops a nice crust. This should take about four to five minutes on each side. Remove the pork, add the onion and turn heat down to medium. Cook for about five minutes. Add the garlic and cook for about 30 seconds.
  • Put the pork back in the stockpot and add the chiles, cumin, spiced paprika, pepper, chicken broth and potato to pot. Bring to a low boil. Reduce heat to low, cover and simmer until the pork is fork tender, about two to three hours.
  • When the pork is tender, remove the roast from the stockpot and shred with two forks once it's cool enough to handle. Discard any bones.
