SPAGHETTI TACOS
An inventive combination of two family favorites; spaghetti and tacos! I actually heard about spagetti tacos on one of my daughter's favorite shows, iCarly. Carly's brother Spencer makes this a lot. Tonight it just sounded good and I decided to put my own spin on this interesting dinner. P.S. The next night we put the leftover spaghetti mixture on a plate of taco chips with cheese on top and microwaved for a minute and a half. Spaghetti nachos!!

Steps:
- Brown ground beef and drain grease. Add tomato sauce and taco seasoning. Fill up one empty tomato sauce can with water and add. Season to taste with salt, pepper and garlic powder. Simmer on medium heat.
- Cook spaghetti as directed on box.
- Add cooked noodles to sauce and toss to combine.
- Put noodle/sauce combination in crunchy taco shells and add cheese on top.
- Enjoy!

MEXI-TALY SAUCY SPAGHETTI TACOS #RAGU
Ragú® Recipe Contest Entry - This recipe was inspired by a fridge clean out night. We had Mexican on Monday night and Italian on Tuesday so we created "Mexi-taly" night on Wednesday, combining our leftover spaghetti and chorizo with some fridge staples. The sweetness of the shrimp goes great with the spicy chorizo.

Steps:
- In a large skillet over medium-hig heat, add the chorizo breaking it into pieces. Cook chorizo until browned and cooked through, about 10 minutes. Stir in Ragu sauce, cumin, chili powder, salt and pepper and bring to a boil. Reduce heat to low. Add in shrimp and cook until no longer pink, about 5-7 minutes.
- Add black beans to a large bowl. Sprinkle with Adobo seasoning and mash beans with with a potato masher or large spoon until a chunky paste forms.
- Lay out the soft corn tortillas. Spread the bean mixture evenly over each tortilla to cover the surface. Wrap each bean covered soft shell around the hard shell, creating a double layer taco.
- Place equal amounts of the cooked spaghetti into each taco shell. Spoon in the cheesy sauce. Sprinkle each taco with the fresh cilantro.

SAUCY PASTA ALL-IN-ONE POT
Not sure where I received this recipe, but it's perfect for a quick weeknight supper. For some reason, I always have a jar of spaghetti sauce in the fridge that I need to use the remainder of or throw away. Sometimes I add a bit of Italian seasoning for extra flavor. This dish cooks in one pot, so there is minimal clean up. Also, it's much healthier than Hamburger Helper.

Steps:
- Brown meat in large, deep skillet.
- Drain meat and add onions and garlic and cook until tender.
- Add pasta, water and spaghetti sauce.
- Bring to boil then cover and reduce heat to low.
- Simmer for 12 minutes, stirring occasionally.
- Add mushrooms and zucchini, cook for 5 minutes.
- Add both types of cheese and cook for 2 minutes.
- Enjoy.

- In a medium bowl combine 2 cups of the Ragu sauce, onion, minced jalapeno, garlic, chili powder, cumin, and salt; set aside.
- Coat a medium sized skillet with the cooking spray; heat over medium-high heat. Add the Italian sausage-crumble the meat and cook stirring frequently until meat is cooked through, then add the Ragu sauce mixture and stir; cover and simmer on low for 15 minutes.
- After simmering serve meat sauce mixture by topping each tortilla with about 1/2 cup of the meat and sauce mixture, 2 Tablespoons of cabbage, 1 Tablespoon of goat cheese, 1 tablespoon cilantro, 1/2 tsp sliced jalapenos, drizzle with fresh lime juice from the lime wedges.

My kids both love iCarly. As with so many others, they saw the episode where they were eating Spaghetti Tacos and begged me to make them. This was my attempt at them, and I have to say, we were all pretty impressed with them!

- Prepare noodles according to package directions. Drain and return to pot.
- Brown meat in pan until no longer pink. Add taco seasoning and water. Bring to a boil. Reduce heat and simmer for 5-6 minutes, until sauce thickens. Add spaghetti sauce and cook until warmed. Add to noodles and mix thoroughly.
- To assemble the tacos, place a spoonful of salsa in the shell. Sprinkle with a small amount of cheese. Finally, finish filling the shell with spaghetti. Add lettuce on top, if desired.
- Very messy, but very yummy!

SPICY ITALIAN STUFFED SPAGHETTI SQUASH #RAGU

- Preheat Oven to 400.
- Split clean, dry Spaghetti squash long ways and clean, removing all seeds. I like to use a large spoon for this.
- Oil liberally with olive oil and salt and pepper to taste.
- Place cut side down and roast 45-60 minutes until just tender enough to fluff with a fork. Time will vary depending on size of squash.
- While squash is roasting, work on dicing vegetables and brown Italian sausage.
- Once sausage is browned add in half of the butter and the entire onion. Cook until tender.
- Add in garlic, zucchini, and Ragu Spicy Italian Sauce and simmer until all veggies are tender.
- Season with chopped oregano, salt and pepper to taste.
- Once roasted squash is tender, drag a fork from edge to edge just enough to loosen the flesh from the skin. Divide the Ragu ,mixture between the two halves. Sprinkle crumbled goat cheese evenly between the two pieces.
- In a small bowl, melt remaining butter and add in bread crumbs. Sprinkle evenly on top of the two pieces or squash, careful to cover Ragu mixture.
- Place back into oven and bake for 15 minutes or until the breadcrumbs are nicely golden brown.
- Allow to cool 5 minutes. Serve and enjoy!

Steps:
- Preheat oven to 350 degrees.
- Cut spaghetti squash in half, and remove seeds.
- Place the spaghetti squash upside down so the rind is facing upwards in a microwave safe dish.
- Add ½ inch of water to the dish, and microwave for 8 minutes, or until the squash is soft.
- Slice Italian sausage into ½ inch pieces and brown the sausage in a large skillet over medium heat.
- Cook pasta according to package directions. Drain the pasta and stir in the Ragu pasta sauce and Italian sausage. Use a fork to separate the spaghetti squash strands and add them to the pasta mixture.
- Transfer to a 9x13 dish.
- Sprinkle with cheese. Mix bread crumbs with butter and sprinkle on top.
- Bake 350 degrees for 30 minutes or until hot and cheese is melted. Enjoy!
