1 tablespoon butter
1 medium onion, peeled and diced
1 teaspoon minced garlic
2 tablespoons flour
2-4 ounce cans of chopped green chiles
1.4 teaspoon oregano
1/3 teaspoon coriander powder
1 1/2 cups shredded turkey
2 cups cheddar and Monterey Jack cheeses
1 pack corn tortillas
1 pint sour cream
2 green onions, chopped
Salsa

Steps:

  • 1 Add the butter to a warm sauté pan. 2 Add onions and sauté until translucent. 3 Add garlic and cook until it becomes aromatic. 4 Add flour and cook for 1 minute. 5 Pour both cans of green chiles into pan. 6 Add cumin, oregano, coriander, chicken broth and a little salt and pepper. Simmer for 5 minutes at low heat. 7 Place turkey in a mixing bowl. Add 1/3 cup of the green chile mix, 1/3 cup of sour cream, 1/3 of the cheese mixture and salt and pepper. Mix well. 8 Grease a 13x9 baking dish. Place 1 to 2 tablespoons of filling in each tortilla and roll up. Place the rolled tortillas in the baking dish seam-side down. Continue to add rolled tortillas until the top layer is filled. 9 Pour the rest of the green chile on top of the enchiladas and sprinkle with remaining cheese. 10 Bake at 350ºF for 20 to 30 minutes or until hot and bubbly.Serve with sour cream, green onions and salsa.

3 cups shredded cooked turkey breast
1 ½ cups sour cream, divided
1 (16 ounce) jar chunky, mild green chile salsa, divided
1 (8 ounce) package shredded mild Cheddar cheese, divided
1 (8 ounce) package shredded Monterey Jack cheese, divided
8 (6 inch) flour tortillas

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix shredded turkey with 1/2 cup sour cream, 1/2 cup salsa, 1/2 package Cheddar cheese, and 1/2 package of Monterey Jack cheese in a bowl until well combined. Fill tortillas evenly with turkey mixture, roll up into enchiladas, and place in a 9x13-inch pan.
  • Mix remaining sour cream and salsa together and pour over enchiladas. Top with remaining Cheddar and Monterey Jack.
  • Bake in the preheated oven until cheese is bubbly and enchiladas are heated through, 30 to 40 minutes.

1 large onion, finely chopped (1 cup)
2 cloves garlic, finely chopped
1 cup Progresso™ chicken broth (from 32-oz carton)
2 tablespoons semisweet chocolate chips
1 tablespoon ground ancho chiles
1 teaspoon ground cumin
1/2 teaspoon salt
1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
2 cups shredded cooked turkey
1 cup sour cream
1 1/2 cups shredded Cheddar cheese (6 oz)
2 cans (4.5 oz each) Old El Paso™ chopped green chiles, undrained
1 package (11.5 oz) Old El Paso™ flour tortillas (8-inch; 8 tortillas)
1 cup shredded pepper Jack cheese (4 oz)

Steps:

  • Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 12-inch skillet, heat oil over medium-high heat. Add onion and garlic; cook about 1 minute, stirring frequently, until onion is tender. Stir in remaining sauce ingredients. Heat to boiling. Reduce heat to low; cook uncovered 15 minutes, stirring occasionally.
  • In medium bowl, mix all enchilada ingredients except tortillas and pepper Jack cheese. Spread about 1/2 cup turkey mixture over each tortilla; top with 2 tablespoons sauce. Roll up tortillas; arrange seam sides down in baking dish. Pour remaining sauce over tortillas. Top with pepper Jack cheese.
  • Spray sheet of foil with cooking spray; place sprayed side down over baking dish. Bake 30 to 45 minutes or until thoroughly heated.

These are good beef enchiladas from The Once A Month Cookbook. I also substitute the beef with leftover chicken or turkey too. Nice to have some in the freezer for quick dinners.

1 1/2 lbs lean ground beef (3 3/4 cups browned meat)
1 1/4 cups onions, finely chopped (3/4 cup sauteed)
1 tablespoon chili powder
salt and pepper, to taste
2 cups monterey jack cheese, grated (1 cup)
8 flour tortillas
1 (10 3/4 ounce) can cream of chicken soup
1 1/2 cups sour cream or 1 1/2 cups plain low-fat yogurt
1 (4 ounce) can diced green chilies

Steps:

  • Cook the ground beef, and saute onions until the meat is brown, about 15 minutes. Drain the fat. Combine with chili powder, salt and pepper. Reserve 1 cup cheese in a 1-quart freezer bag to use when serving. Spoon enough meat mixture and cheese on each tortilla to cover a third of it. Roll tortilla beginning at the filled edge. Place seam side down in a 13x9x2-inch baking dish treated with nonstick spray. When tortillas are completed, combine soup, sour cream, and green chilies to make a sauce; pour over tortillas. Cover dish with foil and freeze with bag of cheese taped to it.
  • To prepare for serving, thaw enchiladas and cheese. Bake uncovered in a preheated 375ºF oven for 20 to 25 minutes. The last 10 minutes sprinkle the remaining cheese on top.

1 cup sour cream ranch dip
2 tablespoons Gold Medal™ all-purpose flour
2 cups diced cooked turkey
2 cups finely shredded Colby-Monterey Jack cheese blend (8 oz)
1 can (4.5 oz) Old El Paso™ chopped green chiles, undrained
1 can (10 oz) Old El Paso™ mild enchilada sauce
1 package (11.5 oz) Old El Paso™ flour tortillas for burritos (8 inch)
Chopped tomatoes, chopped avocado and shredded lettuce, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, mix dip and flour. Stir in turkey, 1 cup of the cheese and the chiles.
  • Spread about 2 tablespoons enchilada sauce over bottom of baking dish. Spread 1 to 2 teaspoons enchilada sauce over each tortilla; top each with about 1/3 cup turkey mixture. Roll up each tortilla and place seam side down in baking dish. Top with remaining enchilada sauce.
  • Cover with foil; bake 25 minutes. Sprinkle with remaining 1 cup cheese. Bake uncovered about 15 minutes longer or until thoroughly heated and cheese is melted. Garnish with tomatoes, avocado and lettuce.

This is a very versatile recipe that can be prepared partially in advance. I've always disliked red enchilada sauce thus I created this enchilada recipe using Stokes Green Chile Sauce with Pork. Yes, I created this recipe and submitted it to the Stokes Green Chile recipe site.

1 lb pork shoulder chop, cooked and diced (or 1lb cooked shredded pork, 1 lb leftover cooked chicken, 1lb leftover cooked roast beef or cooked )
1 cup onion, coarsely chopped (adjust to personal tastes)
1 tablespoon minced garlic (about 3 garlic cloves)
1 teaspoon ground cumin
2 cups of stokes green chile sauce with pork, divided
1 1/2-2 cups shredded monterey jack cheese or 1 1/2-2 cups colby cheese, blend
8 corn or 8 flour tortillas

Steps:

  • Prepare all of the veggies being used, set aside and preheat the oven to 375°F.
  • If using fresh pork shoulder steaks: Remove excess fat from 1½ pounds of pork shoulder steaks. Season with salt, garlic powder, cumin powder and onion powder then slowly simmer in oil in a skillet till tender. When the pork has completed cooking set it aside.
  • If using shredded pork, leftover chicken, leftover cooked roast beef, leftover cooked steak: shred the meat and set aside. Meanwhile, gently sauté the chopped onions and garlic with oil in a skillet for about 5 minutes and mix into the reserved meat mixture and set aside.
  • If using fresh ground beef or turkey, sauté it with the onions, garlic and ground cumin in a frying pan till the beef is brown and no longer pink. Drain off the fat and set aside.
  • Moisten six sheets of paper towels, wrap them around the tortillas and microwave them for 45 seconds on high power so to soften them.
  • Spoon 1 Tbsp of the reserved enchilada sauce mix over each tortilla, spoon ~ ¼ cup of meat mixture and a little cheese on top and roll up the tortillas. Smear ½ cup of the sauce on the bottom of an 8x11 baking dish and place the rolled tortillas in the dish.
  • Add any remaining meat to the bowl of the enchilada sauce and stir well. Pour this mix over the enchiladas. Sprinkle the remainder of the cheese over the enchiladas and bake for 15 - 20 minutes in the preheated oven at 375°F or till the cheese is melted and the sauce is bubbly.
  • Remove from the oven and serve with the toppings as described above. I like to serve this with a mixed green salad on the side.
  • I like the KISS principle of "keep it simple stupid". For desert, I serve a simplified version of fried ice cream. I roll scoops of vanilla ice cream in crushed frosted corn flakes, add some sliced bananas and squirt a little of chocolate syrup over each serving. Many of you didn't know how to fake a fried ice cream desert, did you?

1/3 cup plus 1 tablespoon canola oil, divided
1 medium onion, chopped
3 cups cubed cooked turkey
1 can (14-1/2 ounces) Mexican diced tomatoes, undrained
1 tablespoon chopped pickled jalapeno slices
1 envelope taco seasoning
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
3 cans (10 ounces each) green enchilada sauce
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
3 cups shredded Monterey Jack cheese, divided
Optional: Sour cream, chopped tomato, chopped cilantro and additional pickled jalapeno slices

Steps:

  • In a large skillet, fry tortillas in batches, using 1/3 cup oil, for 5 seconds on each side or until golden. Drain on paper towels., In the same skillet, saute onion in remaining oil until tender. Stir in the turkey, tomatoes, jalapenos, taco seasoning, cumin, oregano and basil; heat through. , Combine enchilada sauce and soup. Spread 1/2 cup mixture into each of two 13x9-in. baking dishes. Place 2 tablespoons turkey mixture down the center of each tortilla; top with 1 tablespoon cheese. Roll up and place seam side down in prepared dishes. Pour remaining sauce over the top. , Cover and bake at 350° for 25-30 minutes or until heated through. Uncover; sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Garnish with desired toppings.
