1 large Yukon gold potato
Coarse salt
1 tablespoon unsalted butter
1/2 onion, very finely chopped
4 ounces freshly grated Montasio cheese
Freshly grated nutmeg
Grapeseed oil
2 teaspoons minced shallots
2 tablespoons chopped fresh cilantro
Sherry-wine vinegar
Mixed greens, for serving
Thinly sliced radishes, for serving
8 thin slices speck, for serving

Steps:

  • Place potato in a small saucepan with enough water to cover; season with salt. Place over high heat and bring to a boil. Cook until tender, 45 to 60 minutes. Drain and peel.
  • Immediately transfer potato to a medium bowl and crush into 1/4-inch pieces using a fork.
  • Heat butter in a small skillet over medium heat. Add onion and cook until soft and translucent. Add to bowl with potato, along with cheese; season with a pinch of salt and nutmeg. Stir until just combined.
  • Heat a 5- to 6-inch square cast-iron skillet over high heat. Add enough grapeseed oil to coat bottom of skillet; remove any excess oil and discard. Add potato mixture and cook until golden brown, about 5 minutes. Using a spatula, turn frico and continue cooking 5 minutes more.
  • Meanwhile, in a small bowl, whisk together shallots, cilantro, vinegar, and 2 tablespoons grapeseed oil; season with salt. Cut frico into 4 wedges and place each on a serving plate, along with salad greens topped with radishes, and sliced speck. Drizzle vegetables with cilantro vinaigrette; serve immediately.

1 tablespoon Lemon Juice
1 Tablespoon White Wine Vinegar
2 tablespoons Extra Virgin Olive Oil
1 clove Garlic, finely minced
1 teaspoon Dijion Mustard
Salt and Pepper, to taste
3 ounces Italian Mixed Greens (Arugula, Raddichio, Baby Kale)
5 large Basil Leaves, thinly sliced
2 1/2 ounces Proscuitto, cooked until crispy and crumbled
1/4 cup shaved Fresh Parmesan

Steps:

  • Combine all ingredients in a small jar. Tightly screw the lid on and shake vigorously.
  • Dressing may be doubled if you like your salads heavily dressed, if you're making a larger portion to feed more people, or if you simply would like leftover salad dressing. The amount listed is what I used for dressing 1 salad recipe.
  • Store any leftovers in a sealed jar in the refrigerator.
  • In a medium sized salad bowl, combine the greens and the basil. Toss with 1 recipe of the Lemon Dijion Vinaigrette.
  • Sprinkle the top of the salad with the crispy prosciutto and shaved parmesan. Serve immediately.

This mixed greens salad with crispy prosciutto is easy and fast to make, colorful, and bursting with flavor!

3.5 ounces prosciutto
5 ounces assorted salad greens + arugula
Handful little tomatoes
1 tablespoon fresh chives (chopped)
2 heaping tablespoons Greek yogurt
2 tablespoons olive oil
2 teaspoons Dijon mustard
1 teaspoon liquid honey
1 tablespoon lemon juice
1 clove garlic (minced )
Salt & pepper (to taste (optional, prosciutto is pretty salty))

Steps:

  • Preheat oven to 375F. Move the rack to the middle position.
  • Add the prosciutto in a single layer to a baking sheet that's been covered with parchment paper. Bake for 12-15 minutes, or until it's crispy but not burned.
  • Meanwhile, whisk the dressing ingredients together in a small bowl and add the salad greens, chives, and tomatoes to a large bowl.
  • Once the prosciutto is done, let it cool for a few minutes then break it into desired size pieces. Toss the salad with the dressing and sprinkle the prosciutto on top.

1 14-ounce can artichoke hearts in water, drained and patted dry
1/2 cup extra-virgin olive oil
1 pound small tomatoes, quartered
1 1-pound ball fresh mozzarella cheese, sliced
8 thin slices prosciutto (about 1/4 pound)
1 cup fresh basil leaves
1/2 cup green olives (preferably Sicilian), smashed and pitted

Steps:

  • Mix the flour with 1/4 teaspoon each salt and pepper in a large bowl. Add the artichoke hearts and toss. Heat the olive oil in a large skillet over high heat. Add the artichoke hearts and fry until golden brown and crisp, about 3 minutes per side. Transfer to a paper towel-lined plate to drain. Remove the skillet from the heat and reserve the frying oil.
  • Season the tomatoes with salt and pepper. Divide the mozzarella, tomatoes, prosciutto and fried artichokes among plates. Top with the basil and olives and drizzle with some of the reserved frying oil.

2 tablespoons sherry vinegar
1 teaspoon dijon mustard
Kosher salt and freshly ground pepper
2 peaches, pitted and sliced 1/2-inch thick
2 plums, pitted and sliced 1/2-inch thick
1/4 cup thinly sliced red onion
8 cups torn mixed salad greens
2 to 3 ounces crumbled gorgonzola (or other blue cheese)
4 slices Italian bread, toasted or grilled

Steps:

  • Cut or tear the prosciutto into bite-size pieces. Place a large skillet over medium-high heat; add 1 tablespoon olive oil. Add the prosciutto in a single layer (you may need to do this in two batches); cook, turning occasionally, until crisp, about 1 minute per side. Drain on a paper-towel-lined plate.
  • Add the remaining 2 tablespoons olive oil to the skillet over medium-high heat. Whisk the vinegar, mustard, 1/2 teaspoon salt, and pepper to taste into the oil to make a smooth dressing. Add the peaches, plums and red onion to the skillet; toss to coat and wilt the onion slightly. Transfer the mixture to a large serving bowl.
  • Add the greens and half of the gorgonzola to the bowl; toss to coat with the dressing. Divide the salad among plates; top with the crisp prosciutto and the remaining gorgonzola. Serve with the bread.

5 ounces sharp Cheddar, finely grated
5 ounces Gruyere cheese, finely grated
1 tablespoon all-purpose flour
2 teaspoons fresh thyme leaves
Arugula Salad, recipe below
4 teaspoons fresh lemon juice
1 small shallot, finely chopped
1 teaspoon Dijon mustard
1 teaspoon honey
1/4 cup extra-virgin olive oil
Salt
Freshly ground black pepper
2 cups arugula

Steps:

  • In a medium bowl, toss together both cheeses and the flour. Heat a large nonstick skillet over a low to medium flame and sprinkle 1 1/2 tablespoons of the cheese mixture onto the pan to form a 4-inch circle. Sprinkle some thyme over the cheese and cook until the cheese is somewhat melted but not firm. Using a spatula, turn the cheese over and cook until firm and golden.
  • Transfer the frico to a paper towel, then quickly drape over a large rolling pin until completely cooled, to form a shell shape.
  • To serve, remove from pin and top each frico with arugula salad.
  • In a small bowl, whisk together lemon juice, shallots, mustard, and honey. Whisk in the olive oil and add salt and pepper, to taste. Lightly dress arugula leaves with the vinaigrette.

3 medium shallots, finely chopped
3/4 cup sherry vinegar
For cilantro vinaigrette
1 tablespoon sherry vinegar
1 medium shallot, finely chopped
2 teaspoons fresh cilantro, roughly chopped
1 teaspoon kosher salt
3 tablespoons grapeseed oil
For pesto-pickled shallot vinaigrette
3 tablespoons purchased basil pesto
1 tablespoon sherry vinegar
1 tablespoon lemon juice (from 1/2 medium lemon)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 cup grapeseed oil
1 1/2 teaspoons olive oil
For frico caldo
2 medium Yukon Gold potatoes, peeled and cut into quarters
1 tablespoon unsalted butter
1/2 medium onion, finely chopped
2 cups finely grated Parmigiano-Reggiano (4 ounces total)
1 tablespoon kosher salt
1/2 teaspoon nutmeg, freshly grated
1 tablespoon olive oil
To serve
2 large heads romaine (about 3 pounds), torn into bite-sized pieces
16 thin slices prosciutto (about 12 ounces)

Steps:

  • Make pickled shallots
  • In small container, combine shallots and vinegar. Cover and refrigerate at least 8 hours or overnight.
  • Make cilantro vinaigrette
  • In small bowl, whisk together vinegar, shallot, cilantro, and salt. Slowly whisk in oil. Set aside (vinaigrette can be made ahead and refrigerated, covered, up to 24 hours).
  • Make pesto-pickled shallot vinaigrette
  • In fine-mesh sieve, drain pickled shallots, discarding liquid. Transfer shallots to medium bowl and whisk in pesto, vinegar, lemon juice, salt, and pepper. Slowly whisk in grapeseed oil, then olive oil. Set aside.
  • Make frico caldo
  • In heavy 4-quart pot, combine potatoes with enough cold salted water to cover by 2 inches. Cover, set over high heat, and bring to boil, then reduce heat to moderate and simmer until tender, about 15 to 20 minutes. Drain.
  • In heavy small skillet over moderate heat, melt butter. Add onions and sauté until soft, about 4 minutes. Transfer to large bowl. Using large wooden spoon, break up potatoes into roughly 1/4-inch pieces and add to onion. Add cheese, salt, and nutmeg and stir until just combined.
  • In heavy 10-inch nonstick skillet over moderate heat, heat oil until hot but not smoking. Add potato mixture and flatten into 1/2-inch-thick, 7-inch-wide cake, rounding edges with spatula. Cook, without moving, until underside is browned, about 8 minutes. Invert large plate over skillet and flip frico onto plate. Slide frico back into skillet, uncooked side down, and cook until underside is golden brown, about 5 minutes more. Slide onto large plate and cut into 8 wedges.
  • Assemble and serve
  • In large bowl, toss romaine with pesto vinaigrette. Arrange 1 wedge frico on each of 8 medium plates. Top each with 2 slices prosciutto and drizzle with cilantro vinaigrette. Arrange 1 cup romaine alongside each wedge. Serve immediately.
