EASY GREEN CHILE CHEESE GRITS

Ingredients

1 cup Quaker Old Fashioned Grits
1 32- ounce box of chicken or vegetable stock (~4 cups)
2 cans chopped green chiles
1 heaping cup of shredded cheddar cheese
Optional: 2-3 tbsp butter and smoked paprika for garnish

Steps:

Bring stock to a boil.
Once just boiling, add grits and stir. Reduce heat to medium low and cover.
Simmer, stirring occasionally, for 5-8 minutes, until grits are thick.
Stir in green chiles and cheese, allowing cheese to melt.
Add optional 2-3 tbsp butter.
Portion into bowls and sprinkle with smoked paprika.

6 cups water
1 ½ cups dry grits
½ pound processed cheese food, cubed
½ pound sharp Cheddar cheese, shredded
½ pound margarine
1 teaspoon salt
2 teaspoons seasoned salt
½ teaspoon hot pepper sauce
½ teaspoon white pepper
3 eggs, beaten
2 teaspoons dried parsley
2 teaspoons fresh chives
2 (4 ounce) cans chopped green chile peppers

Steps:

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12-inch casserole.
In a saucepan, bring water to boil. Stir in grits, reduce the heat to low, and simmer until thick, about 10 minutes. Stir in processed cheese, Cheddar cheese, and margarine. Season with salt, seasoned salt, hot pepper sauce, and white pepper. Stir in eggs; cook, stirring, until well blended. Stir in parsley flakes, chives, and green chiles. Pour into casserole.
Bake in a preheated oven for 1 hour.

I lived in North Carolina for awhile and fell in love with cheese grits there, and I thought they couldn't get any better until I tried them with green chiles!

Ingredients

3 1/2 cups water
1 cup quick-cooking white grits
4 ounces white cheddar cheese, shredded
1/3 cup chopped green chili
salt and pepper
vegetable oil

Steps:

Bring the water to a boil in a saucepan. Stir in the grits. Cook for 8 minutes, stirring frequently. Add the cheese, stirring until melted. Stir in green chilies. Season with salt and pepper. Spoon the grits mixture into a greased 9x13 inch baking pan. Let stand until cool. Chill, covered, for 2 to 10 hours.
Cut the grits into 8 squares with oil. Cook on a hot griddle or in a large nonstick skillet until light brown and crisp on both sides.
