1 large red onion, chopped
2 packages (16 ounces each) frozen cut green beans
1 can (28 ounces) petite diced tomatoes, undrained
1/4 cup packed brown sugar
1 tablespoon seasoned pepper
1/2 teaspoon seasoned salt
1 can (16 ounces) red beans, rinsed and drained

Steps:

  • In a large skillet, cook bacon over medium heat until partially cooked but not crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons. Add onion to drippings; cook and stir over medium-high heat until tender., In a 4- or 5-qt. slow cooker, combine green beans, tomatoes, brown sugar, pepper, salt, bacon and onion. Cook, covered, on low 4 hours. Stir in red beans. Cook until heated through, about 30 minutes longer.

1 pound fresh green beans
1/2 pound bacon, chopped
1 onion, peeled and chopped
1 pound grape tomatoes
1/4 teaspoon red pepper flakes, optional
salt and pepper to taste

Steps:

  • Prepare the green beans by snapping off the ends. If they're stringing, break off the stem end and pull down the strings it towards the pointed end.
  • In a pot over medium heat, bring about 4 quarts of water to a vigorous boil. Drop the green beans into the boiling water and cook for about 2 to 3 minutes or until halfway done.
  • Using a colander, drain the green beans and immediately plunge into a bowl of ice water. Leave in the ice bath for about 2 to 3 minutes or just until cold. Drain well.
  • In a wide, flat-bottomed skillet over medium-high heat, add bacon. When the bacon begins to render fat, add onions. Cook, stirring regularly until softened.
  • Discard excess bacon grease except for about 2 tablespoons. Add grape tomatoes, spreading on the surface of the pan. Cook, stirring regularly, for about 2 to 3 minutes or until tomatoes begin to blister and soften.
  • Add green beans and cook, stirring regularly, for about 2 to 3 minutes or until tender-crisp and completely heated through.
  • Add red pepper flakes, if desired. Season with salt and pepper to taste. Serve hot.

1 medium onion, finely chopped

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

1 lb green beans, cut into 2 inch pieces
4 slices bacon, chopped (uncooked, reserve 1 Tbsp. of fat after cooking)
1/2 cup chopped onion
1 medium tomatoes, seeded and chopped (roma is great)
1 garlic clove, minced
1/2 teaspoon dried oregano (or 1 teaspoon fresh oregano, chopped)
1/4 teaspoon salt
2 tablespoons lemon juice (or omit juice and pepper and use 1/4-1/2 tsp. lemon- pepper) or 2 tablespoons lime juice (or omit juice and pepper and use 1/4-1/2 tsp. lemon- pepper)

Steps:

  • In a 2 quart saucepan, add green beans in enough water just to cover them, and bring to a boil, reduce heat and simmer, uncovered about 15 minutes or until crisp tender.
  • Drain and immediately rinse with cool water to stop cooking. Drain and set aside.
  • In a large skillet, cook bacon over medium-high heat until crisp. Stirring frequently.
  • Reserve 1 tablespoons of bacon fat and drain off the rest and place bacon on plate covered with paper towels.

Isn't funny how we can take something perfectly healthy....and make it totally fattening?!! I've made green beans this way since....well, more than 20 years now, and wouldn't have them any other way! VERY flavorful, comfort food at its very best! Cooking time includes crock pot time.

4 (14 1/2 ounce) cans green beans, drain 3 cans
8 slices bacon, cooked crisp and drained
pepper
1 onion, chopped
4 tablespoons butter
1 teaspoon dark brown sugar, divided
1 tablespoon good balsamic vinegar
salt and pepper
2 -4 tablespoons bacon butter pan drippings
1 tablespoon good balsamic vinegar, divided
2 tablespoons butter

Steps:

  • Fry bacon in pan til done sprinkling both sides as it cooks with coarse ground pepper.
  • Drain on paper towels, set aside.
  • Add half a stick of butter to bacon grease, (4 Tbl.).
  • Add chopped onion and 1 Tbl. balsamic vinegar and cook slowly over low heat for about 20 minutes til soft and sweet.
  • Remove from heat.
  • In crockpot, put 2 cans (drained) green beans.
  • Sprinkle with a little salt and pepper.
  • Sprinkle with half the bacon, broken into small pieces.
  • Sprinkle with half the cooked onions.
  • Sprinkle with half, (1/2 tsp.), dark brown sugar.
  • Drizzle with 1-2 Tbl. bacon/butter grease from pan. (Yes, do this.)LOL.
  • Drizzle with 1/2 Tbl. balsamic vinegar.
  • Repeat everything (*just draining one can, and add the fourth (last) can of green beans with the water from can pouring over evenly.).
  • Give all this a VERY gentle fold, folding only 2-3 times. Any more, and your green beans will begin to break up.
  • Cut up your 2 Tbl. butter into 8 pieces and dot top.
  • Cover and heat over high til hot throughout.
  • About 45 minutes.
  • You can also do this on the stove, or even in the oven in a casserole dish (covered.).

But for this dish, NO canned or frozen, it just isn't the same. This is just classic dish with a twist, and it doesn't get much better.

6 -7 cups fresh green beans, ends trimmed and cut in 2-inch pieces (2 lbs approx)
28 ounces stewed tomatoes, no seasoning and lightly drained
5 slices bacon, diced
1 medium onion, diced
1 small fennel bulb, thin sliced
1 teaspoon cider vinegar
1 1/2 teaspoons kosher salt (to taste)
1 teaspoon ground black pepper (to taste)
1/2 cup chicken broth (you can need more if needed)

Steps:

  • Bacon -- in a large saute pan, add the bacon on medium to medium high heat to let render and start crisping up. Cook about 3-4 minutes.
  • Vegetables -- Now right to the bacon and the drippings, add in the onion and fennel and cook another 5 minutes. Add in the beans and toss well so everything is combined. Now the tomatoes (NOTE: You can add a bit less tomatoes if you want) Personal taste. Stir well.
  • Season -- Now add some salt, pepper and the cider vinegar. At this point I also add about 1/4 cup chicken broth since we didn't add all the tomato liquid it gives a liquid for the beans to simmer inches.

  • That is it -- just enjoy. Slow cooked bacon, onion and tomatoes in a chicken broth. They are so good.
  • NOTE: If you want -- cut down the recipe in half for a family of 4. No big deal. They are TRUE comfort food.

2 slices OSCAR MAYER Lower Sodium Bacon, finely chopped
1 large onion, chopped
1 lb. green beans, trimmed, cut into 1-1/2-inch lengths
1/2 cup fat-free reduced-sodium chicken broth
1/4 tsp. pepper
4 plum tomatoes (about 1/2 lb.), chopped

Steps:

  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon, reserving drippings in skillet. Drain bacon. Add onions to drippings; cook and stir until crisp-tender.
  • Add beans, broth and pepper; stir. Bring to boil; cover. Simmer on medium-low heat 40 min.
  • Stir in tomatoes; cook on medium-high heat 3 min. or until heated through. Top with bacon.
